Except for the Jerk Seasoning, to make each spice blend combine all ingredients together and mix.  Store in an airtight container and mix again before using.  

For the Jerk Seasoning, combine all ingredients except lime juice together and mix.  Store in an airtight container and mix again before using. Mix in the lime juice with the seasonings just before using.

Homemade Southwest Seasoning

Measure and combine all spices in a container with a tight-fitting lid.

Store in a dry, dark place for up to 6 months or longer.

I mixed up the slices for the Southwest seasoning and used to flavor my ground pork for pork and pablono pepper soft tacos with homemade Pico and creama, they were delicious, the seasoning was amazing in the pork with pablono peppers purple onion, minced garlic and a little jalapeño.

I used this recipe with chicken breasts in my crock pot, added to some chicken broth. Shred the breasts and put them back into the seasoned liquid to absorb the flavors.  I used the shredded chicken to make a Santa Fe Chicken Pizza Pie.  It was awesome!  BTW you can purchase 4 oz canning jars to store home made seasonings.

Hi.  One of my Tagines doesn't have a hole in the top.  Is that okay?  Make your Shakshuka all the time for guests.

I've made several Tagines - Chicken, Lamb, Beef, and Seafood.  This recipe is sooooooooooooooooo complete, I could taste it with my eyes.  Thanks.  Okay, I'm adding 5 more ingredients to my next Lamb Tagine.

I have a very old recipe that my parents got from a Moroccan friend in Fes. Some of the authentic spices are difficult to find. In Brussels (Belgium) we have a big Moroccan  community with shops and market on sunday where we buy all we need. Like galanga, maniquette, nigella, cantharide, long pepper, iris, cinnamon, belladone berries 😱gouza,cubèbe pepper, Kherouâ. I make the Ras el Hanout for all my friends and they ask for more when pot is empty.

Quick question, Kevin.  Do you dry roast these before grinding, or that doesn’t make any difference?
