This Chinese herbal chicken soup is so good for your immune system and warms you up in cold weather.

Chinese Herbal Chicken Soup

chicken (4-5lbs, organic/free-range preferably)

ginger root

garlic

goji berries (fruit of barbary wolfberry)

(about 0.35 ounces) angelica sinensis root

(about 0.4 ounces) astragalus root

(about 0.70 ounces) dried Chinese yam

small thumb-sized pieces (about 0.20 ounces) American (yellow) ginseng

Water (enough

Salt (to taste, for each individual bowl)

Tbsp Green onions, chopped

Let’s prepare our ingredients. Rinse the chicken and remove any innards. Place the whole chicken in a large pot. You want enough room in the pot of your choice to allow for water to cover the whole chicken.

Rinse off all of the dried herbs or dunk them in a bowl of cool water. This is just to remove any dirt/debris before placing them in the soup. Rinse or remove the herbs from water and place them in the pot with the chicken.

Add the remaining ingredients to the pot with the chicken and herbs: ginger root, garlic, and enough water to just cover the chicken in your pot.Bring it all up to a boil. Once it starts to boil for a few minutes, remove any scum floating on the top of the soup. Continue to periodically check for any additional scum, and remove it.

Lower the heat to a low-to-medium heat. Allow it to continue to simmer for another 1.5 hours. You want the chicken to be tender, but you also don’t want it to be completely falling apart. The water at this point should have reduced.

Remove the pot from heat. Remove the chicken and plate on a large plate. Remove all of the dried herbs and ginger root from the soup with a slotted spoon. You could also remove the garlic or leave the garlic in the soup to eat. Note: We actually left some of the goji berries (as you can see in some of the pictures), so you can remove them or eat them as well.

This is where you have a couple of choices: 1. Serve the chicken in whole sectioned pieces in each bowl, or 2. Remove the meat from the bones and return to the soup. For ease of eating for the whole family, we always remove the meat from the chicken and put it back in the soup. This way no one is picking through bones later, however, this is totally your choice/preference.

The Ultimate Immune-Boosting Soup

coconut oil

yellow onion, chopped

garlic cloves,

celery stalks, sliced

shiitake mushrooms

tsp sea salt

tsp black pepper

turmeric

water

baby bok choy, bottoms chopped off

kale,

ginger

Chop off the very bottom of the stem from your mushrooms and discard. Separate stems from tops and slice tops and remaining stem if necessary, into large pieces. You will only discard the very bottom of the stems, not the full stems as they contain many nutritional benefits!

Heat up coconut oil in a large pot over medium heat.

Add onions and sauté for 5 minutes or until translucent.

Add in garlic and cook for 1 more minute.

Add in celery and mushrooms and saute for about 10 minutes or until mushrooms have wilted.

Add in spices (including ginger, if using) and water and bring to a boil.

Then let simmer, covered for 1 hour or as long as you want (the longer you leave, the better!)

Add bok choy and kale in the last 10 minutes of cooking to wilt.

Serve warm or store for up to 1 week in the refrigerator.

Just made this today.  I am recovering from a bad bout of the flu and needed something with a ton of nutrients to get me back on my game.  I did change it up a bit added some cubed sweet potato and Sambal Oelek to a miso broth.  It was amazing. I even liked the kale, which I am usually not a fan of.   Thank you!

I’ve been meal prepping for the work week and ran across this’s recipe, I added a couple of teaspoons of miso and one sweet potato. Absolutely delicious....definitely a keeper in the soup rotation

Not bad but needed another more flavor so I added cumin and some sautéed chicken breasts that I generously seasoned with salt, pepper and garlic powder. My husband added Siracha sauce to his And I also ate it with plain ramen noodles added.

Loved it! I did use 2 blocks of organic vegetable stock and only had dried shiitake mushrooms. Will definitely make it again and love the other suggestions like miso and sweet potato! Thanks for sharing - I give it 5 stars!

Immune Boosting Soup Recipe

tbsp extra virgin oil

onion,

carrots,

parsnips, chopped (can sub sweet potatoes)

celery,

garlic, minced (about 3 tbsp)

tbsp fresh ginger, minced

red lentils

parsley

tsp sea salt, more to taste

vegetable broth + 2 cup water

kale

lemon,

 Warm olive oil in a large pot or dutch oven oven medium heat. Once hot, add onion and sauté for 3 minutes.

Add carrots, parsnips, and celery and sauté for another 5 minutes. Add garlic, turmeric, and ginger and sauté for 1 minute.

Add broth, water, lentils, salt and several grinds of black pepper. Stir and bring to a boil. Reduce heat to low and simmer, covered, for 15 minutes.

Remove from heat. Stir in kale, parsley, and lemon juice. Cover and let greens steam for a few minutes. Season to taste (I did another 1/4 tsp salt) and enjoy!

This was so delicious and comforting! The parsnips give it a subtle sweetness, and it was perfect for a cozy, nutritious dinner!

I made this soup recently and it was a nice change in flavors and texture (I can officially say I’ve used parsnips before :) . I was surprised at the sweetness! My husband added red pepper flakes to his bowl and he liked it a lot. I might add 1/4 teaspoon next time and see what that does. Thanks for a great recipe!

Just made this, and wow! So yum for such a simple recipe. I used one big turnip instead of parsnip as my grocer was out of them, and I used 2 cups of vegetable stock &amp; 4 cups of chicken style stock, and it was delicious. I’ve just recovered from a cold and this is exactly what I needed

This soup was SO amazingly good. Made it when my husband was feeling sick even though soup is not our typical meal in the hot summer of NC. Used dried parsley instead of fresh and spinach instead of kale. Served with fresh French bread. Omg this is going into our rotation for sure! I just got finished making this soup, and eating it for lunch. It is very good, and satisfying. I didn’t have parsnips, so I used sweet potatoes, as suggested. In a few weeks, one of my daughters, who lives out of town, will be having surgery. Side note:  A couple members in my family contracted the coronavirus at the same time I made this soup. Unfortunately soup with vegetables is not their thing. Oh well, I ended up eating the whole pot in a matter of three days and believe me I tested negative. I will continue to make.
