These healthy fluffy waffles will satisfy your sweet tooth without packing in excess cream and butter. They're gluten free, sugar free, and high in fiber. Top it off with yogurt and fruits, and enjoy it as breakfast or dessert!

Healthy Fluffy Waffles - GF

eggs

lupin flour (1/2 cup)

green banana flour

rice flour

tsp baking powder

tsp vanilla extract

tsp salt

unsweetened oat milk (1 cup)

tbsp sugar free sweetener (monk fruit erythritol)

Natural or greek yogurt

Oil waffle griddle

Grab a large bowl and make sure it is clean and grease free.

Separate 2 egg whites into the large bowl, and 2 egg yolks in a smaller bowl. Pop the egg white bowl in the freezer for about 15 mins.

Separate eggs

Add milk and vanilla extract into the bowl with 2 egg yolks.

Add sifted flours (lupin, green banana, rice), baking powder to the bowl and mix well. Don't overmix it.

Prepare batter

Now beat the egg white mixture with an electric mixer on medium speed for about 30 secs until it turns frothy.

Then slowly add your sweetener in thirds and turn on your electric mixer to the highest speed.

Beat the egg whites until it's smooth and glossy. Continue to beat until stiff peaks form. It will take about 3 minutes. Make sure to not overbeat it.

Now fold the meringue into the flour mixture in thirds. Mix well but do not overmix it.

Grease your waffle maker/griddle with some oil.

Follow the instructions of your waffle maker. Adjust your waffle maker based on how brown and crispy you want your waffles to be. I adjusted mine to medium brownness/crispiness.

Wait for it to be preheated then add one scoop of the batter to each slot of your waffle maker. If you have a small waffle maker, then make one at a time. Waffles are tasty even when they're cooled.

It takes about 4 mins for my waffle maker and it's done!

Top it off with your favourite fruits, yogurt and dust some powdered sugar-free sweetener and enjoy!

These high protein waffles are made with cottage cheese, oat flour and eggs. So good you&#039;ll never make them any other way!

High Protein Oat Waffles

4% milk fat small curd cottage cheese

eggs (separated)

vanilla extract

sugar ((optional))

oat flour (or grind old-fashioned rolled oats in blender)

baking powder

salt

Heat a waffle iron on its medium setting.

Place cottage cheese, egg yolks, vanilla, and sugar, if using in the blender. Add 6 tablespoons water, oat flour, baking powder and salt and blend until mixture is smooth batter. Transfer to a medium bowl using a spatula to get all the batter out.

Beat the egg white to soft peaks then fold into the batter.

Spray pre-heated waffle iron with oil spray. Pour batter into iron (about 1/4 cup) and cook until golden brown and steam is no longer being released.

Protein Waffles

rolled oats ((25 grams))

vanilla

cinnamon

plain greek yogurt

oil, butter/ghee, or cooking spray,

maple syrup, fruit, chocolate chips, nut butter…

Blend your oats. Add rolled oats to your blender and blend for 15-30 seconds or so until it is broken down into a flour consistency.

Combine your dry ingredients. Add processed oats, protein powder, baking powder, cinnamon, and salt in a small bowl and mix well to combine.

Mix your wet ingredients. In a separate medium bowl, add your egg, greek yogurt, and vanilla extract and mix well to combine. Add your dry ingredients to your wet and mix until combined. Try not to overmix. The batter should be pretty thick. Let the mixture sit for 5 minutes.

Heat up your waffle iron. Pour batter into your waffle iron (the amount will depend on what size you are using) and let cook until crispy and golden brown. You may have to make them in batches depending on how big your waffle maker is.

Blend all ingredients in a blender until smooth.

Heat a waffle iron to medium-high and pour 1/4 cup of batter on the hot iron.

Cook waffles until done (waffle iron dependent) and place on a cooling rack while you cook the remaining.

Repeat with the remaining batter until gone.

Serve waffles with desired toppings and enjoy!
