Instant Pot Brisket

Mix rub ingredients together.

Add oil and garlic to Instant Pot and saute using the saute setting for 2-3 minutes.

Rub brisket on both sides with rub mixture.&nbsp; Cut brisket in half so it lays flat in the Instant Pot.

Pour beef broth into the Instant Pot, around the meat so you don't wash off the rub.

Put on the lid and cook on meat/stew setting for 90 minutes.&nbsp; Do a 10 minute natural release and then a quick release.

Remove meat and place on a cutting board.&nbsp; Slice meat going against the grain.

Dry Rub Brisket: In a glass mixing bowl, mix dry rub ingredients together. Rub the dry rub mixture on the brisket, then let it marinate for at least 2 hours (preferably overnight, so the salt can penetrate into the meat).

Pressure Cook Beef Brisket: Add sliced onion, minced garlic, 1 tbsp (15ml) maple syrup, 1 tbsp (15ml) honey, 2 tbsp (30ml) apple cider vinegar, 3 - 5 drops liquid smoke, and ½ cup (125ml) unsalted chicken stock to Instant Pot. Mix well. Add marinated brisket in Instant Pot. Pressure Cook at High Pressure for 75 minute and Natural Release for 15 minutes. Remove the lid carefully.

Thicken Homemade BBQ Sauce: Carefully place cooked brisket on a chopping board and let it rest.&nbsp;If desired, use a fat separator to remove the oil from the BBQ sauce.&nbsp;Bring the BBQ sauce back to a simmer by pressing the "Cancel" button, then "Saute" button. Mix in 1 cup (250ml) ketchup, 2 tbsp (30g) Dijon mustard, and 1 tbsp (13g) brown sugar in Instant Pot. Let the BBQ sauce thicken by simmering for 8 - 15 minutes. Stir occasionally. Taste and adjust the seasoning with more salt if necessary.

In a small bowl, mix all the rub ingredients.

Season the brisket all over with the rub. If you have time, let it sit in the refrigerator wrapped in plastic for up to 24 hours.

In a medium bowl, mix all the BBQ sauce ingredients.

Turn the instant pot/pressure cooker to "saute". Add the oil and allow it to get hot. Add the brisket to the pot and sear both sides for about 4-5 minutes or until golden brown. Remove the brisket from the pot and place it in a bowl or plate. Add the garlic and cook for about 1 minute, making sure the garlic doesn't burn.

Press the keep warm/cancel button on the instant pot. Add the broth and with a wooden spoon or spatula scrape the bottom of the pot to remove some of the bits stuck at the bottom of the pot. Add the BBQ sauce. Return the brisket to the pot with any collected juices. Toss well making sure the meat is well coated. Close the lid. Once the cooking cycle is complete, allow the pressure to release naturally for about 10 minutes. Then do a quick release for the remaining pressure.

Transfer the brisket to a cutting board. Cover with aluminum foil and let the meat rest for about 10 -15 minutes.

Turn the instant pot/pressure cooker to "saute" and cook/reduce the sauce for 5 to 8 minutes, stirring a few times. Press the warm/cancel button.

Slice the beef brisket against the grain and serve with the BBQ sauce. You can also return the sliced brisket to the instant pot making sure the slices are covered with the sauce (to prevent the meat from drying). Keep it warm until ready to serve.

I like to keep the cap of fat on the brisket. I do not trim it because it helps add flavor to the beef. You can trim it if you wish.

Drizzle 2 teaspoons of Liquid Smoke over the brisket, about a teaspoon for each side. Sprinkle the BBQ rub, salt, and pepper throughout. Pat down on the rub so that it penetrates the meat.

I like to cover and seal the brisket and marinate it in the refrigerator. Marinate for 2 hours to overnight, optional, but recommended.

Add the sliced onions, garlic, broth, Liquid Smoke, and soy sauce to the pot.

Place the brisket in the pot with the fat cap side facing up.

Close the pot and seal. Cook for 1 hour and 15 minutes on Manual &gt; High-Pressure Cooking. Ensure the pressure is on &quot;Normal&quot; mode if you plan to slice the brisket along the grain and serve it in slices. Place the pressure on &quot;More&quot; mode if you plan to shred the brisket. I use the Instant Pot Duo.

When the pot indicates it has finished, allow the steam to release from the pot naturally for 15 minutes before opening.

Open the pot and remove the brisket. Allow the meat to rest for 10 minutes before slicing.

BBQ Beef Brisket Tacos Recipe

½ pound Beef Brisket

bbq sauce (divided)

water

salsa verde

tortillas (flour or white corn)

smoked paprika

unprepared coleslaw

cilantro

honey

juice of 1 lime (about 1 tablespoon)

salt and pepper (to taste)

Stir together seasoning rub. Rub all over Brisket.

Set pressure cooker to SEAR (see note for alternate cooking methods). Drizzle oil into instant pot. Brown Brisket on all sides (about 3-4 minutes on each side). Remove from pot.

Add 1 cup bbq sauce and water to pressure cooker, return Brisket to the pot. Cover and turn the vent to the SEALED position. Set to PRESSURE COOK (high) or MANUAL for 45 minutes. (Prepare slaw while Brisket is cooking)

Turn valve to VENT position. Once float valve drops, remove lid. Transfer Brisket to a cutting board, use a sharp knife to chop brisket into 1-inch chunks.

Prepare the Brisket

Toss together slaw and cilantro. Stir together mayo, honey, lime juice, and salt and pepper. Toss dressing and slaw. Taste, add salt and pepper if needed, cover and chill until ready to use.

Mix all of the rub ingredients together in a small bowl. Season the brisket generously on all sides with the rub, pressing it in with your fingers until it is completely coated. Unless you have an extra large brisket, you will have left over rub to save for another use. Wrap the brisket tightly with plastic wrap and refrigerate for 8-12 hours.

When you are ready to cook the brisket, cut it in half to fit in your pressure cooker properly. Add 1 cup of water to the pot and place the trivet in the bottom. Place 1 piece of meat, fat facing up, on the trivet then place the second piece on top of it with the fat facing up. Pressure cook on hight for 75 minutes using natural pressure release.

Carefully remove the brisket when finished cooking and place on to a baking sheet lined with heavy duty foil. Brush with your favorite BBQ sauce and put it under the broiler on high to caramelize a bit - don't walk away!  Turn over and do the same to the other side. You can do this twice for extra caramelization if you want. Another option is to put your BBQ sauce on and put it on the grill for a few minutes. Let rest for about 10 minutes then slice carefully against the grain.
