Cannoli Without Wine

ricotta cheese

tsp baking powder

tsp nutmeg

tbsp red wine vinegar

egg (for brushing)

vegetable oil (for frying)

water (if needed)

Cannoli without Wine

Chopped all the dry fruits and the dark chocolate.

Add in a bowl the ricotta cheese, add the dried fruits and the chocolate. Add the zest of an orange, the vanilla, the orange juice and the sugar.

Mix carefully all the ingredients. Cover and refrigerate.

Cannoli Filling

In a food processor, combine the flour, sugar, nutmeg, baking powder and salt.

Add the butter, the egg and mix thoroughly. Add the orange juice, the red wine vinegar and pulse until the dough forms into a ball. Add water, if needed.

On a floured surface, knead the dough for 3 minutes. Make a ball and cover it. Let it rest for 1 hour at room temperature.

Roll the dough into a long and equal snake shape, about 12 inches long. Cut into slices the dough. (Each disc should be about 1/2 inch thick). This should give you about 18 cannolis. Using a rolling pin, make a flat round shape of each disc. Take each disc and roll them around the cannoli tubes. Using the beaten egg and a brush, brush the last part of the disc to make it stick to the roll.

Heat the oil in the deep fryer to 190 °C (375 °F). Line a baking sheet with a paper towel. Fry 1 or 2 cannoli at a time for about 2 minutes. Drain on paper towels. Cool the cannoli completely.

Cannoli Dough

Using a pastry bag or a Ziploc bag with one of the corner cut, fill up the tubes from each side.

Lay them down on a serving plate and dust them with some icing sugar. This desert is soo irresistible, for sure you will be not be able to eat just one;)

Add milk, cream, and salt to a medium...

Add milk, cream, and salt to a medium saucepan. Cook over medium to medium-high heat, stirring frequently to prevent scorching, until milk reaches 190° F. Remove pan from heat and add the lemon juice, then stir it just once or twice, gently and slowly, to incorporate. Let pan sit undisturbed for 10 minutes to let curds form.

Wet a double layer of cheesecloth and ring out. Lay cheesecloth over the inside of a fine mesh strainer or colander that is set over a large heatproof bowl. Pour the curds and whey into the colander and let the curds strain for at least an hour, for very tender and loose ricotta. Strain for an additional hour or two for a ricotta that is firmer, like a very soft and tender cream cheese. Discard whey or save it for another use. Remove ricotta from the cheesecloth and enjoy immediately or store refrigerated in an airtight container for up to 3 days.

To serve the ricotta with honey and herbs...in a small dish with sides, mound some of the ricotta in the center. Drizzle a bit of honey over and around the ricotta and then scatter lightly with fresh thyme and rosemary. Finish with a sprinkling of flaky sea salt and freshly cracked black pepper. Serve immediately with crisp salty crackers. Some blackberries would be lovely with this, too!

Line a colander with cheesecloth or if you have a ricotta basket you can use that.

In a medium saucepan heat the milk and salt until it reaches a temperature of 85C, remove the pot from the heat and add the lemon juice, stir to combine, then cover and let sit for 15-20 minutes.

With a slotted spoon carefully transfer the curds (ricotta) into the prepared colander or basket, place over a bowl to catch any liquid. The consistency of the ricotta will depend on the amount of time you leave the ricotta to drain. I let mine sit for a couple of hours and it was creamy and perfect for us. You may want to go less time for a wetter ricotta. Use immediately or store in the fridge for later use. Enjoy!

Scoop the drained ricotta out of the sieve and place in a covered container. Chill the ricotta until ready to use. Discard whey (strained liquid) or place in a covered jar for future use

(2160 milliliters) whole milk

Good Afternoon Marcellina,  I am planning on making your Cannoli Cake this coming Monday/Tuesday, will the recipe for making the home made Ricotta yield the same amount of Cheese as the recipe for the Cannoli Cake that requires a 2 lb tub of Ricotta or 3 1/2 cups.. If I make the fresh Ricotta.  Or do I need to multiply the ingredients?  Also mentioned was the use of whole milk /heavy cream proportions.  I have access to purchasing Raw Milk as I live in an agricultural area where it is available.  The regular whole milk I currently utilize is Organic Pasteurized milk.  Would there be an advantage in doing so, flavor and or consistency wise with the Raw Milk ?  Friends who will be imbibing my creation are all professional Chefs.  Thank you , Linda
