If you grew up in the Philadelphia area, you know what Irish Potato Candy is. You eat these little cinnamon coated coconut cream treats on St. Patrick's Day.

Irish Potatoes

butter

brick of cream cheese

vanilla

confectioners sugar

coconut

cinnamon

Beat together butter and cream cheese.

Slowly add the confectioners sugar.

Add the vanilla.

Add the coconut and mix until combined.

You may want to chill the coconut mixture...

You may want to chill the coconut mixture a little before you roll them. I like to use a small ice cream scoop. These are really rich, so you want them to be small.

Roll the coconut mixture into a ball.

Roll the coconut mixture into the cinnamon and...

Roll the coconut mixture into the cinnamon and put on a parchment lined baking sheet.

Keep the Irish Potatoes in the fridge.

Irish potatoes may sound like a savory side dish but actually, there are no potatoes at all in this traditional Irish dessert! Potato candy are little bites of sweetened cream cheese and coconut, dusted with cinnamon. They are delicious and incredibly easy to make.

Irish Potatoes - Potato Candy Recipe

 Irish Potato Candy is a traditional potato candy. Cream cheese, shredded coconut and more come together to create this old fashioned potato candy that is so addictive.

Irish Potato Candy

oz cream cheese (softened)

C sugar

½ C shredded coconut

tsp pure vanilla extract

½ C light brown sugar

Using a hand mixer, cream together the butter and cream cheese until combined and smooth. Make sure to use softened cream cheese. 

Beat in the vanilla until combined then gradually mix in the powdered sugar on low. 

Next you will fold in the shredded coconut and mix until it is just combined. 

Cover with foil and place into the fridge for 1 hour to allow the mixture to set up. 

Line the cookie sheet with parchment paper. 

Using a tablespoon, scoop out some of the mixture and roll it into a mis haped ball

Set onto the cookie sheet. Repeat step until all of the potato candies are rolled into a ball

In a medium bowl, whisk together the brown sugar and cinnamon.

Coat each dough ball in the brown sugar mixture.

Place homemade potato candy onto a  serving tray. Then serve up and Enjoy!
