Sautéed mushrooms are a delicious side dish or topping, and they add a pop of flavor to burgers, steak, chicken, fish, salads, and so much more.

butter

mushrooms

garlic (minced)

Worcestershire sauce ((I am using Annie's brand, which happens to be vegan))

salt (plus more, to taste, prior to serving)

pinch pepper (plus more, to taste, prior to serving)

parsley (optional, chopped)

Add oil and butter to a large skillet, and heat on medium heat until butter melts.

Add mushrooms, and cook about 10 minutes, stirring a couple times to make sure even cooking.

Add salt and pepper, and stir to combine.

Reduce heat to low and simmer about 2 to 3 more minutes, until mushrooms are tender.

Add garlic and Worcestershire, and cook 1 minute more.

Remove from heat, and add parsley (optional).

Serve immediately. Great as a side dish or topping over chicken, steak, fish, etc.

Perfectly Browned Sautéed Mushrooms

salted butter (see notes for unsalted)

sliced mushrooms (washed (I prefer baby portobello))

black pepper (for serving, optional)

Melt the salted butter (2 tablespoons) in a large, preferably nonstick skillet over medium-high heat.

Add the sliced mushrooms and the kosher salt (1/4 teaspoon) to the skillet. Stir to coat in the butter, and spread the mushrooms out in an even layer, with as much surface area in contact with the skillet as possible.

Allow the mushrooms to cook, WITHOUT STIRRING, for about 5 minutes, until much of the liquid has been drawn out of the mushrooms and has almost fully evaporated.

Stir the mushrooms, trying to flip them over as much as possible (but not being obsessive about it). Spread them in an even layer again, and allow to cook for another 2-3 minutes without stirring.

Stir one more time and allow to cook for another 2-3 minutes, until mushrooms are deeply browned and there is almost no liquid in the pan.

Adjust seasoning if needed, adding black pepper if desired. Serve as is, or use in other recipes such as pasta or quiche.

How to Sauté Mushrooms

Tablespoons butter

cracked pepper and salt (to taste)

Clean mushrooms and cut with a knife into similarly shaped thick pieces, if desired.  Do not cut the mushrooms thin.

Add butter and olive oil to a pan. Heat over medium-high heat.

Once butter is melted and the mixture is hot, add mushrooms in small batches allowing room between mushrooms. Avoid crowding the pan. Allow mushrooms to cook, without stirring for 3-5 minutes.

Stir only occasionally allowing mushrooms to finish cooking completely for another few minutes. Add salt and pepper to taste. Cook time varies depending on the size of the mushroom. If the mushrooms give off a lot of liquid, keep cooking until the liquid has evaporated and the mushrooms are browned on both sides.

Serve warm over steak, in pasta, or as a side.
