Cabbage Soup Diet Recipe

olive oil

yellow onion

bell peppers (chopped (any color))

celery (chopped)

garlic

tomatoes (chopped)

broccoli slaw (optional)

green cabbage head (chopped)

low-sodium broth (chicken or vegetable broth)

tomato paste

tsp black pepper

tbsp turmeric

baby spinach

lemon (juiced)

salt (to taste)

Instant Pot Cabbage Soup: 1) To make the detox cabbage soup in the pressure cooker, press the saute function. Heat oil and cook onion, bell pepper, and celery for about 5 minutes, or until softened. Stir every now and then. Add garlic and cook for 1 minute. Add tomato, broccoli slaw, cabbage, broth, tomato paste, pepper, and turmeric. Stir and secure lid. 2) Set on high for 15 minutes, or press the soup function and set for 15 minutes. Allow natural release, about 20 minutes.   Remove lid and stir in spinach and lemon juice.  Stir in salt but do not go overboard.   

Slow Cooker Cabbage Soup: 1) Heat a large nonstick skillet over medium heat, add oil and cook onion, bell pepper, and celery for about 5 minutes, or until softened. Stir every now and then.  Add garlic and cook for 1 minute. Transfer to the slow cooker. 2) Stir in all the other ingredients for the cabbage soup diet recipe, except spinach, lemon juice, and salt. Secure lid and cook for 2-4 hours on high, or 8-10 hours on low. Remove lid and stir in spinach and lemon juice.  Stir in salt but go easy.

Cabbage Soup on the Stovetop: 1) Heat a large nonstick pot or dutch oven over medium heat, add oil and cook onion, bell pepper, and celery for about 5 minutes, or until softened. Stir every now and then. Add garlic and cook for 1 minute. 2) Stir in all the other ingredients, except spinach, lemon juice, and salt. Increase heat to medium-high and bring to a boil. Reduce heat to medium-low, stir, cover, and let simmer for 30 minutes, or until veggies are tender. Remove lid and stir in spinach and lemon juice.  Stir in just enough salt to taste.

I love the way cabbage gets meltingly tender in soup and this Instant Pot Low-Carb Ham and Cabbage soup is such a winner!

Instant Pot Ham and Cabbage Soup

head cabbage, chopped (about 5-6 cups cabbage after chopping)

onion

red bell pepper, finely chopped

carrots,

bay leaves (optional but good)

tsp. Spike Seasoning (or use other all-purpose seasoning mix if you don’t have Spike)

granulated garlic

T dried parsley

tsp. Beau Monde Seasoning

black pepper

chicken stock (see notes)

Chop cabbage, onion, red bell pepper, ham, and...

Put cabbage, onion, and red bell pepper in the bottom of the Instant Pot. Add the chopped ham, carrots, and bay leaves, and sprinkle the Spike Seasoning, granulated garlic, dried parsley, Beau Monde Seasoning, and black pepper over the top.

This soup can be eaten immediately, but like most soup, it has even more flavor the next day. The bright acidity of the tomatoes mellows and the overall flavor becomes richer. Plan to enjoy this big pot of soup over several days, or put some away in the freezer.

Instant Pot White Bean, Cabbage &amp; Tomato Soup

oil oil

small onion, finely chopped (about 1 cup)

garlic,

tomatoes

water

pre-shredded cabbage

white beans

parsley,

Combine the oil, onion, carrot and garlic in the Instant Pot.

Saute  the veggies until the onion is soft and lightly browned, 5 to 8 minutes, stirring occasionally. I like to saute on "normal" heat so that the onion doesn't burn. To adjust the heat level, press the Saute button on the Instant Pot, then adjust the heat by pressing the “adjust” button until the red light is under “normal.” 

Add tomatoes, water, cabbage, the entire cans of white beans (don't drain them), salt and parsley.

Stir well, then lock the lid, making sure the release valve is set on “sealing."

Program the Instant Pot to cook for 5 minutes on high pressure.  

Let the pressure release naturally for at least 10 minutes.  

Stir the soup. You'll probably need to add more salt to taste. Don't be shy about adding salt! Garnish with fresh parsley.

Excellent!  I added pinto beans (only type I had)  , chicken stock and beef bullion, and some shredded chicken breast after it had cooked in IP at 12 minutes. This is a keeper. Delicious!

I make this at least once a week. Very delicious and so healthy too! If you're avoiding salt, it is flavorful enough that it really doesn't need any!

This was so freaking good. I always have had bad experiences making cabbage soups. The only thing I changed was I added a lot of crushed red pepper. Oh, and I used dry beans that I soaked overnight and simmered for an hour so they would be a little under since they would be going in the instant pot. I’m excited for leftovers tomorrow.

Instant Pot Lentil Cabbage Soup (Vegan)

cooking oil,

onion,

smoked paprika

red pepper flakes

cayenne pepper

"chicken" bouillon powder (tap

(28 oz) can fire-roasted diced tomatoes

dry green lentils,

head green cabbage, cored and chopped (I like

fine sea salt

soy sauce

white wine vinegar or apple cider vinegar

liquid smoke, optional

vegan butter, optional (I prefer Miyoko's brand.)

Preheat

Turn on the Instant Pot sauté function, and add the oil. Cook the onion for 2 to 3 minutes, stirring frequently (if not using oil, add a splash of water as needed).

Saute

Add the carrots and garlic, and cook for about 30 seconds, stirring frequently so the garlic doesn&#39;t burn. Add the smoked paprika, red pepper flakes, and cayenne, and stir. Press cancel to turn off the sauté function.

Add ingredients

Add the bouillon powder, tomatoes (with the juice), water, lentils, cabbage, salt and pepper. Stir very well, making sure all of the ingredients are thoroughly combined. Use the spoon to lightly press the cabbage into the liquids, making sure everything is below the Instant Pot&#39;s max fill line.

Cook

Secure the Instant Pot lid and set to sealing. Cook on high pressure for 10 minutes. The Instant Pot will take almost 20 minutes to come to pressure, then the 10 minute timer will begin. When the Instant Pot beeps and the cook time is complete, carefully flip the valve to manually release the pressure (this is sometimes called &quot;quick release&quot;). Because of the large volume of liquid this may take about 10 minutes.

Season

Once the pressure button has dropped, carefully remove the Instant Pot lid. Stir in the soy sauce, liquid smoke, vinegar, and vegan butter, if using.

Serve

Let the soup cool for a few minutes. Taste and adjust seasonings as desired.

Instant Pot Instructions:

Heat the oil in a large soup pot over medium heat. Add the onion and cook for 5 minutes until fragrant and translucent. Add carrot and garlic and cook for 1 minute, stirring frequently. 

Stir in the smoked paprika, red pepper flakes, and cayenne. Immediately add the bouillon powder, tomatoes (with the juice), water, lentils, cabbage, salt and pepper. 

Cover and bring to a boil. Reduce heat to medium-low and simmer for about 30 minutes or until the lentils are tender.

Add the tamari, vinegar, liquid smoke, and vegan butter, if using. Let cool for a few minutes, then taste and adjust seasonings.

Stovetop Instructions:

Lori, this soup is delicious. It's easy to make quick and made a lot. I just would like a little more broth next time, but I think I added too much cabbage. Thank you, thank you, thank you!

I followed this recipe (almost) exactly. I only put in a pinch of red pepper flakes—we don’t like “hot,” and even a pinch was too spicy for us. Next time, I won’t use any. I had Napa cabbage on hand from the Farmers Market and it worked nicely. Soup was hearty and healthy. Will definitely make again! Oh! And making it in my InstantPot was so much fun! Easy peasy, and QUICK!

I made this lentil cabbage soup recently and we all loved it. I love cabbage. Period. But paired with all the other ingredients, it made it that much better. Adding lentils was such a great idea. The soup is really good as written, but I kept wishing I had added a couple potatoes.

I made this yesterday as I had some cabbage that needed to be used.  It was delicious!  I'm not one to like dishes that are overly spicy, but this was just right--  a little bit of kick without being overwhelming. I will definitely be making this again.

Wonderful soup!!!  I made it tonight for the second time this month!  Comes together very easily.

Made this for dinner tonight. Husband is going back for his second helping. It is marvelous just as written. Hubby did heat up leftover rice and put it on the bottom of his bowl which he normally does with soups. The flavors are wonderful and I’ll be making it often this winter.

I made a variation of this soup tonight. It was very delicious! I had some precooked lentils left over from making casseroles and soup last week. It was just the right amount. I omitted the cayenne and crushed red pepper flakes as I didn't feel like spicy tonight. I did use the smoked paprika. I omitted the oil and the vegan butter. I only had 1/3 of a very dense small cabbage, but I decided that was enough. Otherwise I made it just like the recipe, stovetop version. I added the lentils about halfway through the cooking of the vegetables, since they were precooked. It was very tasty! I'll be making this again and again. I loved the smoky taste created by the roasted tomatoes, smoked paprika, white wine vinegar, and liquid smoke.
