A simple healthy sheet pan dinner: Tandoori spiced Cauliflower, chickpeas, red onion and optional chicken breast are roasted on one sheet pan, seasoned with fragrant and flavorful tandoori spice. Vegan and Gluten free! Serve over basmati  rice with optional Green harissa yogurt sauce .

Tandoori Glory Bowl

head cauliflower, cut into florets

chickpeas, drained, rinsed, patted dry

chicken breast (optional)

½ red onion,

olive oil

salt

cracked pepper

Tandoori spice

sweet paprika

coriander

cumin

turmeric

garlic

sugar

cayenne pepper

cinnamon

Pre heat oven to 425F. If serving with rice, set it to boil on the stove. Add a cinnamon stick for added aroma. 🙂

Cut cauliflower and onion and place them along with chickpeas, on a parchment lined sheet-pan, along with the chicken breast if using.

Drizzle all with olive oil. Sprinkle everything generously with salt and pepper and generously with the tandoori spice. Give things a little toss. Drizzle a little more oil on the chicken breast to coat, rubbing it in a bit ( to prevent it from getting dry.) Place in the oven for 20 minutes. Check, toss, cook 5 more minutes if you need to. Serve over rice or grain (or go grain- free) with optional Green harissa yogurt.

I wish I could share a picture here, to show how pretty this dish is! It was a simple throw-together meal component for our Thursday supper and it was delicious!! I made my own Tandoori blend, per the directions and I made the vibrant Harissa sauce, too! It pulled it all together!  Thank you!!

Needed to use up a bunch of mint and cilantro I had leftover from my first vegan dinner party (mediterranean themed, with falafel and tabbouleh), and found the mint cilantro chutney recipe on this site.  So then I needed a main course to go with my chutney and used this one --- loved it!  So simple and delicious!  My husband took a huge serving, and then went back for seconds.  I used a whole red onion and whole (small) head of cauliflower, instead of a half of each (I have large sheet pans).  And I took a lazy short-cut with the spice mix, and just mixed 1TBL of Indian Curry Powder with 1TBL paprika (not sure if it was as good as the recommended recipe, but it was really good).  The chutney was delicious too, and paired beautifully with this dish (subbed vegan yogurt for regular, and added ahandful of unsweetened/unsulfured  coconut flakes to thicken it up a bit).  Made a pot of brown basmati rice to go with it, and followed the recommendation of including a cinnamon stick --- it was so aromatic --- lovely scents and a beautiful plate.  Thank you!

Every dish I have tried of yours has been amazing, well almost, the sour dough bread receipt took a few times to get it right, but that was on me.

So delicious! We have some picky eaters in the house, so I made coconut rice instead. It complimented the dish and was a big hit.

Fall Nourish Bowl - with roasted Curried Cauliflower, Lentils and Basmati Rice and refreshing Carrot Slaw with cilantro, scallions and a Turmeric Dressing. Vegan and Gluten Free!

Fall Nourish Bowl

dry lentils

brown basmati rice

cauliflower-

¼ onion, sliced – optional

curry powder

carrots

cilantro

scallions

baby spinach or arugula

———–

Dressing:

apple cider vinegar

maple syrup

cayenne

——–

Sprouts, sunflower or pumpkin seeds,

Cook rice and lentils according to directions, in separate pots on the stove.

Cut cauliflower into small florets. Slice onion thinly. Place on a baking sheet, toss with olive oil, salt and curry powder. Place in the oven to roast 25-30 minutes or until fork tender.

Grate carrot and toss with cilantro &amp; scallions.

Stir dressing ingredients together in a bowl.

When lentils are done, add cumin and coriander season with salt and drizzle of olive oil. Season rice with salt and pepper.

Assemble Bowls: Divide warm lentils, rice and cauliflower. Add spinach. Top with slaw and optional sprouts.Spoon Dressing over top. Add sprouts or seeds.

I just discovered this recipe recently and have made it several times. Sometimes I replace the lentils with quinoa for my son who prefers it over lentils. We both love it and it has made us fans of nourish bowl eating! Thank you for sharing :)

Like Bibimbap, but for Indian food! We are trying to be more vegetarian because we are not getting any younger and this dish doesn't make me feel like something is missing. This dish was a huge hit and will be a regular weekly meal! Thank you and looking forward to trying more recipes.

I love that your bowl recipes make it easy to put dinner together after a long day at work. This was simple - I didn’t have quite the delicate carrot shreds, but it tasted great still and felt like I was making good choices on a day that I day dreamed of french fries multiple times.

I was apprehensive on how my family would take this--they eat vegetarian because I cook it, but don't hesitate to eat meat. 3 out of four of us enjoyed this meal, one is veryyyy picky. I have to practice my lentil cooking, my local lentils don't come with instructions. Also, I had to quadruple the dressing for everyone because we are apparently heavy-handed with it. Overall, we enjoyed it and will make it again!

I was not expecting a lot from this recipe, since it looked so healthy. But it was GREAT! Exactly what I needed after a lot of weekend junk food. I skipped the lentils and roasted some chickpeas with the cauliflower instead. Super easy, healthy, flavorful, satisfying, refreshing, and cleansing. Will definitely make regularly!
