The best dairy-free ice cream recipe, made with coconut milk and honey.

Salty Honey Coconut Milk Ice Cream {dairy-free}

tapioca starch (or arrowroot starch)

(14.5 ounce) can full-fat coconut milk

(14.5 coconut cream

raw honey (divided)

vanilla extract

vodka (optional)

flaky Maldon sea salt]

Large bowl filled

To begin, mix tapioca starch and 2 tablespoons of coconut milk, stirring to dissolve and create a “slurry”. Set aside.

In a large saucepan, bring remaining coconut milk, coconut cream, and 1/3 cup honey to a boil. Stir in tapioca starch slurry and boil for 1 1/2 minutes. Then turn down heat and simmer for 3 minutes, until mixture has slightly thickened and will coat the back of a spoon.

Remove from heat, then stir in vanilla and vodka. Pour into a large Ziploc bag, seal, and submerge in ice bath. Refrigerate ice bath for at least 4 hours, or overnight.

Pour ice cream mixture into your ice cream maker. I churn mine with my KitchenAid stand mixer attachment, on “stir setting” (low) for 13-14 minutes, until ice cream is of soft serve consistency. At this point sprinkle in 1/2 tablespoon salt and churn for 30 more seconds.

Remove bowl from Stand Mixer and spread half of ice cream in the bottom of bread pan or other metal container.

Drizzle 2 tablespoons honey and 1/2 tablespoon salt over the top. Spread remaining ice cream over that layer and drizzle remaining honey and salt over the top. Freeze for at least 4 hours before serving.

Tablespoon Coconut (Shredded- Use

Pour

Pour all ingredients except shredded coconut into the pint container and stir to combine.

Smooth and freeze

Smooth the top flat, cover, and freeze for 24 hours.

Remove from freezer

Remove from freezer.  Before spinning, let the container sit out at room temperature for 10 minutes.

Insert into machine

Place the pint container into the outer bowl and place it into the Ninja Creami machine.

Sorbet Process

Turn the machine on and select the sorbet process.

Spin

Add Coconut

Optional: Once the sorbet process completes, either remove from the Ninja Creami and top with coconut to enjoy or add in coconut mix-ins.  If you would like to add coconut in as a mix-in, create a small tunnel down the middle of the sorbet and add in coconut now.

Stir the milk, cream, sugar and vanilla/extract together.

If your filling/flavoring is something smooth like hot fudge, caramel, chocolate sauce, peanut butter or dry cake mix then mix it until it's dissolved. (sometimes you need to heat it before mixing it in, like the hot fudge or caramel sauce)

Start with a little and add more, since there is no eggs you can taste it as you mix and decide when it's enough.

Stir it well and make sure it's still cold, then run it through your ice cream machine according to the directions, about 30 mins

Stir in any fillings that are chunky, like chunks of chocolate, crushed cookies, sprinkles, nuts, marshmallows, toffee, etc... OR anything that you want to stir in like a ribbon, like peanut butter, hot fudge or marshmallow frosting...

Serve immediately for soft ice cream and freeze a few hours for firmer ice cream.

I made this ice cream and we fell in love . It’s so easy to make and delicious too .it is a favorite go to meal. I will definitely be making it my go to recipe for ice cream. 5+ stars.

Where do I buy/get the flavorings to make ice cream....I am using fresh peaches, but since our fruits basically have NO flavor anymore.....I would like to add peach flavoring to my home made ice cream....

EASY NO COOK ICE CREAM - any flavor
1 C whole milk
1/2-3/4 C sugar (if the flavoring your adding is sweet already use less, if it's lacking in sweetness use more)
1 tsp flavor extract - mint, vanilla, almond
2 C heavy whipping cream
1/2-3/4 C flavoring - caramel sauce, cake mix, peanut butter, etc...
3/4 C mix ins - mini chocolate chips, crushed candy, cookie dough balls, crushed cookies
mix the milk, sugar, extract and flavoring. 
you may need to heat some filling, like hot fudge, or peanut butter, to get it more liquidy so it can stir in 
add the heavy whipping and cream and if the mixture is at all warm cool this mixture in the fridge for about 15 mins
pour into your ice cream machine and run according to the directions.

BIRTHDAY CAKE ICE CREAM
3/4 C cake mix
1/2 C sugar
1 C milk
1 tsp vanilla
2 C heavy whipping cream
1/2 C sprinkles
3/4 C white cake chunks
whisk the cake mix and sugar to get out any chunks
slightly warm the milk and add to the dry ingredients to help with dissolving the sugar and cake mix
add the vanilla and heavy whipping cream and stir, chill if needed
pour into the ice cream machine and run for about 30 mins
in the last few seconds add the sprinkles
add 1/3 the soft ice cream to a container for freezing then add 1/2 the cake chunks, repeat with the rest of the ice cream and cake chunks then give it a little stir
freeze 3-4 hours then serve.

HOMEMADE ICE CREAM CONE
1 C granulated sugar
4 lrg egg whites
1 tsp vanilla
1/4 tsp salt
4 Tbsp butter melted
1 C all-purpose flour
water
preheat your waffle cone maker
whisk the egg whites and sugar until smooth
add the rest of the ingredients and whisk until completely smooth
Mix everything well, if it's too thick add a splash of water - but not too much you want it still thickish. 
scoop batter into machine, 2 heaping tsp for a small cone/bowl and 1 1/2 Tbsp for a full sized cone/bowl
as soon as it's done (about 40-50 seconds depending on temp) pull out and either place in a bowl or wrap around the cone, set it aside to cool while you start the next one.
if you don't have a waffle cone maker - preheat a pan with a silpat mat in the oven, 400
spread 2 circles of batter onto the warm pan and place in the oven for 7-9 mins  then pull out and shape around the cone
