First things first, steam the potatoes. Place the chopped potatoes in a pot with cold water. Bring to a boil then cover and reduce heat. Steam the potatoes for about 20-25 minutes until they are tender enough to mash. Drain and let cool slightly.

Transfer the potatoes to a large bowl. Mash them with a potato masher, then add heavy whipping cream, butter, salt, dried parsley, and black pepper. Mix until all is well combined.

Fill a large pot with cold water about halfway full. Add 2 tablespoons kosher salt to the water. Stir until dissolved.

Wash the potatoes well with a vegetable brush (do not peel). Cut into roughly 2-inch pieces, placing the pieces into the pot of cold water as you go.

Bring the pot to a boil over high heat. Then, turn the heat to low and simmer for about 30 minutes, or until potatoes are easily pierced with a fork.

Drain the potatoes in a colander, or by holding the lid carefully over the pot at an angle to pour the water out while keeping the potatoes in the pot.

Add the salted butter (6 tablespoons) to the potatoes. Place a few of the potatoes over the butter. Cover the pot, so the heat stays in and melts the butter. Allow to sit until the butter is very soft or all the way melted (about 3 minutes).

Use a potato masher to break up the potatoes a bit and make sure the butter is evenly dispersed. Add the milk and continue to mash until desired consistency is reached and everything is mixed thoroughly. Season to taste with salt (and pepper, if you want) and stir/mash to distribute the seasonings.

Serve immediately for best results, with more butter if desired.

Black Folks Creamy Mashed Potatoes Recipe

chicken broth (or vegetable broth for vegetarians)

seasoning (Weber garlic and herb seasoning,

Wash and scrub the potatoes. I like to use this handy vegetable scrubber HERE.

Open the Instant Pot lid and place the Instant Pot trivet rack inside the stainless-steel inner pot. (The trivet rack isn’t required – but it keeps the potatoes above the liquid in the pot, so they’re steaming instead of boiling.)

Add the potatoes inside the pot.

Pour the chicken broth over the potatoes.

Close the Instant Pot lid (make sure the valve is up – in the position for sealing) and pressure cook on high for 10 minutes.

When the cooking time is finished, allow a natural pressure release for at least 10 minutes.

To open the Instant Pot lid, move the valve to ‘venting’ and manually release any remaining pressure, if applicable.

Use an oven mitt to remove the trivet rack from under the potatoes.

Mash the potatoes inside the inner pot, mashing until you reach the desired consistency. Be careful not to overwork the potatoes, so they don’t lose their fluffy texture.

Add the milk, whipping cream, butter, seasoning, salt, pepper, and parsley to the mashed potatoes.

Use a rubber spatula to fold in and combine all the ingredients carefully.

Bring just to a boil, reduce heat to low, and simmer for 15-25 minutes, or until the potatoes are fork-tender.

Drain

Drain the potatoes in a colander set over a medium-sized heatproof bowl (reserve the potato milk/water).

Heat

Return the potatoes to the pan and set the heat to medium-low. Stir gently until the excess moisture evaporates from the potatoes, about 1 minute.

Mash

Add the butter, 1½ teaspoons kosher salt, and ½ teaspoon black pepper. Mash the potatoes until smooth and creamy (or fluff adding some of the reserved potato milk-water, when/if necessary. (Note: If not serving the potatoes immediately, save about 1 cup of the milk-water to add before serving. Be sure to add the milk-water in ¼-cup increments to ensure the potatoes stay fluffy. No one likes watery mashed potatoes.)

Serve

Transfer potatoes to a serving bowl, dot with 3-4 tabs of butter (or drizzle with melted butteand garnish with parsley or cheese, if desired.
