Homemade Shabu Shabu is one of our favorite Japanese dishes! And now, even easier in the Instant Pot! Instant Pot Shabu Shabu is incredibly healthy, low fat, easy, fun, and fresh.

Instant Pot Shabu Shabu

Ponzu Sauce (1 cup per person)

Goma Sauce (1/2 cup per person)

Large Napa Cabbage, washed and cut into 2 inch pieces

oz Silken Tofu,

Green Onions, cut into 2 inch pieces

Shirataki (Harusame) Noodles

200 gram package of Enoki Mushrooms

Beech Mushrooms (brown)

Seafood Mushrooms

Cups Dried Shitake Mushrooms, reyhdrated and rinsed

4 inch piece of Kombu (dried kelp)

Fill up your Instant Pot liner with water...

Fill up your Instant Pot liner with water to the max line and set the Instant Pot to high saute. The pot should be at the table or wherever you will be eating. This is a collaborative, interaction dining experience!

Once the water starts simmering, add a piece of kombu to flavor. If you do not have kombu, just add a splash of soy sauce, dashi seasoning, and/or green onions to flavor the broth. You can also purchase Chinese-style broth seasonings which are usually spicy and much more potent.

Each place setting should have two or three small bowls (about the size of ramekins). One that is empty for dripping/ gathering food, and two more (one with 1/2 cup ponzu and the other with 1/2 cup goma). Each person should also have chopsticks or small tongs.

How to Make Shabu Shabu in the INSTANT POT!

A simple take on the traditional Chinese Hot Pot prepared with a warm and spicy broth chock full of veggies, noodles, and chicken.

Easy Chinese Hot Pot

sesame seed oil

yellow onion, thinly sliced

garlic,

(2-32 ounce containers) Kitchen Basics® Unsalted Chicken Stock

soy sauce

brown sugar

Thai Kitchen® Red Curry Paste

McCormick® Ground Ginger

McCormick® Ground Turmeric

salt and fresh ground pepper, to taste

boneless, skinless chicken breasts,

tofu,

green beans,

red bell pepper, sliced

Chinese cabbage leaves,

swiss chard,

Chinese-style (lo mein) noodles, cooked

Heat oil in 6-quart stockpot or dutch oven over medium-high heat.

Add onion and cook for 3 minutes, or until tender.

Stir in the minced garlic and continue to cook for 30 seconds, or until fragrant.

Stir in chicken stock, soy sauce, brown sugar, curry paste, ginger and turmeric and bring mixture to a boil.

Reduce heat to low; cover and simmer for 20 minutes.

FOR THE HOT POT

In the meantime, prepared your dippers and transfer them to small serving bowls or plates.

When ready to serve, transfer dutch oven to a portable hot plate set on a table OR transfer the broth to a PREHEATED slow cooker.&nbsp;

Arrange the dippers around the Hot Pot and let everyone cook the dippers in the broth for about 2 to 3 minutes or until desired doneness.&nbsp;

Place some cooked lo mein noodles in individual bowls, then ladle broth, chicken and veggies over noodles.&nbsp;

Serve.
