Oven-roasted corn on the cob with homemade garlic butter is buttery, juicy, crunchy, and perfectly charred on the outside — without a grill.

Oven-Roasted Corn on the Cob

unsalted butter, softened

garlic,

salt

black pepper

cobs of corn, peeled

In a small mixing bowl, cream together the butter, garlic, salt and pepper.  Spread the butter mixture over each corn.

Wrap each corn in aluminum foil and place on a large half sheet baking pan. Roast in the preheated oven for 40 minutes, turning the corn over halfway.

Take out the corn and open the foil on top to expose it. Turn on the broiler function on the oven and place corn back in. Broil on high for 2-3 minutes.

Serve with a piece of butter on top. Sprinkle more salt and pepper as desired.

Loved this! Super easy and tasty. It's a great side dish, but I prefer to eat it simply as a snack haha.

Oven Roasted Corn on the Cob with Garlic Butter

Get ready to learn how make roasted corn the easy way! Quickly caramelize whole corn kernels alongside onions and garlic for a side dish on the stovetop that is fast enough for weeknights. Plus it uses frozen corn which means this can be ready to eat in just 20 minutes all year long!

Easy Skillet Roasted Corn (Simple Recipe!)

corn kernels

½ onion (diced (yellow, brown, or sweet onion))

garlic

tbsp butter

olive oil

kosher salt (to taste)

pepper (to taste)

Heat a 12-inch skillet over medium-high heat (I prefer cast iron skillets, but any skillet will work).

Once hot, add in butter and oil until melted. Add in diced onion and garlic. Saute for 2-3 minutes, stirring occasionally, until fragrant and translucent. The pan should stay very hot, but not so hot that they burn.

With the pan very hot, add in frozen corn kernels. Continue to cook for approximately 10 minutes, stirring occasionally. It is done when the kernels are soft and are spotted with deep shades of brown. Finish with salt and pepper to taste.

Always add fresh garlic at the end of any fry/sauté recipes, or even if you are baking a caramelized veggie tray ; garlic will burn in 60 seconds....took me a while (years!) to learn this! :)

Thank you for this delicious, easy skillet corn.  When Panera eliminated fire-roasted corn from their Southwest Avocado Chicken Salad, it lost a lot. But thanks to you, I learned how to make my own using Trader Joe’s frozen yellow corn. My garlic did burn a bit after the corn was added, Should more EVOO be added? I used a 12 inch skillet but there was no way I was going to be able to fit the 2 lbs of corn in it! And, by the time the corn was roasted the onions and garlic had burned :'( Otherwise, it tasted great! I will definitely be trying this again!

Add some cojita cheese and chopped cilantro. Yum! 😋

Delicious!  Made this tonight &amp; it turned out excellent. Everyone enjoyed it, there was none left.  Thanks for another yummy way to make corn.
