Cranberry Brie Bites

(8-oz.) tube crescent dough

Cooking spray,

Flour,

(8-oz.) wheel of brie

c. whole berry cranberry sauce

c. chopped pecans

What kind of cranberry sauce do you usually buy?

These were absolutely outstanding! Some thoughts though...15 minutes is way too long in 2 different ovens that I made them in. The crescents recommend 9-12 and even 12 minutes at 350° was too much. The crescents ended up overbaked and the cheese stuck to the pan even with cooking spray, so they didn’t pop out of the pan easily. I’ll have to continue playing with the time. The alternate flavor suggestions sound terrific and I might play with that in the future. The basic components together are an outstanding flavor combination, and I’ll definitely make them again.

So simple, easy and elegant for parties!!  Followed the recipe and it helped that I put the brie in the freezer for a bit to make it easier to cut in chunks.  I didn't have whole berries cranberries but fresh cranberry sauce and it worked just as well.  I made a batch with rosemary and a batch without (kids don't care for rosemary on top) and it was a hit both ways.  Next time will try will fig jam - I've always liked that combo.  Has anyone tried it with honey? I've had brie with honey and that's delish as well - not sure how it'll bake though.

This recipe was awesome! My stepdad and I are both huge Brie fans and this turned out fantastic. I used my mom's leftover homemade cranberry sauce from Thanksgiving and it was perfect. Will definitely make it again.

I’ve made these about five times since thanksgiving...super easy using a pizza cutter for the dough and the cheese! Everyone loves them! I don’t use the sprigs of rosemary but crush some dried up in my hands and sprinkle over top...no “trees” to bite into!😉

I made these in several different variations and they were quite tasty. I recommend making your own cranberry sauce (it's very easy, google it) because the Ocean Spray canned sauce had little flavor. I also prefer removing the rind from the brie for a better & creamier taste. And thyme instead of rosemary, with rosemary it felt like I was eating pointy pine needles, it was quite unpleasant. The pecans are also a must! They add a very nice crunch to the soft texture of the other ingredients. 

My first batch came out quite messy, the cheese oozed out, maybe I added too much? Though I went by the video.

I also baked them according to the can of dough for about 12-13 minutes and it was just about perfect! Will be sharing these with some friends I hope they enjoy them.

I recently had these at a potluck and I couldn't get enough of them!! I love brie with some kind of fruit compote/spread and this was the perfect bite! The little bit of rosemary added just the right touch of yumminess!! I can't wait to try making them myself!!

I made these in a regular muffin pan, I dont have a mini. I also forgot to bring my chopped pecans to the house I made them at and forgot to add rosemary. They fell apart like crazy and looked messy, but they were SO delicious and every single person who tried them complimented them! Next time I will follow the recipe as directed and get a mini muffin pan as well :)

Made these last night for a party. They were a big hit! I baked the Crescents in the mini muffin pan earlier in the day and put the cheese and toppings on right before the party and just heated them til the cheese melted. they were perfect.  I also used a variety of jams so they were so pretty! Thank you so much for a recipe that will be used and passed around for years!  And by the way, no one cared when they cooled off and ate them anyway!

These were good, but I felt the sweetness of the cranberry sauce overpowered the brie. I had cut back on the brie, but next time I don't think I will. Next I am going to try this recipe with apricot preserves with small chopped jalapeño in it. I've tried this in another recipe. After cooking, you don't really get the heat from the jalapeño, but the taste is amazing. That may help the sweetness for those who feel these are too sweet. I put the brie wheel in the freezer for about 1/2 hour and then cut the brie in small pieces. It was so easy to cut that way.

We tried them with a fig/orange spread and as soon as I tasted one I said "This tastes like Christmas."  Delicious!

I make these for every single holiday party and can promise you they're the first thing to go. Make sure you don't go too crazy with the brie or it can spill over!

Cracked Out Turkey Pinwheels - I am ADDICTED to these sandwiches! Cream cheese, cheddar, bacon, Ranch and turkey wrapped in a tortilla. Can make ahead of time and refrigerate until ready to eat. Perfect for parties and tailgating!!

Cracked Out Turkey Pinwheels

(8-oz) package cream cheese, (softened)

Tbsp ranch mix

cheddar cheese

Tbsp milk

bacon

½ lb thinly sliced deli turkey

(12-inch) large burrito tortillas

Mix softened cream cheese with the ranch powder, cheddar cheese, 1 Tbsp milk, and bacon until well combined. Add more milk if desired.

Spread 1/4 of this mixture evenly on each tortilla then lay 3-4 slices of turkey breast flat on top of the cheese mixture to cover in a single layer.

Roll the tortilla up gently, yet tightly to make sure it holds together and keeps its shape.

Refrigerate for about 30 minutes to firm up the softened cheese. Cut off ends of tortilla roll and cut into 1-inch slices.

(1-oz) package Original Ranch dressing mix

(16-oz) sour cream

corn kernels, (thawed)

Preheat oven to 400ºF. Lightly spray a 2qt baking dish with cooking spray..

In a bowl, combine all ingredients; mix well. Transfer to 2-quart baking dish; cover with aluminum foil.

Bake dip 25 to 30 minutes or until hot and bubbly.

3-Ingredient Cream Cheese Sausage Dip - SOOOO good! Sausage, cream cheese, and Rotel. Ready in under 10 minutes. Great for parties! There is never any left!!

3-Ingredient Cream Cheese Sausage Dip

can Rotel diced tomatoes and green chilies, (undrained)

(8-oz) package cream cheese,

In a large skillet over medium-high heat, cook sausage until crumbled and no longer pink. Drain. Add Rotel and cream cheese to skillet. Stir until cheese melts.

Serve warm with tortilla chips.

Russian Herring Under a Fur Coat Salad (Shuba Salad)

In one pot, place beets in boiling water (enough water to cover the beets). Boil 1 hour, or until soft when pierced with a knife. The cooking time varies depending on your beets. Some will cook sooner than others, so test all of them. When cooked, remove from boiling water and let cool to room temperature. Peel the cooked beets (I use gloves for this sometimes to prevent from your hands getting stained). Use a cheese grater, grate into a bowl.&nbsp;In a separate pot, boil whole potatoes and carrots about 25-35 minutes, or until smooth when pierced with a knife. Don’t overcook. When cooked, remove from boiling water and let cool to room temperature. Peel the cooked potatoes and carrots. It’s easiest to peel carrots by putting a slit down the length of the carrot and peeling in a circle around the carrot. Grate into separate bowls.Place 4 eggs in another pot of salted cold water and bring them to a boil. Once the water is boiling, cook for 10 minutes. When timer is done, place eggs in a ice bath. Let eggs cool to room temperature. Peel the eggs. Cut in half.While veggies cook, take each herring filet and cut into 4 strips, then cut into 1/4 in cubes. Add into a bowl. Chop the onion as well and add to the same bowl. Finely chop 2 tbsp fresh dill, add to bowl and mix well. Set aside until ready to layer your salad.

METHOD FOR PREP

Using a springform without the bottom part, place it on top of a plate that is slightly larger than the springform.Add the grated potatoes, spreading evenly to the edges, but don’t press down too hard.Add in the herring, onion and dill mixture. Using the spoon spread it to the edges of the springform.Add the grated carrots, spoon on half of the mayo, spreading evenly on top.Add the grated beets, spoon on the other half of the mayo, spreading evenly on top.Carefully grate the egg white part of the hard boiled eggs over the mayo layer, spreading evenly as you grate. Then grate in the egg yolk, you might have some eggs leftover, which is fine.Garnish with fresh dill. Refrigerate for at least 4-6 hours or over night to chill the salad before serving. Release and remove the springform. When serving, cut like you would cut a cake and enjoy. Goes well with a cold beer.

STEPS FOR LAYER ORDER:

(8 oz) packages cream cheese, room temperature

mozzarella cheese, divided

½ teaspoon crushed dried rosemary

garlic powder

½ cup canned whole berry cranberry sauce

cranberries

Baked Cranberry Cream Cheese Dip

Preheat oven to 375 degrees F and lightly grease an 8x8-inch baking dish.

Add cream cheese to a large mixing bowl and beat until smooth. Add 2 cups of the mozzarella cheese, rosemary, and garlic powder and mix until evenly combined.

Gently fold in the cranberry sauce and fresh cranberries, then transfer dip into the prepared baking dish.

Sprinkle remaining 1 cup of mozzarella cheese on top, then bake for 22-26 minutes or until the edges are starting to brown.

Serve while still hot with crackers, bread, or pita chips.
