Snack on Taiwanese Popcorn Chicken coated in a crisp crust. They&#39;re tossed in a roasted seasoning mix while the marinade makes each bite ultra juicy!

Taiwanese Popcorn Chicken (鹽酥雞)

chicken thighs

salt ((or

tsp sugar ((or

tsp five spice powder

chicken bouillon powder

onion powder

tsp pepper

tbsp corn starch

garlic ((finely chopped))

tsp ginger ((grated))

Shaoxing rice wine

tsp light soy sauce

bean curd ((optional))

potato corn

tsp baking powder

cooking oil ((for frying))

tsp white peppercorn

Sichuan peppercorn

tsp paprika

US cup Thai basil

Cut the thighs into bite-sized pieces, roughly 3cm x 3cm (1&quot; x 1&quot;).

Marinate them in the five spice powder, chicken bouillon powder, salt, sugar, grated ginger, finely chopped garlic, onion powder, corn starch, egg white, Shaoxing wine, light soy sauce, pepper and mashed fermented tofu for at least 20 minutes.

Toast the white and Sichuan peppercorns on low-medium heat until slightly brown, then use a sieve to sift out any unwanted particles.

Use a food processor to grind the peppercorns into a powder. Alternatively, use a pestle and mortar to crush them to achieve the same result.

Combine the ground peppercorns with the five spice powder, paprika and salt.

Mix the corn starch and baking powder together, then coat the cut pieces in the corn starch mix. Use a colander to shake away any excess starch.Tip: Put a few pieces in at a time so they are well-coated. Dumping many in will run the risk of a wet batter.

Heat up a wok of oil on medium heat and fry the coated pieces for 5 minutes or until golden.

Remove the pieces and let it drip dry in a sieve. Turn the heat up to high and double fry them for another 2 minutes.

Just before the chicken is ready, toss in the Thai basil leaves and let them fry for 2 minutes or until crispy. Scoop the chicken and leaves out into a large sieve or colander.

Put a serving of Taiwanese Popcorn Chicken into a large bowl along with some Thai basil. Add some of the spice mix in and toss all together until the batter is evenly coated.

Serve immediately as is!

Popcorn Chicken Recipe

boneless skinless chicken breasts (cubed)

all-purpose flour

garlic salt (with parsley flakes)

buttermilk

panko crumbs

pepper

vegetable oil

Add 1-2 inches of vegetable oil to a medium pan and heat on the medium setting.

Mix together flour and garlic salt in a small bowl. In another small bowl add buttermilk. In a third small bowl add the panko crumbs. Place the three bowls in a line.

Dip the chicken pieces in the flour mixture first followed by the buttermilk and lastly the panko crumbs.  Dip all the chicken pieces making sure that all sides are coated with each ingredient. For a double coating dip the pieces in the buttermilk a second time and again in the panko crumbs. If you&#39;re make a double coating you will need extra milk and panko crumbs.

Place a paper towel on a plate next to the stove near the hot oil.

Working in batches, place the chicken pieces in the hot oil. Fry for 3-4 minutes on each side or until golden brown. Once the pieces are done use tongs to remove them from the oil and place them on the paper towel-lined plate

Serve warm with your favorite dipping sauce.

Popcorn Chicken

Crunchy, juicy bites of chicken inspired by KFC. This appetizer is a family favourite.

Crispy Homemade Popcorn Chicken

300 g boneless chicken (cut in bite-sized pieces)

tsp ginger garlic paste

tbsp vinegar

tbsp tomato ketchup

tsp red chili powder

paprika powder

oregano

tsp salt

tbsp all-purpose flour

tbsp cornflour

tbsp sriracha sauce

milk (as required)

flour

tsp grounded black pepper

Combine all the marinade ingredients and rub over the chicken pieces. Put aside to marinate for at least 30 mins.

Mix the flour, cornflour, baking powder and sriracha together. Add enough milk to make a batter of medium consistency.

Season the flour with salt, black pepper and paprika.

Pour the batter into the chicken and mix well.

Pick one chicken piece at a time and coat well with the flour mix. Keep pressing with your fingers while you do it, this will give the flaky finish.

Heat oil for deep-frying. Fry the chicken on medium-heat in batches, don't crowd the pan/fryer. Take out when the chicken is golden-brown and cooked through.
