This homemade Tapioca Pudding recipe is a creamy, classic dessert that is easy to make and naturally gluten-free! It is the perfect dessert to make ahead and one that the whole family loves!

Tapioca Pudding

pearl tapioca* ((not instant tapioca))

milk

heavy cream

salt

eggs

sugar

vanilla extract

Add milk, cream, sugar and salt to a saucepan over medium heat. Bring to a simmer, then stir in tapioca and reduce heat to low. Cook, stirring often, until mixture has slightly thickened, and the tapioca pearls have plumped and softened, about 45 minutes.

Add the eggs to a bowl and whisk to combine.

Add a spoonful of hot tapioca mixture to the beaten eggs, stirring well as you pour it in. Repeat with another few spoonfuls of hot tapioca, stirring after each. (This helps temper the eggs and bring them to a warm temperature without &quot;scrambling&quot; them.)

Add tempered egg mixture to the saucepan with tapioca and stir well to combine. Cook for 2-5 more minutes, just until thickened (keep in mind it will continue to thicken as it cools). Remove from heat and stir in vanilla.

Transfer to a serving bowl and place a piece of plastic wrap directly on the surface of the pudding (to keep it from forming a rubbery skin on the surface). Allow it to cool before serving. Serve either warm or chilled.

This delicious old-fashioned Tapioca Pudding recipe is one of my favorite classic desserts and only requires the simplest ingredients, including small tapioca pearls, milk, cream, sugar, eggs, and vanilla.

Homemade Tapioca Pudding

Rinse tapioca pearls and then pour into a small bowl and cover with water. Let soak 45-60 minutes.

Add milk and first ¾ cup of sugar to a large saucepan. Bring mixture to a simmer over medium heat. Once small bubbles form, add the tapioca pearls and reduce heat to a gentle simmer. Stir frequently and cook for 15-20 more minutes or until pearls become translucent.

As pearls cook, beat together the eggs and remaining ¾ cup sugar in a medium size bowl.

Slowly pour a stream of the hot mixture into the eggs about a ⅓ cup at a time, stirring constantly. Continue until half the hot mixture has been beaten into the eggs.

Slowly pour the contents of the egg bowl back into the saucepan, continuously stirring.

Cook for an additional 3-5 minutes or until the pudding starts to thicken (it will continue to thicken as it cools as well).

Remove from heat and stir in vanilla. Transfer to serving dishes and chill until serving.

There is something about a creamy bowl of tapioca pudding. It is easier to make at home than you might think, especially with the help of an Instant Pot. It takes almost no effort and gives you all of the nostalgia you could want from the classic treat.

Instant Pot Tapioca Pudding

Stir the tapioca pearls, milk and sugar together in the Instant Pot.

Close the lid and make sure the vent is sealed. Cook on high pressure for 10 minutes.

Allow to naturally release pressure for at least 15 minutes.

Stir in the vanilla and give the pudding a taste. Add a little more sugar if desired.

Allow pudding to cool for a while at room temperature, then cover and transfer to the refrigerator to chill.

To avoid the burn, use a steamer basket with a glass pyrex round (cut the recipe to fit the pyrex) It won't burn, and you can pull basket out by handle and let cool

My instapot just turned off due to scalding. I’ve never had luck with anything with milk in the recipe so not sure how this is supposed to work?? I just let it sit on warm setting for a while and it still tasted good!

I tried this. The pudding is a tan color and not white. It is very runny. I'm sure if I let it sit it will thicken. I've tried many Instant Pot recipes for tapioca and I always have trouble with it being  runny and not white. What am I doing wrong? Mine looks nothing like yours. Thanks.
