When you said to cook the caramel 5 minutes longer without stirring it, my caramel burned and tasted bitter. Because of that I needed to think of a quick new filling for my cake. I think that if you make this without doing the last part where you let it sit on the heat for 5 minutes without stirring. Your good.

I followed this recipe exactly. Melted the sugar and water on moderate then when bubbling turned it full bore took a couple more minutes but as soon as it started to colour around the edges of the pan I took it off the heat. The residual heat finished the caramalization in seconds without burning. Plopped in the butter and cream for a quick whisk and hey presto perfect caramel sauce. Took 8 minutes start finish. I'm sure the trick is to remove the sugar as soon as you see the edges in the pan darkening. Really was perfect caramel.

On my first attempt, I let it get up to 350°F (which took longer than 5 minutes) and it wound up tasting a little burnt; it was still pretty tasty. However,  next time I'm going to try gauging it by color rather than strictly temperature. 
Granted, I was using cheap pans and an electric stove *le sigh.*
Also, make sure you use a tall pan, as the boiling caramel WILL bubble up quite high, and boiling over will cause an ungodly mess.

I do not know why, but my caramel crystalized. I tried again and it did the same thing. 
It smelled amazing and was very easy, however.

Easy Homemade Caramel Sauce Goes On EVERYTHING

Learn to make vegan hot chocolate bombs and enjoy a cup of the best hot cocoa this winter! These treats are so fun to make for a special occasion.

Vegan Hot Chocolate Bombs.

vegan chocolate bars (A little more

Tablespoons cocoa powder

Tablespoons organic cane sugar

vegan white chocolate chips (optional, for decoration)

dairy free chocolate chips

vegan mini marshmallows

Finely chop the chocolate bars with a sharp knife. Set aside.

Place some water in the bottom of a double boiler or another pan. Bring to a simmer.

Place 2/3 of the chopped chocolate in the double boiler insert, or use a metal bowl if you don&#039;t have a double boiler. Don&#039;t let the bowl touch the simmering water. Clip a candy thermometer to the pan or bowl.

Stir the chocolate with a rubber spatula until it&#039;s melted, keeping an eye on the temperature. Don&#039;t let the temperature get higher than 120 degrees F for dark chocolate, and 105 degrees F for milk chocolate.

Remove the bowl (or upper bowl) from the heat. Wipe off any water on the outside of the bowl or pan.

Add the remaining 1/3 of chocolate a little at a time, stirring to melt, then adding a little more chocolate and stirring some more.

Allow the chocolate to cool to 82 degrees F. Once it reaches this temperature, place it back over simmering water.

If you are using dark chocolate, reheat to about 88 to 91 degrees F. For milk chocolate, reheat to 85 to 87 degrees F. Note: This recipe uses less chocolate than is typically recommended for tempering chocolate. The temperature will go up and down quickly because the amount is smaller.

To temper the chocolate:

This recipe makes 6 hot chocolate bombs, so you will need two silicone sphere molds. The molds I used had cavities that were 2 inches across.

Spoon some melted chocolate into each cavity of the silicone mold, and use a spoon to spread it around evenly. Make sure you get a fair amount of chocolate in each half of the spheres - you don&#039;t want the chocolate bombs to be too thin.

Place the silicone molds in the refrigerator to cool for about 10 minutes.

Make the chocolate shells:

Put the unsweetened cocoa powder and the organic cane sugar in a jar and stir to combine.

Make the hot cocoa mix:

Very gently remove the cooled chocolate from the silicone candy molds by peeling the mold away from the chocolate shells. Set the chocolate shells on a cookie sheet or plate.

Place a heaping tablespoon of hot cocoa mix into 6 of the chocolate shells. Put a few mini marshmallows on the hot cocoa mix.

Place the 1/2 cup of chocolate chips and the 1/4 cup of white chocolate chips in small microwave safe bowls. Microwave these one at a time to melt. Start with 30 seconds, then stir and microwave in 10 second intervals. Be careful with the white chocolate chips as they burn really easily.

Dip the empty halves of the spheres into the melted chocolate chips. Place onto the halves that contain the hot cocoa mix. Hold in place for a few seconds so that it adheres.

Drizzle the hot chocolate bombs with melted chocolate and melted white chocolate. Place each completed chocolate bomb in a cupcake wrapper on a plate. Refrigerate for a few minutes to let the chocolate drizzle cool.

Assemble the hot chocolate bombs:

Place one hot chocolate bomb in a mug, and slowly pour steamed non-dairy milk over the top. Stir well and enjoy!

To serve:

This homemade granola recipe has buckwheat and is lightly sweetened with maple syrup. It's perfect for holiday food gifts! Vegan and refined sugar free.

Maple Buckwheat Homemade Granola (Refined Sugar Free)

buckwheat groats

fine sea salt

cinnamon

ground ginger or pumpkin spice

coconut oil

maple syrup or dark agave

vanilla extract

Optional additional mix-ins: 2/3 c dried fruit coconut

Preheat oven to 325F. Line a baking sheet with parchment paper. Set aside. 

In a large bowl combine oats, buckwheat, nuts and seeds.

In a small saucepan, combine maple syrup, oil, cinnamon, ginger and salt. Bring to a boil and hold at a steady boil for 2 minutes. Remove from heat and add vanilla extract.

Pour syrup mixture over oat mixture and mix well to evenly coat. Spread granola on the prepared baking sheet in an even layer.

Bake granola until browned and crispy, about 35 minutes (give or take), stirring thoroughly every 10 minutes. You will know it’s done when oats are slightly brown/toasted.

Let cool thoroughly (at least 30 minutes) before breaking into pieces. Store in airtight container at room temperature for 7 days.

Homemade granola is the best! I made a batch last night and my kids are devouring it!
