<em>This is how I make classic basil pesto at home. It's incredibly simple and flavorful and uses only a handful of fresh ingredients.</em>

Homemade Basil Pesto

basil leaves*

pine nuts*

parmesan cheese

garlic (roasted

olive oil

lemon juice

salt

black pepper,

Pulse the basil, pine nuts, cheese, and garlic together in a food processor or blender. Scrape down the sides, then add the oil, lemon juice, and salt. Pulse until everything is blended together and relatively smooth. Taste and add pepper (and/or more salt) if desired. I always add a pinch of pepper.

Store leftover pesto in a jar or sealable container, tightly seal, and refrigerate for up to 1 week.

I love this recipe! I've made 2 batches quadrupeling the recipe each time. I froze the pesto on a parchment lined baking sheet until very firm then used a pizza cutter to divide into usable portions. Filled 2 freezer container so far....
My preference was for less oil by about half.

tbsp Pine Nuts, (optionally toasted (see notes))

tsp Salt, (or to taste)

Begin by crushing 1 small clove garlic with a pinch of salt to form a paste. Gradually add in  basil and smash/grind to blend. Then add your pine nuts and parmesan. After, add in your oil around 1 tbsp at a time. Test for seasoning.

Pestle and Mortar

Add 1 small clove garlic and pine nuts and blend until desired texture. Add basil and parmesan, blend and slowly add in your oil. Test for seasoning. Alternatively this can all be added at once and results will still be similar. This method just ensures there&#039;s no large chunks of garlic and the pine nuts and pulsed to preference.

Blend the ingredients

In a food processor, combine the basil, Parmesan, pine nuts, garlic, and salt. Pulse 20 times until just blended.

Add the olive oil

With the processor running on low, slowly pour in the olive oil.

Store

Store refrigerated in an airtight container for up to 1 week, or in the freezer for up to 3 months.

Perfect as written! toasted my pine nuts and only used 3/4 cup oil. delicious!

This is the best pesto that I have every had.  The ratios are perfect.  I did up the Parmesan a bit but who wouldn't?   Thank you so much for sharing this with me.

This is the best homemade pesto! I have always struggle to get the ratios right and this one nails it. Based on my family's love of pine nuts, I up those to 1/2 cup. I have made it twice already and it will be the only pesto recipe I use from now on.
