Follow the instructions in the all-butter pie dough recipe to make a blind baked, single crust pie, in a 9-inch deep dish pie plate. Reduce oven temperature from 375 to 350 degrees F and place a baking sheet on the rack.

In a blender or the bowl of a food processor, combine pumpkin puree, eggs, vanilla, brown sugar, granulated sugar, cinnamon, ginger, nutmeg, cloves, and salt. Blend until combined, about 5 seconds. Scrape the bowl or blender canister.&nbsp;Add milk and cream and blend (low speed, if using a blender) for an additional 5 seconds, until smooth.

Pour filling into the prepared crust. Place the pie plate on the heated baking sheet and bake for 45-50 minutes, until the edges are puffed and set and the center jiggles. The center of the pie should register 175 degrees F on an instant read thermometer.

Let pie cool on a wire rack to room temperature. Pie will continue cooking and firming up as it cools. Refrigerate until chilled. Slice, and serve with lightly-sweetened whipped cream.

Place the pie crust in a 9 inch pie pan. Preheat the oven to 425 degrees F.

Place the pumpkin puree in a food processor along with the brown sugar, cinnamon, nutmeg, salt and cloves. Pulse to combine.

Add eggs 1 at a time, pulsing after each addition. Gradually add the cream in a thin stream, processing just until blended. Process 5 seconds longer.

Pour the filling into the crust. Place the pie on a sheet pan.

Bake for 15 minutes, then reduce the oven temperature to 350 degrees F.

Bake the pie for an additional 40-50 minutes or until center is just set and a toothpick inserted into the filling comes out clean.

Cool the pie on a rack. Cut into slices and top with whipped cream if desired, or refrigerate the pie for later use.

Classic Pumpkin Pie (The Best)

¼ cups (190 g) unbleached all-purpose flour

tbsp sugar

(60 ml) plain yogurt

cornstarch

pumpkin purée

(10 oz/300 ml) sweetened condensed milk

(125 ml) 35% heavy cream

tbsp icing sugar

In a food processor, combine the flour, sugar and salt. Add the butter and pulse until the mixture forms coarse crumbs. Add the yogurt and pulse until the dough begins to form. Remove from the food processor and shape it into a disc. Cover with plastic wrap and refrigerate for 30 minutes.

With the rack in the lowest position, preheat the oven to 375°F (190°C).

On a lightly floured surface, roll out the dough. Line into a 9-inch (23 cm) pie plate. Trim the excess dough to ½ inch (1 cm) from the edge of the pie plate. Fold the edge of the dough over to form a double crust. Scallop the edge. Set aside.

Crust

In a bowl, combine the cornstarch and spices. Whisk in the eggs. Whisk in the pumpkin purée and sweetened condensed milk. Stir until smooth, then pour into the pie crust.

Bake for 35 to 40 minutes or until the filling is set in the centre. Let cool completely on a wire rack.

In a bowl, whip the heavy cream with the sugar until stiff peaks form. Serve the pie with a dollop of whipped cream or using a pastry bag fitted with a star tip, pipe the whipped cream along the outer edge of the pie.

Measuring Butter

The most creamy and delicious Sweet Potato Pumpkin Pie you have ever tasted! Forget the old dense pumpkin pies you are used to- this pie recipe is the best there is!

Sweet Potato Pumpkin Pie Recipe

flour –

tbs sugar

unsalted butter

water

tsp vanilla extract

pumpkin puree (15 oz)

sweet potato puree*

maple syrup

tsp pumpkin pie spice*

Flour Mixture

Add butter

Cut butter into large cubes. Emphasis on large. I recommend cutting each stick into four chunks and then each chunk into four more chunks. Then place the butter chunks in the flour mixture and toss to coat with flour.

Smash butter

Once tossed, smash each chunk of butter between your fingertips. Smash each flat, then move on to the next chunk. You don’t need to cutting the butter in or anything else because you want the butter to stay in large chunks.

Add water

Once each chunk is smashed, using a spatula stir in the water. Stir the dough until it forms a sticky ball. You will need to use the side of the bowl to bring the dough together.

Knead

Turn the dough out onto a floured surface and knead a few more times to finish bringing the dough together. Place the dough back into the bowl and refrigerate for 10 minutes- you want to keep the dough cold and the butter from melting.

Roll

Roll out the dough on the floured surface (adding more when needed), into a large rectangle (roughly12x10 inches). Make sure to flip the dough, add more flour if sticking and don’t hesitate to put it back in the fridge if the butter starts melting and sticking.

Fold and cut

Fold the 10-inch sides to the center of the rectangle then fold the other ends together like closing a book.  Cut in half and then refrigerate both halves for 10 minutes.

Roll into circle

Bring out one piece of dough and roll into a circle large enough to fit your pie plate. Place in your pie plate, pressing into the corners, and then cut the extra dough that hangs over the edge using scissors.

Rest

Cover with plastic wrap and allow the dough to relax for at least 2 hours in the fridge or overnight.

Freeze 2nd half

The second half of pie dough can either be frozen and used later or used immediately for a second pie. If freezing, place in a freezer bag and freeze for 2 months. To use just allow it to thaw in the refrigerator then follow the instructions from step 8. If using the second piece right away simply repeat what you did with the first half.

Make Homemade Pie Crust

Add holes

Preheat oven to 400°F and pierce pie crust bottom and sides with a fork.

Prebake

Lay a piece of parchment paper on top of the piecrust then fill the pie crust with rice, sugar, or pie weights. Bake for 11 minutes,then remove the rice/sugar and parchment and continue bake for another 10 minutes. The crust will start to brown.

Set aside

Prebake the crust- If using a store-bought crust, follow the package instructions for prebaking, if using my crust recipe follow the instructions below.

Combine milk, eggs, vanilla

While baking the crust, whisk heavy cream, milk, eggs and yolks, and vanilla together until well combined.

Combine pumpkin, spices, sugar

In a large sauce pan over medium heat combine pumpkin, sweet potato puree, granulated sugar, brown sugar maple syrup, pumpkin pie spice, cinnamon, and salt to a simmer. This will take 5-10 minutes.

Combine to make filling

After mixture is well combined remove from heat and whisk in the heavy cream mixture.  Once that is fully incorporated strain the mixture through a fine mesh strainer. This step isn’t a must, but it really does make for a very smooth pie filling. Use a spatula or large spoon to press the solids through the strainer.

Add to crust

Place your pie pan (with prebaked crust) on a baking sheet* and then pour the filling in the pie crust.

Bake

Adjust the oven rack to the lowest position. Place the baking sheet with the pie in the oven. Bake for 10 minutes at 400° then reduce oven temperature to 300° and bake for 35-40 more minutes. You want the edges of the pie to be set and the center to be slightly jiggly.

Cool

Once done remove from oven* and let cool at room temperature.

Place the flour, salt, and sugar in a food processor fitted with an “S” blade and pulse to combine.

Add the butter and cold water and process until the mixture resembles a coarse meal, begins to stick together, and holds together when pinched. 

Remove dough from processor (will be crumbly) and form into a ball.

Wrap in plastic wrap and refrigerate for at least 1 hour, or overnight.

Make the Pie Crust:

In a large bowl whisk together the egg and pumpkin.

Then, whisk in the heavy cream, vanilla, brown sugar, salt cinnamon and pumpkin pie mix until the mixture is smooth.

Make the filling

Preheat your oven to 425 degrees F.

Lightly grease a pie plate and set aside.

Roll out the pie dough on a well-floured surface (or pastry cloth) to fit the size of your pie plate.

Carefully transfer the dough to the pie plate and shape the crust as desired (pinch the edges).

Pour the pumpkin pie filling into the unbaked pie crust and cover the crust with a pastry shield.

Bake for 15 minutes at 425 degrees F. 

Reduce the temperature to 350 degrees F and continue to bake for 50 to 60 minutes, or until a knife inserted comes out clean.  It may be a bit wobbly still, but it will firm-up as it cools.

Allow the pie to cool on a wire rack for 2 hours.  Serve or refrigerate until ready to serve.

Preheat oven to 425 degrees. Prepare pie crust recipe and set aside. In a large bowl mix together sugar, cinnamon, salt, ginger, and cloves. Add eggs, canned pumpkin, and evaporated milk. Mix until fully combined.

Pour the pumpkin mixture into the prepared pie crust. Bake at 425 degrees for 15 minutes. Reduce heat to 350 degrees and bake for an additional 40-50 minutes or until the toothpick inserted comes out clean.

It has been years since I made a pumpkin pie. But my four-year-old grandson requested that Grandma make pie with his Halloween pumpkins so he could try it. And Grandma got busy cleaning, roasting, pureeing, and freezing 18 bags of pumpkin. I found this recipe and made two pies today. It was delicious, so smooth and creamy. The pies were perfectly cooked in the recommended time. This will be my go to recipe.

I made the pie crust and pie. Close to my mom's as I've ever gotten. I did use pumpkin pie spice , cinammon and cloves instead.
It's a bit on the sweeter side but that's not a bad thing. I might try and cut the sugar a bit next time.is that bad?
