Homemade Easy Beef Stroganoff

butter

beef (this can be any type you choose (see note))

onion (chopped)

white mushrooms (sliced)

garlic (minced)

flour

beef broth

Worcestershire sauce

soy sauce

heavy whipping cream

sour cream

salt and pepper (to taste)

In a large skillet, melt 1 tablespoon butter.

Brown beef, remove from skillet and set aside. If there is a lot of excess grease, remove it.

Add the rest of the butter.

Sauté onions and mushrooms until soft and starting to turn golden, about 3-4 minutes.

Add garlic and cook until fragrant, about 30 seconds.

Add sage and flour and stir until flour is cooked a bit, about 2 minutes.

Add beef broth, stirring constantly.

Stir in Worcestershire sauce, soy sauce, and the beef along with any accumulated juices.

Simmer on low heat until thickened, flavors have melded, and beef is cooked through, about 10 minutes. Be sure it's not burning or sticking on the bottom by stirring occasionally.

Off heat, stir in cream and sour cream until combined.

Serve over egg noodles or rice.

Slow Cooker Beef Stroganoff

Grease the bottom of a 6-quart or larger slow cooker with nonstick spray. Add the sirloin and sprinkle with salt, dill, black pepper, garlic powder, and onion powder. Stir to coat the meat.

Add the mushrooms, 1 cup beef broth, Worcestershire, and Dijon. Cover and cook on high for 2 to 3 hours or on low for 5 to 7 hours, until the beef is cooked through and tender. (If you prefer firmer mushrooms, wait to add them until about halfway through the cook time.)

Stir the cornstarch together with the remaining 1/2 cup broth to create a slurry. Stir the mixture into the slow cooker. Cover and cook on high for 20 minutes, and then stir in the Greek yogurt. Re-cover and cook on high for an additional 10 minutes.

While the stroganoff finishes cooking, cook the noodles according to package instructions. Stir into the slow cooker or pile separately into bowls and ladle the stroganoff over the top. Serve immediately, topped with fresh thyme or parsley as desired.

Heat oil in a large skillet over medium-high heat until sizzling hot, about 1 minute. Add beef and sauté until browned on all sides, about 3-4 minutes. (If using leftover roast beef, add it in and cook for 1-2 minutes instead, until starting to warm). Set aside on a plate.

In the same skillet, add butter and melt over medium-high heat until it starts to bubble, about 1 minute. Add mushrooms, onion, and garlic and sauté until golden brown and tender, about 3-4 minutes. Add flour and mix until well combined, about 1 minute.

Add beef broth, heavy cream, sour cream, and mustard. Mix well until smooth and bring the mixture to a simmer, about 2-3 minutes.

Return the cooked beef to the pan and season with salt and pepper. Stir well and let it simmer over medium heat until heated through and the sauce thickens to a desired consistency, about 3-4 minutes.

Garnish with parsley and serve warm with pasta (I like to serve with egg noodles).

To cook egg noodles: Bring a large pot of salted water to a boil over medium-high heat. Add egg noodles and cook according to package directions, about 6 minutes. Drain well and set aside.

Instant Pot Beef Stroganoff

Saute

Set Instant Pot to SAUTE. Add the oil and butter. Once hot, add the onion and 1/2 teaspoon salt. Cook, stirring often, until the onion begins to soften but does not brown, 3 to 4 minutes.

Cook

Sprinkle the beef with remaining 1 teaspoon salt and pepper. (You can toss the beef cubes together with salt pepper in a bowl, or to save a dish I like to do this right on the cutting board.) Add to the pot. Cook, stirring occasionally, until the meat is browned on all sides, about 4 to 6 minutes. Add the dillweed, garlic powder, onion powder, Worcestershire sauce, and mustard. Pour in 1/2 cup of the beef broth. Stir, scraping a wooden spoon or spatula along the bottom of the pot, to ensure you remove any stuck on bits of food (this will avoid a “burn” warning).

Stir

Stir in the mushrooms, then sprinkle the flour over the top. Stir until evenly incorporated. Pour in the remaining beef broth. Close and seal the lid. Cook on HIGH pressure (Manual) for 10 minutes. When the time is up, immediately vent the Instant Pot to quick release the pressure.

Cover

Once you can safely open the pressure cooker, carefully open the lid and add the egg noodles. Recover the Instant Pot, seal, and cook on HIGH (manual) for 5 minutes. When the time is up, allow the pressure to naturally release for 5 minutes, then immediately vent to release any remaining pressure.

Cool

Carefully open the lid and stir. Let the stroganoff cool for a few minutes, then stir in the Greek yogurt. Serve hot, sprinkled with fresh parsley and/or thyme
