Homemade hot pockets are a perfect lunch or snack on the go.

Homemade Hot Pockets {Freezer Friendly}

flour

tsp salt

tbsp yeast

olive oil

water

mozzarella cheese

cheddar cheese

pizza sauce

Add flour, salt and yeast to a food processor with the blade attachment. Pulse until well mixed.

Pulse in olive oil.

Turn machine to the on position and while running pour in warm water. Let machine run until dough pulls away from the edges and forms a ball.

Put dough in a greased bowl and cover. Let rise until doubled in size.

Take handfuls of the dough and roll out into a small circle about the size of your hand. Add some pizza sauce, cheese and meat and fold the circle of dough over to make a half circle.

Seal the edges and bake on an ungreased cookie sheet at 450 degrees for 12-15 minutes.

To freeze: After baking, wrap in plastic wrap and place in a freezer safe ziploc bag. Freeze for later use.

To reheat from frozen, unwrap plastic wrap, cover in a paper towel and microwave for 1 1/2 minutes. After it has been thawed, heat up in microwave for 30-60 seconds.

You will be presently surprised to learn that making homemade calzones is a lot easier than you think. They freeze wonderfully and are a great solution to that timeless question, "What do I pack for lunch"?

Homemade Calzones

sugar

yeast

all-purpose flour

olive oil (extra virgin)

salt

olive oil (for greasing bowl)

garlic (minced)

onion

mushrooms (fresh, sliced)

spinach chard

ricotta (can also use feta cheese)

mozzarella (shredded)

salt and pepper

oregano

Combine the yeast, sugar and lukewarm water in a small bowl.

Stir with fork and set aside for about 5 minutes (it will begin to proof).

In the bowl of a stand mixer, measure and sift 1 cup of flour.

Add yeast mixture. Combine with wooden spoon until smooth.

Add the rest of the sifted flour (1½ cups), oil, and salt. Mix on medium speed using dough hook attachment until smooth and elastic (approximately 5 minutes). Alternately, you can knead by hand.

Place in a lightly greased bowl. Turn dough over ensuring the entire dough has a thin layer of oil. (I use about 1/2 teaspoon of olive oil).

Cover bowl with plastic wrap and let rise for approximately 40 minutes (will double in size).

How to make calzone dough:

Meanwhile, prepare your filling by adding about 1 tablespoon olive oil in a large saucepan. Stir fry the garlic, onion, mushrooms and spinach. Set aside to cool off slightly.

Combine this vegetable mixture with the ricotta and mozzarella. Mix thoroughly together.&nbsp;

Preheat oven to 400° F.

Pre-heat pizza stone (if using) or line a baking sheet with parchment paper.

Punch down dough and divide into 8 pieces. Knead each piece into a ball and then using a rolling pin, roll out your dough, on a lightly floured wooden board, to approx 4-5" circle.

Place about 1/2 cup of filling in the bottom half per calzone, making sure to not come within 1/2 inch of the edges.

Fold the dough over the filling and press to seal tightly.

Brush tops with olive oil. and sprinkle with dried oregano.

Make diagonal slits or prick the tops with a fork before baking allowing for the steam to escape.

Place calzones on a pre-heated pizza stone or on a parchment lined baking sheet.

Bake at 400°F for 20-25 minutes or until golden brown. The bake time will depend on the size of your calzones.

Place on cooling rack.

For the filling:

This Italian Calzone is exactly like your favorite pizza shop. It&#x27;s filled with sauteed veggies, lots of cheese, flavorful marinara sauce and then baked!

Italian Calzone Recipe

Olive oil

yellow onion (thinly sliced)

kosher salt

butternut squash (cubed)

broccolini (trimmed)

cremini mushrooms (sliced)

garlic

(12-ounce) batch of store-bought or homemade prepared pizza dough

jarred marinara sauce

mozzarella

In a medium skillet, heat olive oil over medium heat. Add thinly sliced onions and pinch of salt. Cook onions for 30 minutes, or until onions are browned and caramelized.

While the onions are cooking, pre-heat oven to 400F. Place cubed butternut squash on a baking sheet and toss with a teaspoon of olive oil and sprinkle with salt and pepper. Roast for 15 minutes, or until soft. Remove and set aside.

When onions are caramelized, add broccolini and cremini mushrooms and sauteé for 5-10 minutes. Add garlic to the top and cook just until fragrant.

To Make the Filling:

Lightly flour your work surface and roll out pizza dough to a 1/8-inch thick circle. Transfer pizza dough to a piece of parchment. Add the tomato sauce to one half. Top with broccolini/mixture. Add the butternut squash and then finish it off with a few slices of mozzarella.

Fold dough in half, over filling, and crimp as desired to seal. Transfer parchment with calzone to a baking sheet. Using a knife, slice a hole in the top. This will allow steam to escape as it bakes. Place it in the oven and cook until dough is puffed up and golden brown, 15-20 minutes.

I saw this post a few days ago and thought it was a great idea so the boyfriend and I walked up to the market and got all kinds of yummy vegetables and such to make calzones with. We cheated and used pre-made dough, but it was still delicious! We used tomatoes, mushrooms, zucchini, pineapple, onions, garlic, mozzarella, and ricotta. And then he put sausage in his and I put pepperoni in mine. We also put some chopped up garlic in olive oil and spread it on the crust before baking. Its been two days and he still can't stop talking about how delicious it was. We even saved the leftover filling (we made way too much!) and turned it into pasta sauce. Yum! :) Thanks for the inspiration.

This was so delicious!!! And quite easy. I substituted roasted sweet potato for the squash and added some balsamic vinegar to the pan with the onions when they were done caramelizing. Will definitely make again! I also left the sauce out of the calzone and dipped the finished calzone in sauce instead.

Gram&#39;s Calzone, the delicious alternative to pizza, stuffed with mozzarella &amp; sausage, baked to cheesy perfection. The perfect appetizer or main dish. 

Gram’s Calzone with Sausage and Cheese

store bought pizza dough

sausages

fennel seeds (optional)

paprika

mozzarella cheese (firm)* (divided)

Preheat oven to 400F° (200C°) degrees.

In a medium frying pan sauté the sausage, fennel (if using), salt  and paprika until brown, drain off the fat and let cool in a clean bowl.

When cool add to the meat mixture, the raw egg and mozzarella cheese (1¾ cups/200 grams).

Roll the pizza dough to a rectangle (9x10&quot; / 24x26 cm) and place on a lightly greased or parchment paper lined cookie sheet, sprinkle the top of the dough with the sausage cheese mixture. Roll up lengthwise, brush the top with a little olive oil and sprinkle with the remaining shredded mozzarella.

Bake for approximately 15-20 minutes or until browned. Let sit 2- 3 minutes then slice and serve. Enjoy!

My grandma used to make this all the time. She would also make one with spinach and mushrooms. While the bread was baking she would baste it with the leftover grease from cooking the sausage.

Made this  this evening ...made hubby’s with sausage and salami, made mine with prosciutto, pesto sauce i mixed in with the egg and fresh spinach ....we LOVED THEM 
my husband is a calzone fiend , my calzones lack pizazz (I am working on them) but this steomboli he liked...he really liked.  Ha ha haaaaa

I added hot pepper flakes and arugula to the meat mixture, it was a great dinner with coleslaw on the side. I cooked it longer though.
