These refreshing drinks are a great alternative to a cocktail.

Pineapple Hibiscus Mocktail

First, peel the ginger and slice it into...

First, peel the ginger and slice it into very thin coins. Smash it with the end of a knife, and add it to a small sauce pan. Cover it with the sugar and 1/4 cup of the water. Bring to a boil, lower the heat and let simmer for 10 minutes, covered. It will be very fragrant. Let cool on the side.

Next, bring the remaining 2 cups of water...

Next, bring the remaining 2 cups of water to a boil. Once boiling, turn off the heat, add the hibiscus petals, and cover. Allow to steep for 15 minutes. Be careful--this mixture will stain anything it touches. When done, strain and let cool. (You can do this ahead of time).

Strain the ginger out of the syrup mixture, and divide it between two tall glasses. Add plenty of ice cubes, and top with equal parts of the pineapple juice and hibiscus tea. Finally, bruise the cilantro sprigs with the side of a knife, and add to the glass. Serve.

Sorrel a wonderful spice infused Caribbean beverage that is consumed during Christmas and throughout the new year period. My take on this festive drink has sweetened to be low GI and non alcoholic making it suitable for drivers or children.

Jamaican Sorrel Drink

water ((1.89 litres))

tbsp of ginger ((30 grams), grated (heaped

((8 grams))

tbsp pimento berries ((14 grams), ½tsp of dried allspice)

orange peel from an orange

sorrel ((100 grams), washed)

sweeten

cinnamon

mace

rum/rum flavouring

In a large pot bring the water to the boil.

Reduce the heat to medium and add your ginger and spices - cloves and pimento berries (allspice) followed by the orange peel.

After 5 minutes add the sorrel and stir.

Simmer on low-medium heat for 10 minutes.

Remove the pot from the stove, cover leave to steep for 2-4 hours or preferably overnight (recommended)

Strain and discard the excess sorrel, peel and spices

Sweeten to taste (add rum or rum flavouring now) and serve

Add all of the ingredients (excluding your sweetener) to your crock pot.

Set to slow cooker on &quot;low&quot; on 60-90 minutes.

Leave to steep for a few hours or overnight.

Strain off the sorrel drink and sweeten to taste.

Slow cooker version

Add all of the ingredients excluding the sweeten to your instant pot.

Secure the lid and switch the knob to &quot;sealling&quot;

Pressure cook on &quot;high&quot; for 5 minutes. Once done allow the pressure to release naturally for about 10 minutes. Then release the excess by moving the knob to &quot;venting&quot;

Leave the sorrel to steep preferably overnight.

Jamaican Sorrel Drink | Sorrel Juice | Cook With Charla

Agua de Jamaica (Hibiscus water) is one of the most popular drinks among the agua frescas in Mexico. This tangy drink is refreshing, packed with antioxidants, and super easy to make.

Agua de Jamaica

¼ cup of Hibiscus Jamaica Flowers

water

Ice cubes

This recipe is simple and straightforward, so there is no need to separate the recipe into steps.

Place the dried hibiscus flowers in a small pot with the 3 cups of water. Bring them to a boil. Boil them for about 2-3 minutes over medium-high heat. (Please check the ingredients list below)

Set aside for at least 4 hours; you can also make this step overnight.

Strain the liquid into a pitcher and pour the 4 cups of cold water and sugar.

You can adjust the added water if you feel it is too start to your palate.

Stir, add ice cubes and let it chill. Enjoy.
