Grandma&#x27;s Caramel Sticky Buns are old fashioned caramel pecan rolls, with or without nuts, these cinnamon flavored sticky buns are perfect for any occasion!

Grandma's Old Fashioned Caramel Sticky Buns

all purpose flour, divided

sugar

active-dry yeast

salt

milk

water

butter (or 1 stick)

egg, room temperature, beaten

brown sugar, packed

corn syrup

butter, room temperature

pecans

butter, melted

brown sugar, divided

cinnamon

nutmeg

butter

In a large bowl, using a stand or handheld mixer, combine 1 1/2 cups flour, sugar, yeast and salt.  Set aside.

In a small saucepan combine milk, water and butter.

Heat gradually until butter melts and mixture is warm.

Slowly add milk mixture to your large bowl with the flour mixture in it.

Beat until smooth.

Add the egg and enough flour to make a thick batter, about 3 cups.

Next, prepare your work surface with flour and place the batter on top of the flour.

Knead in the remaining flour until an elastic dough forms.  You may not need all of the flour.

Place the dough inside a well greased bowl and paint melted butter all over the top.

Cover with a clean, damp towel and let the dough rise until it has almost doubled in size, about 1 hour.

Punch in the middle of the dough at about the 40 minute mark.  This will remove some of the air that has built up in the dough.

When you are getting ready to bake your dough prepare a medium sized bowl with brown sugar, corn syrup and butter.

Using a handheld mixer blend until smooth.

Grease a 13x9 inch pan with butter and a 9 inch round or square pan as well.  (You can also use three 9 inch square or round pans as well.)

Pour caramel topping inside your prepared pan and make sure the bottom of the pan is covered.

Sprinkle with pecans, as many as you want.  We always make sure the bottom is basically covered in pecans. If you choose to omit the pecans this is the time.

Again, punch in the center of your dough and divide the dough up into 3  even pieces.  At your workstation flour your surface and roll out the dough until it is about 20 inches by 10 inches.  A little more or a little less will not matter.

You have the option of including more filling in your buns if you desire and I have included the recipe to use if you want to. You really should try Option 2 at least once!

Make the Buns

Brush each dough rectangle with approximately 2 tablespoons melted butter and 3 tablespoons of brown sugar.

Option 1

In a small bowl combine brown sugar, cinnamon and nutmeg. Paint the butter on and sprinkle brown sugar mixture all over.

Using it makes your buns more sticky and ooey gooey good.  The more brown sugar, the stickier the buns will be.

Option 2

Roll up the dough, from the longer side, as tight as you can get it, into like a jelly roll.

Pinch the ends together and cut into 1 inch slices.

Place the slices into your prepared pan.

Cover again with your clean, damp towel for another 45-60 minutes.  The dough should again double in size.

Preheat your oven to 350 degrees,

Bake for 20-25 minutes or a beautiful golden brown.

Allow to cool in your pans for at least 5 minutes and then flip upside down on top of parchment paper until it is cool enough to handle.  This ensures that the caramel topping won&#x27;t run off the buns.

Serve warm.  Enjoy!

In the bowl of a stand mixer fitted with a whisk attachment combine water, 2 teaspoons of sugar, and yeast. Whisk together until just combined, then let sit for 5 minutes, until frothy.

Swap the attachment to a dough hook, then...

Swap the attachment to a dough hook, then add in remaining sugar, flour, honey, shortening, egg yolks, vanilla, and salt. Knead on medium speed for 8 minutes. The dough will be sticky once finished, but when stretched it should hold and be transparent.

Transfer the dough into a clean bowl that has been lightly sprayed with baking spray and cover with plastic wrap or a clean kitchen towel. Let rise for 1 hour, until doubled in size.

While the dough is rising, make the cinnamon sugar. In a small bowl, whisk to combine the cinnamon and sugar.

Once the dough has risen, turn it out...

Once the dough has risen, turn it out onto a lightly floured, clean surface. Roll the dough out to 12” long and 8” wide. Dust with the cinnamon sugar mixture and gently press into the dough.

Roll the dough up from the long side, then turn the roll diagonally. Use a knife to score 8-1” pieces. Cut the ends of the rolls off, about 1 1⁄2”, then cut the pieces you scored. Lay each piece onto a parchment-lined baking sheet with at least 2” space between them. The pieces should be oblong in shape. Press and lightly shape each one with your fingers, then let rise for about 45 minutes - until puffy, but not doubled.

Part of the way through the rise time, pour oil into a large pan or stockpot. Heat over medium heat, until the oil reaches 285°F. Once the rolls have risen, gently press them down again with your fingers, then place a few honey buns into the hot oil, making sure not to crowd the pan. Fry for 90 seconds on one side, then flip and fry for an additional 90 seconds on the other side.

While the buns are frying, whisk together the glaze. In a medium-sized bowl, whisk to combine the powdered sugar, honey, melted butter, vanilla, and salt. Whisk until smooth, then add in the hot water until the desired consistency is achieved.

Once honey buns are golden brown on each side, remove them from the oil and place onto a wire cooling rack over a paper towel-lined baking sheet. Gently press down to flatten and then immediately dip each bun into the glaze. This will give it that crisp texture once set.

This cake is so easy to make, it starts with a yellow gluten-free cake box mix! Tastes like a cinnamon roll without the trouble of making them.

Gluten-Free Honey Bun Cake (Dairy-Free)

avocado oil vanilla

Icing:1 ½ cups powdered sugar4 tablespoons almond milk1 teaspoon vanilla

Preheat oven to 350°. Spray a 9&#215;13&#8243; baking pan with cooking spray.

Mix in a small bowl the brown sugar, cinnamon, and nutmeg and set aside.

In a large bowl. mix together gluten-free cake mix, milk, oil, eggs, and vanilla until combined.

Pour half of the cake batter into the baking pan and spread out evenly. Then spread the brown sugar mixture over the batter. Next, spoon out the remaining batter on top. Then take a knife and swirl around through the batter in &#8220;s&#8221; shapes. 

Bake for 35-38 minutes. Remove from oven and let cool on a wire rack. 

Mix together the powdered sugar, almond milk, and vanilla. Drizzle over cake after it has cooled. 

If you want the icing to be more solid on the top, wait to drizzle it until the cake is completely cool. 

Made this today and it was delicious!!  Used king Arthur’s GF yellow cake mix.

I made this today and it turned out pretty good my sister wasn’t a fan but the rest of the family liked it. She said it was too much cinnamon. I used the yellow cake mix by King Arthur  Gluten Free, and used oat milk instead of almonds since I have nut allergies

This was delicious!  How about white/yellow cake mixes for carrot cake, banana cake, etc,?  For those of us not up to baking from total scratch, shortcuts are appreciated!
