Homemade queso Mexican cheese dip is smooth, creamy, delicious, flavorful, and so easy to make. It's so much better than store-bought in every way.

Queso Mexican Cheese Dip

butter

onion, finely chopped

garlic, minced

tomato, diced

jalapeño pepper, finely chopped

cornstarch

heavy cream

cheddar cheese

salt (or

black pepper (or

fresh cilantro, finely chopped (optional for garnish)

In a large skillet, melt butter over medium-high heat. Sauté onion and garlic until fragrant, about 2 minutes. 

Add tomato and jalapeño and sauté until soft, about 1 minute.

Add cornstarch and stir well to combine. Stir in heavy cream and cheese. Stir constantly and bring the mixture to a simmer over medium heat until smooth and thickened to a desired consistency, about 4-5 minutes.

Garnish with cilantro, extra jalapeño and chopped tomatoes. Serve warm with tortilla chips or alongside your favorite Mexican dishes.

garlic (, roasted (add up to 4 more for extra garlic flavor))

raw cashews (, see note)

veggie broth ((use low sodium to keep the salt low))

cashew milk ((almond would work too))

chopped mild chiles ((one small can))

jalapeno juice ((juice from slices above))

cumin

sea salt ((see note))

Blender

Place all ingredients except for 1/4 cup pickled jalapenos into a blender and blend until smooth.

Pulse

Add last 1/4 cup jalapenos and pulse until chopped. You can also just add them at the beginning but I liked the flavor of some chopped jalapenos in the dip.

Heat

Pour the liquid into a pot and heat over medium low heat on stove until it reduces and gets nice and thick and gooey. Depending on your stove, you may need to up the heat to get it to thicken nicely, even bring it to a boil then reduce the heat.&nbsp;

Stir

Stir frequently to prevent sticking. It took about 10 minutes for me to get the right consistency but you can make it however you prefer it. Serve hot!

The Greatest Queso That Ever Lived Recipe

block (32 oz.) Velveeta cheese

(8 oz.) cream cheese

(10.75 oz.) cream of mushroom soup

(10 oz.) Rotel (original, mild,

beef

jalapeños

onions

shredded cheese for topping

Brown the Meat:In a medium skillet over medium heat, brown the ground beef, sausage, or a combination of both. Drain excess fat and set aside.

Prepare the Cheese Base:Cut the Velveeta and cream cheese into cubes. Place them into a crockpot.

Add the Essentials:Pour in the Rotel (with juices) and the cream of mushroom soup. Stir to combine.

Slow Cook:Set the crockpot to low heat and let the mixture cook for about 30 minutes, stirring occasionally as the cheeses melt together.

Incorporate the Meat:After 30 minutes, add the cooked meat to the crockpot. Continue cooking on low for another 30 minutes, stirring occasionally.

Serve:Keep the queso warm in the crockpot on the “keep warm” setting. Serve with tortilla chips, nachos, or fresh veggies. Top with optional diced jalapeños, onions, or extra cheese.
