This Mediterranean hummus bowl uses brown rice as a base and is filled with plenty of vegetables and of course hummus for a tasty, vegetarian meal.

Mediterranean Hummus Bowl

brown rice

grape tomatoes (sliced)

red onion

cucumber (sliced)

feta cheese

chickpeas (drained and rinsed)

garlic herb seasoning

Scoop of classic hummus

Roast

Start by roasting the chickpeas: preheat oven to 425°. Press as much liquid out of the chickpeas as you can (I use a few paper towels to do this), then pour chickpeas onto a baking sheet. Sprinkle garlic herb seasoning over the chickpeas, then roast for 20-25 minutes.

Cook

Meanwhile, cook the rice according to the package instructions.

Assemble

Once the rice is cooked, top it with the tomatoes, onion, cucumber, feta, and the roasted chickpeas. Last, add a scoop or two of hummus.

Quick Hummus Bowls

hummus

English cucumber slices (or standard cucumber, peeled)

red onion slices (or shallot)

cherry tomatoes, sliced

Kalamata olives

feta cheese, to sprinkle (optional

baby greens lettuce (optional)

rice rice

pita bread, pita chips,

Optional toppings: Jarred Calabrian chilis

Place greens and rice in the bowl, if using (try packaged pre-cooked rice for a quick shortcut). If using rice, season it with salt and a drizzle of olive oil.

Top with hummus, sliced cucumber, sliced red onions, sliced tomatoes, olives and feta cheese. Eat with pita wedges, using the hummus as a dip / dressing for the veggies.

We just started eating Mediterranean, and this was one of the first recipes we tried from this site.  This is a MUST try!  It was SO good, filling and a great dinner for two!  I can't wait to try more recipes!

This Roasted Potato, cauliflower and chickpeas recipe is so simple to make while also being filling and so nourishing!

Roasted Potato, Chickpea, and Cauliflower Bowls

cauliflower

baby potatoes (diced)

15 oz chickpeas (drained and rinsed)

olive oil

garlic powder

Fine sea salt and black pepper

parsley

tahini

lemon juice

maple syrup

apple cider vinegar

sour cream or greek yogurt

water

Salt and pepper (to taste)

Preheat the oven to 400 degrees F.

On a large baking tray (or 2 trays as need so that the veggies are not over crowded), add on the  cauliflower,  chickpeas, and potatoes. Drizzle the veggies with olive oil and sprinkle on the garlic powder, salt, and pepper. Toss so that everything is covered in oil.

Roast in the oven for 30-35 minutes, tossing halfway, until lightly browned.

For the veggies:

Meanwhile, make the dressing by whisking together all of the ingredients until smooth and well combined.

Serve the veggies on a plate with hummus and with a good drizzle of the  dressing and ENJOY!

For the Maple  Dressing:

My family loves this recipe!  We add brown rice on the side to guarantee a fourth portion for lunch the next day.
