Cheese Naan

This meatball curry recipe is packed with exotic Indian flavors. Juicy, tender meatballs cooked in a creamy coconut sauce that is flavored with Indian curry powder and garam masala. This simple and easy recipe gets ready in just 20 minutes

Indian Meatball Curry Recipe

lb Ground beef (or turkey)

tsp Garlic (grated)

tsp Ginger (grated)

tsp Garam masala

Paprika

tbsp Semolina (or bread crumbs)

Cilantro (chopped finely)

Pepper

Onions (chopped finely)

tbsp Garlic (minced)

tbsp Ginger (grated)

Tomato (chopped finely)

Curry powder

Yogurt or coconut cream

Lemon juice

Cooking oil

Cilantro chopped

Add all meatball ingredients in a bowl and mix well to combine.Tip - Never over mix ground meat as the meatballs will become tough

Shape the beef into small golf size balls and set aside.Tip - Dip your hands in water or smear some oil on your hands. This will make it easier to work with, otherwise, the mixture can be sticky

Prepare meatballs

In a pan or cast-iron skillet saute onions in oil until translucent

Add ginger and garlic. Cook for another 30 seconds.

Add the tomatoes, curry powder, and garam masala. Saute another 2 minutes until fragrantTip - when cooking spices you want to cook on low with a little liquid to prevent them from burning.

Add yogurt or coconut cream. Combine well. Bring to a boil then simmer for two minutes.

Next, blend the curry to a smooth sauce like a soup using a hand blender Tip - you can use a stand blender but make sure to cool the curry for a bit so you do not have any accidents. Make sure to keep a hand towel on the lid to avoid hot splashes.

Pour the mixture back into the pot. Add 1/4 cup water and bring it to a boil again.

Once the curry comes to a boil, lower the heat to a simmer and gently drop the meatballs one at a time. Shake the pan so the meatballs sink into the sauce.

Partially cover the pot and let simmer on medium-low for about 10 minutes.

Add in the lemon juice and cilantro. Taste and adjust seasoning. If necessary add a little water for gravy. Tip - the consistency of a curry depends on what you going to serve it with. I like a little gravy when I serve it with rice but I prefer it thicker when I serve it with chapati or naan

Make the curry

With hearty beef and turmeric-spiced coconut milk, this flavor-packed Instant Pot Beef Curry recipe is classic comfort food with an Indian twist. Tender bites of beef and vegetables come together in an aromatic curry adapted from the South Indian state of Kerala. This curry can also be served as a beef stew, which is how my family loves it. Make it more or less spicy by varying the quantity of green chili peppers.

Instant Pot Beef Curry with Coconut Milk | Kerala Beef Stew

Tbsp vegetable oil (for searing)

beef

onion (chopped)

garlic

Tbsp ginger (chopped finely)

jalapeno pepper

beef broth (or chicken broth)

salt (or

tsp black pepper powder (or to taste)

turmeric powder

tsp A1 steak sauce (optional)

carrots (peeled,

potatoes

coconut milk (unsweetened, regular fat (1 can))

cilantro (chopped)

Select the Saute function. Add oil to Instant Pot and working in batches, sear beef until browned on all sides, stirring frequently. Be careful not to burn. Turn off Instant Pot if it gets too hot. Remove beef with a slotted spoon and set aside.

Turn Instant Pot off and add onions, garlic, ginger, jalapenos and stir well.

Select Saute again and add 1 to 2 tablespoons of broth to deglaze Instant Pot, scraping up all the brown bits.

Saute onion mixture till golden brown, stirring often. This will take about 5 minutes. If the mixture sticks to the bottom, add a tablespoon or two of broth.

Add reserved beef, salt, black pepper, turmeric, A-1 steak sauce and saute briefly to coat the beef with spices.

Add broth and stir.

Close Instant Pot Lid and pressure cook on HIgh Pressure for 15 minutes. 

Do a quick release of pressure (QR) and open the lid.   [Read More: The Different Pressure Release Methods]

Add potatoes and carrots to Instant Pot and close the lid again.

Pressure cook for 3 minutes on high pressure and do a quick release of pressure (QR).

Add coconut milk to the Instant Pot beef curry and stir to combine. Taste and season with salt to taste.

Select Saute mode and heat through.

Turn off Instant Pot, sprinkle beef curry with cilantro and stir.  Serve with crusty bread, naan or over rice.

Beef Curry - Slow Cooked

lbs Beef ((chuck or round))

Using a sharp chef&#039;s knife and sturdy cutting board, trim excess fat and cut the beef into large bite-size cubes (about 2 inches). Set aside.Pro tip - don&#039;t cut the meat into small pieces as the slow cooking will eventually shred it.

In a pan or Dutch oven pot over medium heat saute onions in oil for about 5 to 7 minutes until lightly golden.Pro tip - the caramelized onions give this curry that depth of flavor so cook low and slow so it does not burn.

Add the ginger and garlic - saute another minute. Then add the bay leaves,, spices (curry powder, cayenne, paprika, garam masala), and 2 tbsp of water. Pr tip -the water prevents the spices from burning. But, do not add too much we still need them to cook and become aromatic

Once you can smell the wonderful spices - add the yogurt and meat. Season with salt and pepper. then add the lemon juice and make sure everything is well combined Pro tip - combine the yogurt well with the meat and cook on medium-low so it does not curdle.

Bring to a boil over medium heat.

Then, lower the heat to a simmer and cook on low for 1 to 1 1/2 hours stirring occasionally. Add 1/4 to 1/2 cup water if necessary to prevent it from sticking at the bottom.Pro tip - Depending on the cut of meat you use, it will take between 1 to 2 hours. For example, brisket takes me almost 2 hours, stew meat makes just 1 1/2 hour or less

When cooked to fork-tender, adjust gravy by adding a bit more water depending on how you going to serve it.Pro tip - If you serve it with chapati, naan, or roti - keep it thick. If you serve with rice, add a little water to make a gravy.

Stovetop Beef curry

Alternatively, transfer to a slow cooker or crockpot, and cook until the meat is fork-tenderPro tip- You can cook for 6 to 8 hours on low or for 3 to 4 hours on high. Personally, I like cooking on low so the meat is moist, juicy and fork-tender

Cut the beef into same-size small cubes. Season the beef cubes with salt, turmeric, chilli powder, garam masala, ginger, and cooking oil. Mix it well and marinate for 15 minutes.

Heat the pan to medium heat and add oil. Once the oil is hot, add cumin seeds, cinnamon, and bay leaves. Let them sizzle for a few seconds.

Next, add onions and cook until translucent. Then add the grated garlic and sauté for a few seconds until light brown. Then add the tomatoes and cook until the tomatoes are soft.

Add beef and ground spices ( chilli, turmeric, coriander powder, garam masala ). Combine everything well and cook for 1-2 minutes. Then add water and salt to taste.

Stir everything well. Bring the heat to low, close the lid and simmer for 1 hour or until the beef is tender. ( Check occasionally and add more water if necessary. )

Once the beef is tender, turn off the heat and add coriander. Transfer to a serving plate and garnish with coriander and serve with plain basmati rice, naan, or chapati.
