An easy, Amish Baked Custard Recipe that will make you feel like you are at Grandma's house again. Smooth &amp; creamy, with just 6 ingredients.

Baked Custard Recipe

eggs

sugar

salt

vanilla extract

2% milk

nutmeg

Preheat oven to 350 degrees.

In a medium-size bowl, beat the eggs on medium-low speed for 30 seconds.

Add the sugar, salt and vanilla. Whisk gently until mixed.

Pour the milk into a microwave-safe bowl and heat in 1 minute increments until the temperature of the milk reaches 180 degrees.* Stir between each time interval to distribute the heat. Depending on the bowl and microwave you use, this will take about 5 minutes. Be sure not to let the milk boil.

Remove 1 cup of the heated milk and slowly drizzle it into the egg mixture, whisking the eggs quickly the entire time.**

Slowly pour the remainder of the milk over the egg mixture, whisking constantly.

Beat with a hand mixer for 20-30 seconds.

Pour the custard into 10 6-ounce ramekins, dividing the custard equally between the cups. There is no need to grease the ramekins.

Place the ramekins in a 10x15” baking pan with sides about as tall as the ramekins.

Sprinkle nutmeg overtop the custard.

Heat about 10 cups of water, not quite to boiling but very hot, on the stovetop or in the microwave.

Pour the hot water into the pan around the ramekins, being careful not to get any of the water into the custard itself.

Carefully place the pan into the preheated oven and bake for 35-40 minutes. The exact time may depend on the size and shape of the ramekins you use. The custard is done when you insert a knife into the center of a cup and it comes out clean.

Serve cold or warm as desired, with whipped cream.

Refrigerate any leftovers.

How to Make Baked Custard
Scald the milk. This means you’ll heat the milk until it reaches 180 degrees, near boiling. Many old recipes call for this process. It is not necessary to scald milk for safety reasons any longer due to the pasteurization process. However, scalded milk does give the custard a little bit of a smoother texture, so I do recommend taking the time to scald the milk. I made the custard both ways and even my non-professional taste testing could tell that the scalded milk custard had a smoother texture. You can scald milk in the microwave or in a heavy-bottomed saucepan over medium heat. You’ll watch for the milk to start steaming and bubbling around the edges. Stir the milk constantly to prevent a film forming on top of the milk. If  you don’t have a thermometer to test the temperature, remove the milk from the heat right before it comes to a boil.

Temper the eggs. You have near-boiling scalded milk. You’ll want to pour 1 cup of that milk ever so slowly into the eggs, whisking the entire time. It is so important to drizzle slowly and whisk constantly. If you don’t, you’ll end up with  pieces of cooked eggs. Which is not going to make for a creamy custard.

Bake the custard cups in a hot water bath. What does a hot water bath do? It prevents the custard from curdling or cracking. Egg-based desserts need to cook slowly at a low temperature to keep a creamy texture, and the hot water helps to do just that. How do you make a hot water bath? Put a pot of water on the stove over medium heat and bring it to simmering, not a rolling boil. Place the custard cups in a large baking pan with sides that are nearly as tall as the custard cups. Pour the hot water around the custard cups, being careful not to spill any water into the cups. You want the level of the hot water on the outside of the cup to be just at the level of the custard. Oh…and be careful when placing this heavy baking pan into the oven. Don’t let that water spill onto your custard mixture.

How to Make OLD FASHIONED BAKED CUSTARD {Recipe Video}

Once you've cracked this technique for silky smooth vanilla custard, you'll never go back to tinned

Put the cream and milk into a large pan and gently bring to just below boiling point. Meanwhile, in a large bowl, whisk the yolks, cornflour, sugar and vanilla. Gradually pour the hot milk mixture onto the sugar mixture, whisking constantly.

Wipe out the saucepan and pour the mixture back into it. Heat gently, stirring with a wooden spoon (see Steps 1 and 2, for stirring tips) until the custard is thickened, but before any lumps form. Eat hot or cold.

Make this classic rhubarb crumble for an easy, family-friendly dessert. Use seasonal rhubarb and a handful of ingredients to make a stunning pud.

Rhubarb crumble

rhubarb,

golden caster sugar

tbsp port (optional)

self-raising flour

butter, chilled

light brown muscovado sugar

chopped walnuts (optional)

Tip 500g thumb-length chunks of rhubarb into a saucepan with 100g golden caster sugar and 3 tbsp port, if using.

Cover and simmer on a very low heat for 15 mins, adding more sugar if you want. When soft (but still holding its shape) and sweet enough, pour the rhubarb into a medium baking dish.

To make the topping, rub 140g self-raising flour and 85g chilled butter together with your fingers until you have a soft, crumbly topping.

Now add 50g light brown muscovado sugar and 50g chopped walnuts, if using. Mix together with your hands.

Scatter the topping over the rhubarb and bake for 30 mins or until golden brown on top.

Serve piping hot with a big jug of thick vanilla custard. Refer to the tip for a recipe.

How to Make Custard Powder

Add the milk powder, corn flour, food colouring and vanilla to a food processor or blender, then blend for about 10 seconds.

Transfer to an airtight container and store in the pantry.

FOR THE HOMEMADE CUSTARD POWDER

Add 1/2 cup of custard powder to a small saucepan with the sugar and milk. Whisk to combine, then heat over low heat stirring constantly until thick and beginning to bubble. Add more milk if you want a thinner consistency.

TO TURN IT INTO CUSTARD

Crème anglaise, aka pouring custard or vanilla sauce, is an easy to make dessert sauce. It can be served warm or cold, thick or thin and only needs 4 ingredients. This recipe gives you all the tips you need.

How to make Creme Anglaise (Homemade Custard)

milk ((500 milliliters))

white granulated sugar ((notes))

vanilla bean paste

In a small saucepan, over low-medium heat, heat the milk until it&#039;s heavily steaming and very hot to the touch. Set aside.

In a medium bowl, use a hand whisk to whisk together the sugar and egg yolks until combined.

Whilst continuing to whisk, slowly drizzle the hot milk into the egg yolks.

Pour it all back into the saucepan and heat over low heat, stirring constantly, until it&#039;s thick enough to coat the back of the spoon and you can draw a line through it that doesn&#039;t break.

Pour the custard through a strainer into a clean bowl and let it cool a few minutes before serving. It can also be served cold.

This Vanilla Custard recipe is a rich, creamy and decadent dessert classic.

Vanilla Custard

cornstarch

egg yolks (, room temperature)

unsalted butter (, diced)

Heat milk and vanilla extract in a heavy bottom, medium saucepan until at a low simmer. Do not let it boil, until heat until little bubbles form around the edges.

Meanwhile, place sugar, cornstarch and salt into the bowl of a stand mixer fitted with the whisk attachment or a large mixing bowl with a whisk, blend dry ingredients until mixed. Add egg yolks and blend until a pale yellow.

Slowly pour milk mixture into eggs while whisking at a low speed. Do not mix too fast or it will froth and foam. Blend until mixed.

Transfer back to the saucepan and cook over medium-low heat for 3-5 minutes, or until thickened. Whisk continually to prevent mixture from scalding to the pan.

As soon as mixture thickens, remove from heat and whisk in butter (or bourbon), if desired.

Transfer to a clean bowl and cover with plastic wrap. Press plastic wrap into the custard mixture so there is no air between the two. This prevents the filmy skin that can develop. To set faster, place in small ramekins or bowls.

Refrigerate for a minimum of 3 hours, but up to 2 days.

Homemade Custard Pudding with Strawberries

Boil

In a medium sized pot add 4/5th of milk, sugar, salt, vanilla extract and ground cardamom. Mix until incorporated and bring to a full boil, then take off the heat.

Whip

Whip the eggs in a medium sized bowl until completely incorporated, add the rest of the milk and cornstarch. Whisk.

Add the hot milk a little at a time to the bowl while mixing constantly to bring the temperature of the milk down and avoid curdled eggs.

Thicken

Take the custard mixture back into the pot and cook over medium-low heat, mixing constantly, until it thickens and barely simmers (not boil, don’t overcook or it will curdle) about 5 minutes. Divide the mixture into 4 serving bowls and allow to cool completely in the fridge.

Serve

Slice strawberries and serve custard with fresh strawberries.
