This delightful dessert tastes way too good for as easy at it is to make.  It is basically a fluffy "fat bomb", so if you're trying to hit your fat macros for the day, this a delicious and satisfying way to get there. 

Coffee Mousse

heavy whipping cream (240 milliliters)

liquid stevia

espresso powder (8 grams)

TB water (30 milliliters)

oz cream cheese, softened (55 grams)

In a high sided bowl, whip the heavy cream to stiff peaks using a whisk or a whisk attachment on a hand mixer or stick blender.  If you want, you can add liquid stevia at this point for more sweetness.

In a separate bowl, dissolve the espresso powder in the water, then add the softened cream cheese and mix.  This goes very quickly with an immersion/stick blender.

Add the espresso cream cheese mixture to the whipped cream and whisk until combined, scraping the sides with a spatula as needed.

Serve immediately or allow to firm up in the fridge.

Banana, frozen

Cup Green Peas, frozen

Tablespoons Peanut Butter, smooth

Tablespoon Cacao Powder

Cups Almond Milk, unsweetened

Dates, pitted

Add all to blender cup and blend on high for 1-2 minutes till smooth.

Authentic Caesar Salad Dressing in 30 Seconds Flat

pasteurized egg (at room temperature)

olive oil (mild

Parmigiano Reggiano cheese

garlic (smashed (add

lemon juice

Dijon mustard

tsp salt

tsp fresh cracked black pepper

anchovy paste

Put all the ingredients in a large mason jar.  Make sure your egg and oil are at room temperature.

Put an immersion blender down into the jar, and turn on.  Blend, pulling up as you go, until the dressing has emulsified.  This will only take a few seconds.  Give it a stir, and then taste to adjust the seasoning.  Tasting is key to getting it just perfect.  You may want a little more anchovy, or lemon.  I always add more cracked pepper.

Keep refrigerated and eat within two weeks.

Authentic Caesar Dressing in 30 Seconds!

Easy, creamy and delicious Potato Leek Soup. A classic French recipe! Lightly adapted from My Paris Market Cookbook.

Potato Leek Soup

butter

onion (finely chopped)

leeks

potatoes

chicken broth (or water or vegetable broth)

salt and black pepper (to taste)

milk (or cream)

chives (for garnish)

Melt butter in a medium pot over medium heat. Add onion; cook and stir until softened, about 3 minutes. Add leeks; cook and stir another 5 minutes. Add potatoes and broth. Bring to boil, then reduce heat and simmer 20 minutes, or until potatoes are tender, stirring occasionally.

Blend in batches using a traditional blender (see recipe note #1) or use an immersion blender to reach your desired consistency (from slightly chunky to silky smooth).

Return soup to pot. Stir in milk or cream and season to taste with salt and freshly ground black pepper. Reheat if necessary.

Serve topped with chopped chives.

Really tasty soup! Easy to prepare and even my kids loved it! Served it with garlic bread and it was very filling!

Great recipe. We are on a low carb vegetarian diet. This was great. I used only 2 Tablespoons of half and half and still came out creamy and tasty.

Love how creamy dreamy this is, but how low in calories it is (like, seriously, under 200 calories? Woo hoo!) And potato leek is such a yummy combo...and I just happen to have both on hand ;)  I think soup is in order right about now!
