Mom’s authentic Chicken Curry made in a simple onion-tomato gravy with the aroma of whole spices.

Mom's Chicken Curry - Instant Pot Pressure Cooker

Chicken (boneless,

tbsp Ghee

Green Chili Pepper (small, chopped (optional))

inch Ginger (finely chopped)

Garlic (finely chopped)

Onion (medium sized, finely chopped)

Tomato (medium sized, finely chopped)

Water

Lemon juice

Cilantro (to garnish)

Black Cardamom (Moti Elaichi)

Bay leaf (Tej Patta)

Cloves (Laung)

Black Peppercorns

tsp Cumin seeds (Jeera)

Coriander powder (Dhaniya powder)

tsp Kashmiri red chili powder

tsp Garam masala

tsp Ground Turmeric (Haldi powder)

Salt

Cut the boneless chicken into small pieces, about 1-2 inch in size.

Heat the instant pot in Sauté mode and add oil to it.  Add the whole spices and sauté for 30 seconds to get the aroma.

Add the chopped green chili, onions, ginger and garlic to the pot and sauté for 4 minutes until they turn golden brown.  Keep stirring at regular intervals.

Add the chopped tomatoes and spices.  Sauté for another 4 minutes, while stirring at regular intervals.

Add the chicken and sauté for 3-4 minutes. Do not skip this step, as it adds lots of flavor to the curry.

Then add the water and stir it with the chicken. Deglaze and scrape off anything stuck to the bottom of the pot. 

Change the instant pot setting to manual/pressure cook mode on high for 5 minutes.

When the instant pot beeps, quick release the pressure manually.  Stir in the lemon juice.

Garnish with cilantro and chicken curry is ready to serve.

Instant Pot Chicken Curry

In less than 30 minutes, reproduce an authentic restaurant quality Punjabi Chicken Karahi at home. This low carb Keto chicken recipe is a breeze to make and is also an Instant Pot Gem recipe that you can also make on the stovetop in a wide pan or wok.

Chicken Karahi

Ginger ((diced) No really, 2 WHOLE Tablespoons of it

Jalapeño Peppers (or serrano pepper, minced)

chicken

tomatoes (chopped)

Turmeric

Garam Masala

Cilantro (chopped)

Lemon Juice

Heat your Instant Pot Gem on sear/Sauté to 400F or on the stovetop, heat a nonstick 10-inch pan and when it's hot, add in the oil. You want a wide saucepan.

To the hot oil, add the ginger and jalapeÃ±os.

Note that I cut the ginger quite small. I made coins, then I made matchsticks, then I cut the dice. You want to do this so you don't get a huge chunk of ginger in any one bite.

Add the chicken and let the chicken sear on one side and then flip over.

Add in tomatoes and stir well.

Add all the spices and stir.

Now, you're going to cook this lovely, fragrant mixture until it is all well cooked. Do NOT add water. Do NOT cover.

Stir once in a while. This is the point you'll be happy you listened to me and used a nonstick pan or the Gem.

As the chicken and tomatoes cook, you're going to see the water evaporating, the tomatoes caramelizing and mushing up--and most importantly, the oil separating.

Some of this oil is what you added, some of it is what's being rendered out of any fat that was on the chicken.

By the time the water has mostly or completely evaporated, your chicken will be done. Verify this with a meat thermometer so it is at 165F.

Add all the finishing ingredients and have at it!

Pakistani Chicken Karahi

This authentic Indian Instant Pot chicken curry is a delicious family recipe. Made with bone-in chicken thighs and/or drumsticks, the curry chicken is tended and bursting with flavor.  Now you can skip takeout and make this easy Instant Pot chicken curry recipe at home. bay leaf (large)

cinnamon stick

tsp cumin seeds

onions (chopped fine)

garlic

Tbsp ginger (minced)

tomato paste

coriander powder

turmeric powder

tsp black pepper powder

tsp Kashmiri chili powder

chicken broth (or water)

tsp garam masala

cashew butter

cilantro (chopped)

In Saute mode, melt ghee or butter. Add cinnamon, cumin seeds and bay leaf and stir till fragrant, being careful not to burn.  

Add onions, garlic and ginger, and saute till deep golden brown, about 7 to 12 minutes.  If you find the onions beginning to burn, deglaze with a teaspoon or two of broth.

Mix tomato paste with 2 tablespoons of water and add to the onions.

Saute until the tomato paste is cooked, about 3 minutes. You should notice that the oil starts to separate from the tomato.  If it sticks to the bottom, add another tablespoon or two of water.

Press Cancel to turn off Instant Pot.  Otherwise, spices can burn when you add them.

Add coriander, turmeric, black pepper, chili powder, salt and stir till fragrant.

Add the chicken pieces and stir to coat with the spice mixture.  Make sure there&#039;s nothing stuck on the bottom of the inner pot.

Add 1/2 cup chicken broth or water.

Close the lid and Pressure Cook on High Pressure for 9 minutes.

Do a Quick Release of pressure.   [Read More: The Different Pressure Release Methods].

Open the lid and carefully stir in the cubed potatoes and garam masala.

Close the lid and Pressure Cook on High Pressure for 6 minutes.

Do a Quick Release of pressure.  Press Cancel.

Open the lid and add cashew paste, stir the chicken curry and heat through in Saute mode, until thickened.  Stir occasionally to make sure nothing sticks to the bottom.

Press Cancel, sprinkle chicken curry with cilantro and serve with Instant Pot basmati rice, bread or naan.

Instant Pot Indian Chicken Curry

Cut the chicken into medium size pieces and marinade with salt, turmeric, paprika, and garam masala. Mix it well and set aside.

Heat the pan into medium heat, add 3-4 tablespoons of ghee and saute the cumin seeds and bay leaves for few seconds.

Add with the chopped shallots until translucent, follow with the garlic and ginger paste.

Fry until light brown then add salt, tomato puree and spices. Stir for few seconds and add the chicken pieces, cook for 1-2 minutes. Pour the warm water in, stir well, and cook with low heat for 8-10 minutes until the meat is soft and tender. ( Add a bit more warm water if the gravy is too thick. )

Turn off the heat, sprinkle chopped fresh chilli and transfer to serving plate.

Serve with cooked basmati rice, naan, chapati or flatbread. Garnish with chopped coriander or fresh lime wedges.

Easy Butter Chicken Recipe

17.5 oz Boneless chicken thigh (or breast)

Unsalted Butter

tbsp Oil ((for grilling chicken))

tsp Dry fenugreek leaves (Kasuri Methi

coriander (chopped

Cup Water ((add more water if needed))

½ tsp Ginger paste

Garlic paste

Paprika powder

Turmeric powder

½ tsp Garam masala

tbsp Plain yogurt

shallots

Ginger paste

Tomato puree ((plain, un-salted, unflavoured)

Heavy cream

tbsp Cashew nut paste

basmati rice

First of all cut the chicken into medium bite-size pieces. Marinate the chicken with the ingredients from the chicken marinade list. Mix well to coat the each chicken pieces evenly. Set aside and marinate for 15 minutes. ( If you have time, you can marinate for longer. )

In the meantime, finely chop the shallots, garlic cloves and coriander.

Heat the grill pan/skillet over medium-high heat, drizzle 1 tablespoon of oil and grill the marinated chicken pieces 1-2 minutes until it gets the nice golden colour, then turn sides and cook for another 1-2 minutes. Remove from pan and set aside.

To cook the butter sauce, add 3 tablespoon of unsalted butter in the pan, fry the chopped shallots with medium heat until brown. Then add the garlic paste, onion paste and stir fry few seconds.

Follow with the tomato puree, turmeric, paprika, garam masala and salt to taste. Stir for few seconds.

Pour the water, cream and cashew nut paste in and cook for another 1 minute.

Place the cooked chicken back in and stir well to combine with the sauce. Add more water if needed.

Close the lid and cook for another 2-3 minutes. Sprinkle the dried fenugreek leaves  and chopped coriander.

Remove from heat and transfer to serving plate.

Serve with cooked basmati rice, naan or flat bread. Enjoy!

A luscious chicken and mushroom curry that will have you at hello! Bone-in chicken is simmered in a smooth cashew sauce and topped with fried button mushrooms. There&#039;s plenty of curry to sop up with bread or serve over a bed of steamy rice, whichever you prefer. Guaranteed to satisfy that curry craving!

Chicken and Mushroom Curry

red onions (medium)

garlic (cloves)

cashews

yogurt

tomato puree

tsp sea salt

tsp red chilli powder

tsp garam masala powder

lbs chicken (skinless, bone-in)

Chop the onions in thick pieces and put in a blender with a few tablespoons water. Blend until you get a smooth puree. Keep aside.

Soak whole, raw cashews in a bowl of water for 15 minutes. Peel the garlic. Put the cashews and garlic along with a few tablespoons of the soaking water in a blender and blend until smooth.

In a bowl, add the cashew-garlic puree, yogurt, tomato puree, salt, red chilli powder, and garam masala. Whisk with a fork until you get a smooth mixture.

Preparation

Heat the cooking oil in a dutch oven or large pot and add the ground onions. Cook on medium heat for 10 minutes or until most of the liquid has evaporated and the onions turn slightly brown.

Add the mixture you made in step 3 of prep and cook for 10 minutes on medium heat. Don&#39;t add water. You can cover the pot with a lid and reduce the heat if it splatters too much.

Add the chicken, mix well and cover the pot with a lid. Cook for 30 minutes on low to medium heat. You won&#39;t need to add any water, but if you see that the liquid is getting less, add about ¼ cup water halfway through the cooking.

While the chicken is cooking, clean the mushrooms and slice into halves. Add 2 tablespoons oil to a small frypan. When hot, add the sliced mushrooms and fry for 3-4 minutes. They should be cooked through with crisp brown edges.

Once the chicken is tender and the oil has separated, top the curry with the fried mushrooms, and serve hot.
