Huevos con chorizo is an easy, quick and delicious Mexican breakfast that you can have on the table in less than 20 minutes.

Chorizo con Huevo (Chorizo and Eggs)

lb Mexican chorizo

Crack the eggs into a bowl and beat them with a fork for a couple of minutes. Set aside.

Remove the chorizo from their casings and put them in a skillet.

Heat the up the skillet over medium high heat.

Crumble the chorizo into small pieces with a spatula while it&#39;s cooking. It&#39;ll take about 8 minutes to fully cook.

Then transfer the cooked chorizo to a paper towel lined plate to drain.

Reduce heat to medium low and add the eggs to the skillet.

Add the chorizo back to the skillet with the eggs.

Stir the chorizo and eggs together.

Continue to stir until the eggs are fully cooked.  This will take about 5 minutes.

This recipe for Chorizo con Huevos (Mexican sausage with eggs) is an easy, flavor packed breakfast that makes an excellent hangover cure! It only takes 20 minutes and two ingredients to make, plus garnishes of course.

Chorizo and Eggs Recipe

lb Mexican chorizo (removed from casing)

salt and pepper

white onion

avocado (sliced)

cilantro

warm tortillas and hot sauce (optional

Break the chorizo up in a heavy bottomed skillet and cook over medium heat until it starts to crisp, about 15 minutes.

Push the chorizo to the side and crack in the eggs. Cook the eggs to your desired level of doneness (flipping if needed), then use a spatula to transfer them to two plates with equal amounts of chorizo.

Top with a few slices of onion, avocado and several sprigs of cilantro. Serve immediately with warm tortillas and hot sauce on the side.
