Hoisin Chicken Udon Noodles - a delicious plate of sweet yet a bit spicy plate of steaming hot noodles with chicken and mushrooms, in under 30 minutes.

Hoisin Chicken Udon Noodles

oz udon noodles (fresh, (2 8 oz pkg))

olive oil

lb chicken breasts

white mushrooms (sliced)

green onions (chopped)

tbsp sesame oil

soy sauce (low sodium)

tbsp dark soy sauce

tbsp sriracha sauce

hoisin sauce

garlic (minced)

tsp ginger (freshly grated)

chicken broth (low sodium)

black pepper (to taste)

Cook the noodles:

Cook the noodles: Blanch udon noodles in boiling water for about 1 to 2 minutes or if using dry noodles cook according to package instructions. Drain well and immediately rinse with cold water. Set aside.

Make the sauce:

Make the sauce: Add all the sauce ingredients together to a bowl and whisk until combined.

Saute the sauteables:

Saute the sauteables: Heat the olive oil in a large skillet or a wok. Add the chicken pieces and cook until chicken is no longer pink and starts to brown slightly. Add the mushrooms and cook for a couple more minutes until mushroom are starting to brown.

Finish the dish:

Finish the dish: Add the udon noodles and prepared sauce to the wok, toss everything together well and cook until the noodles are heated through. Garnish with green onions and serve hot.

It’s pretty good. I added garlic seasoning to the chicken as well for extra flavor while cooking. I suggest chopping up the pineapple into small bits so you get the flavor with each bite. I would make this again.

So so good!!! My very picky 16 year old has declared this her favourite dish. I added an additional pepper and used 1/8 cup of soy sauce instead of 1/ 4 cup soy sauce. Absolutely perfect!

It was okay. The sauce was awesome, though; if I made it again, I would double the sauce recipe. I had a whole pineapple sitting in my fridge along with some thawed chicken and this recipe was pretty easy to make. I sliced up half of the pineapple and grilled it alongside the chicken, then juiced the other half of the pineapple for the recipe and put the leftover juice in the water to steam the rice. My suggestion would be to add more flavor- maybe season the chicken more, add chopped onions, and more garlic.

Lay the chicken drumsticks in a single layer in a baking dish lined with parchment paper. Pour the sauce over the top and mix so that the chicken is well-coated in the sauce.

Bake

Bake the chicken, uncovered, for 30-35 minutes, or until the thickest part of the meat reaches an internal temperature of 165 degrees. Baste the chicken with some of the sauce in the baking dish then broil it for 5 minutes to lightly crisp and brown the skin.

In a bowl, combine chicken with soy sauce, baking soda, corn starch, and baking soda. Allow it to marinate for 10-15 minutes.

Add hoisin sauce, light soy sauce, dark soy sauce, rice vinegar, water, corn starch, sugar, and sesame oil in a small bowl. Whisk until sugar is dissolved. Set them aside.

Prepare Ingredients and sauce

Heat a large wok or a skillet over medium-high heat. Drizzle a tablespoon of cooking oil and swirl it around to coat the bottom evenly. When the oil is hot,  add the marinated chicken to the wok. Spread it out in a single layer to ensure proper searing. Let it cook undisturbed for 1-2 minutes, allowing it to develop a nice sear.

Then, flip and stir-fry the chicken until it&#39;s no longer pink. Remove the chicken from the wok and set it aside.

Drizzle another tablespoon of oil into the wok. Toss in onions and follow with the minced garlic and ginger, stirring constantly for about 30 seconds or until they become fragrant.

Then, add the bell pepper and stir-fry for a minute or two, until they&#39;re are tender-crisp.

Return the cooked chicken to the wok and combine it with the vegetables. Pour the prepared sauce in. Stir everything together until the sauce thickens and coats the chicken and vegetables evenly.

Finish with spring onions and make a final quick toss. Remove from heat and serve immediately.

Crispy Hoisin Chicken Thighs

chicken thighs

tsp kosher salt

tbsps sesame oil

tbsp sesame seeds

Season the chicken.

Pat the chicken thighs dry with paper towels and season both sides with salt, pepper, and garlic powder.

Make the marinade.

In a medium sized mixing bowl, combine the hoisin sauce, honey, and sesame oil. Reserve 1/4 of a cup of the marinade for later.

Marinate the chicken.

Add the chicken to the bowl and toss to coat, making sure all pieces of chicken are generously covered in the marinade. Cover the bowl and marinate in the refrigerator for 1-6 hours or overnight. You can also marinate the chicken in a gallon storage bag.

Preheat the oven.

When you are ready to cook the chicken, preheat the oven&#39;s broiler to high and set the rack about 6 inches from the heating element. Line a baking sheet with parchment paper and brush a very thin layer of sesame oil over top.

Broil the chicken.

Place the chicken on the prepared baking sheet in a single layer and broil for 10-15 minutes on each side, until the edges begin to char.

Serve.

When the chicken is finished cooking, transfer it to a serving dish and brush the remaining sauce on top. Garnish with sesame seeds and fresh parsley or green onions.
