How to Brine a Turkey

Combine all of the above ingredients you are using a stockpot but exclude any fresh fruit. Boil 10 minutes then cool.

Clean and place the turkey in the brining container (I love big plastic bags, the Ziplocs are great). Add the cooled brine, fresh fruit if using, and enough water/ice to cover the turkey. Use a large pan to help support the brining bag. It will help you handle the very heavy bag better.

onion powder

celery seeds

white pepper

black pepper

lemon zest ((optional))

In a small bowl mix together all the ingredients until everything is evenly incorporated.

Take your salmon cut and place it skin side down.

Rub the mixture on all the exposed meat parts of the salmon

Place the salmon on a dish and lover it with cling wrap to trap any moisture that might escape.

Give it around 6-8 hours for all the flavors and moisture to resettle back to the meat.

Rinse off any salt or dry rub mixture to avoid overpowering flavors.

Now your salmon is ready for smoking.
