Hot Milk Cake

eggs

whole milk (236 milliliters)

butter (1 stick,

sugar (400 grams)

salt

all-purpose flour (250 grams)

baking powder

vanilla extract

oz unsweetened chocolate (chopped)

Tablespoons unsalted butter¹

milk (80 milliliters)

sugar (250 grams)

Preheat oven to 350F (175C) and grease and flour a tube pan (you may instead make this recipe in a 13x9” sheet pan). Set aside.

In the bowl of a stand mixer or in a large bowl using an electric mixer, beat eggs until well-beaten and pale yellow (about 30 seconds on medium speed).

Add sugar and vanilla extract and stir until well-combined.

In a separate bowl, whisk together flour, baking powder, and salt.

Gradually add flour mixture to egg mixture, stirring until combined.

Combine milk and butter in a small saucepan and bring to a boil over medium/high heat. Set aside.

Add melted milk/butter mixture and stir until combined. Batter will be thin.

Pour into prepared pan and bake 350F (175C) for 40 minutes (if using a 13x9” pan, cake will need to bake 25-30 minutes).

If you made this cake in a 13x9&quot; pan, allow to cool completely in baking dish. If you baked in a bundt pan, allow cake to cool for 15 minutes and then invert onto cooling rack. Allow cake to cool completely before covering with Fudge Icing.

Combine chopped chocolate, butter, and milk in a small saucepan over low heat. Stir frequently until chocolate and butter are completely melted².

Remove from heat and stir in vanilla extract and salt. Whisk in powdered sugar until fudge icing is smooth and glossy. Allow to cool, whisking frequently, until icing is cool and no longer runny, then pour over cake.³

Allow icing to set and then slice and enjoy!

Old-Fashioned Hot Milk Cake

Preheat the oven to 350 degrees Fahrenheit and grease a 9x13-inch baking pan with butter or cooking spray.

In a medium bowl, whisk the flour and baking powder until combined. Set aside.

In a stand mixer, whisk the eggs for 3-5 minutes on medium-high speed until pale, thick, and fluffy.

While the eggs whip, place the butter and milk into a small saucepan over medium-low heat. Warm until the butter melts and bubbles appear around the edge. Do not boil.

When the eggs are thick, gradually add the sugar and the vanilla while they continue to whisk.

Slowly add the dry ingredients to the egg and sugar mixture, whipping on medium until well blended and smooth.

Turn the mixer to medium-low, then carefully stream the hot milk and butter into the batter. Mix until just combined.

Pour the cake batter into the baking pan and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10-15 minutes. Then, turn it onto a wire rack to cool fully.

(240 grams) all-purpose flour

eggs (at room temperature)

(400 grams) granulated sugar

(4 tablespoons 57 grams) unsalted butter

Preheat the oven to 350°F/180°C, and grease or butter a 9x13 baking pan. Set aside.

In a bowl combine the flour with baking powder and salt and set aside.

In a separate bowl or in a bowl of a stand mixer (or use a hand mixer), beat the eggs until fluffy (3 minutes on medium-high speed), then gradually add sugar and beat until well combined. Beat in vanilla.

Add the dry ingredients to the wet ingredients and mix to combine.

In a small saucepan, combine the milk with butter and place over medium heat to melt the butter. Remove from heat, and slowly add it to the cake batter while the mixer running, mixing until well combined.

Pour the batter into the prepared pan.

Bake for 40-45 minutes or until a toothpick comes out clean from the center of the cake. Allow to cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.

Made this in the airfryer in two separate batches as I don't currently own an oven, and had lots of milk to use up. Made a very light, sponge. Is a little too sweet for me personally, (I tend to think UK cakes use a bit less sugar) but delicious. Will freeze into bite size treats!
