4 Ingredient Apple Cake

honeycrisp apples (about 6 oz each)

eggs (room temperature)

brown sugar

+ 2 tbsp all purpose flour

Preheat oven to 350°F. Line the bottom of an 8 inch springform pan with parchment paper and grease the sides of the pan.

Peel apples and remove cores. Slice apples to 1/2 inch cubes.

Add eggs and sugar to the bowl of a stand mixer. Using the whisk attachment, beat on highest speed for about 8 minutes or until mixture turns a very pale brown and is very thick.

Add in flour and gently fold in with a spatula until just mixed.

Add in apples and gently fold in so that they are evenly spread out in the batter.

Pour batter into prepared springform pan. Bake for about 1 hour 10 minutes in the middle row of the oven or until cake is done. Top will be dark brown and toothpick inserted should come out clean.

Let the cake cool for about 20-30 minutes before dusting top with powdered sugar and slicing and serving.

In large bowl, beat butter and sugar with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Stir in vanilla, flour, baking soda, cinnamon and salt. Stir in apples and walnuts. Spoon into pan. 

Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. Cool 10 minutes. Remove from pan to cooling rack. Cool 10 minutes longer. Serve warm with ice cream.

Lightly grease a 9-inch round cake pan with some cooking oil.

In a large mixing bowl, whisk together flour, baking powder, baking soda, sugar, cinnamon, and salt until evenly combined.

In a medium mixing bowl, combine oil, yogurt, vanilla extract, and eggs. Mix well until smooth.

Pour the wet mixture into the dry mixture and use a spatula to mix together until just combined and no dry ingredients are visible.

Fold in the shredded apples and walnuts until evenly combined.

In a small mixing bowl, combine sugar and cinnamon and mix evenly with a spoon. Sprinkle the cinnamon sugar on top of the batter.

Bake the cake on the middle rack for 35-40 minutes until golden brown and a toothpick inserted into the center of the cake comes out clean.

Let it cool for 10-15 minutes in the pan, then invert to remove the cake and allow it to cool completely on a wire cooling rack.

Slice and serve on it’s own or with a drizzle of cinnamon icing or Vanilla Ice Cream.

Swedish Apple Cake (Äppelkaka)

Preheat the oven to 350 degrees.  Grease and flour a 9 inch springform pan.  Make the Apple Topping:  Heat butter in a 12 inch nonstick skillet over medium heat.  Add apples and sauté until they are lightly caramelized, about 5-8 minutes.  Add brown sugar and cinnamon and continue to cook, stirring constantly, until sugar dissolves and apples are evenly coated, about 1 more minute.  Remove apples from the heat and set aside.

Make the cake:  Whisk flour, baking powder, salt and cardamom together in a medium bowl and set aside.  Whisk sugars and eggs together in a large bowl until fully combined. Slowly add melted butter to sugar and egg mixture and continue whisking until uniform in texture.  Add sour cream and vanilla and whisk until fully combined. Add flour mixture and whisk until batter just comes together.

Scrape batter into prepared pan and even out the top with a small offset spatula.  Arrange apples over the top of the batter in two concentric circles. The apples should just touch each other but not overlap.  Reserve the butter and sugar mixture that remains in the skillet. Transfer the cake to the oven and bake until golden brown and a toothpick inserted into the center of the cake comes out clean or with just a few moist crumbs attached, about 40-50 minutes.  

Add a couple of teaspoons of water to the skillet along with the reserved butter and sugar mixture leftover from making the apple topping.  Cook over medium heat until warm and syrupy in texture, about 1-2 minutes. Brush syrup over the top of the cake, particularly the apples. Cool cake for at least 20 minutes on a wire rack and serve.

This is a delicious cake!  I love the caramelization of the apples before putting them on the batter and that the leftover sugar and cinnamon is made into a glaze to go on the warm cake.  Thank you for the recipe!

Made this yesterday and it was delicious.  I didn't have cardamom so subbed cinnamon and ginger.  Also reduced granulated sugar to 1/2 cup as we tend to not like things too sweet.  The glaze really makes the cake look beautiful.  I'll buy cardamom to make again in the future.  Thank you for the recipe!
