Honey Chicken

chicken breasts

cornstarch

vegetable oil (or as needed)

Cut chicken breasts into bite-sized pieces, season with salt &amp; pepper and toss with cornstarch.

Combine all sauce ingredients in a small bowl and set aside.

Heat oil in a large skillet over medium high heat. Add chicken in small batches and cook until no pink remains, about 5-6 minutes. Set chicken aside in a bowl.

Add sauce to the pan and bring to a simmer. Simmer 1 minute.

Stir in chicken and toss to coat. Garnish with green onions.

In a medium sauce pan, bring honey, soy sauce, and garlic to a boil. Stir corn starch into the cold water, then whisk into boiling honey sauce until thickened. Remove from heat and set aside.

In a wide, shallow dish together the flour, cayenne pepper, paprika, salt, pepper, and garlic powder. In a second shallow dish whisk together eggs and 1 tablespoon water. Dredge the chicken in the egg wash, then in the flour mixture, tossing to coat all sides of the chicken.

Pour oil in a large skillet and bring to temperature over medium heat. Cook chicken in the oil , 4-5 minutes on each side, until crispy on the outside and cooked through in the middle.

Toss chicken in the honey garlic sauce, coating all sides very well. Serve immediately.

Honey Garlic Chicken

to 1 ½ pounds boneless skinless chicken thighs (cut into 1” pieces)

salt and pepper (to taste)

¼ teaspoon ground ginger (or 1 to 2 teaspoons minced ginger or ginger paste)

sesame seeds (optional garnish)

green onion (optional garnish)

Make the sauce by whisking together the corn starch with a couple tablespoons of chicken broth until smooth.

Whisk in the remaining chicken broth, soy sauce, honey, toasted sesame oil and sriracha or crushed red pepper flakes, if using. Set aside.

Prepare the Sauce

Add oil to a large skillet or wok and heat over medium high heat. Season the chicken with salt and pepper.

Combine the corn starch, garlic powder and ground ginger in a small, shallow bowl and whisk to combine.

Toss the pieces of chicken in the mixture, a few pieces at a time, until coated.

Add chicken (in batches if necessary) to the hot oil and cook for 3 to 5 minutes, turning the chicken pieces over so they brown evenly. (Check to make sure chicken is cooked through.) Remove and set aside.

Add minced garlic to the skillet and cook garlic, stirring continuously for 1 minute.

Carefully pour in the prepared sauce and stir to combine with the garlic. Bring the sauce to a simmer over medium heat.

Add chicken back to skillet and stir to combine. Continue cooking until preferred thickness and consistency is achieved, about 2 to 5 minutes. Test for seasoning and add salt and pepper if needed.

Garnish with sesame seeds and sliced green onion and serve over rice or with your preferred side.

Thumb-size piece of fresh ginger, grated

In a large bowl, mix together the ginger, garlic, soy sauce, honey and lemon juice. Take 4 tablespoons of the marinade and set aside. Trim the chicken thighs neatly. Add to the bowl with the remaining marinade and mix well. Set aside for 20 minutes, or overnight if you like.

Preheat the oven to 200°C/fan180°C/gas 6. Lift the chicken from the marinade – leave the marinade in the bowl – and lay on a large lined baking sheet in a single layer. Cook for 20 minutes, then turn over and brush with the marinade from the bowl. Cook for a further 20 minutes, until cooked through and golden.

Just before the chicken is ready, heat the oil in a wok or frying pan over a high heat. Add the vegetables and stir-fry for 2-3 minutes, or according to packet instructions, then add the reserved 4 tablespoons marinade and cook for 1-2 minutes. Serve with the sticky chicken thighs.
