A refreshing Middle Eastern chopped salad, called Israeli Salad, that is healthy, vegan and gluten-free. Clean flavors, plant-based, detoxing, and perfect for summer! Best made when tomatoes are in season!

Israeli Salad Recipe

extra large tomatoes, finely diced

cucumber,

red bell pepper, finely diced

yellow bell pepper, finely diced

herbs (Italian parsley, mint

lemon

Lemon juice (start with ½ a lemon, add more to taste)

olive oil

Salt and pepper,

Chop the first 6 ingredients into a very small fine dice. The smaller, the better. Take your time with this and a sharp knife really makes this easier!

Place in a large bowl and toss with the lemon zest, olive oil, lemon juice, salt, pepper.

Taste and adjust lemon and salt to your liking.

Definitely needs more lemon if you're using small lemons. Was very good with mint. I think I'd add another cucumber next time around. Very good! Don't skimp on the salt and pepper.

Simple Israeli Salad Round 2 – V2

I spent a semester of my college career in Tel Aviv and developed a strong taste for Israeli salad, which more correctly traces its roots to a Palestinian origin. The combo is a simple mix of diced fresh vegetables, lemon, juice, and oil.

roma tomatoes, seeded and diced (about 3/4 cup)

English cucumber, diced (about 2 cups)

red pepper, diced (about 1/2 cup)

red onion, diced (about 1/2 cup)

flat-leaf parsley

za’atar

Kosher salt,

black pepper,

In a large bowl, mix together tomatoes, cucumber, red pepper, onion, and parsley.

Add oil, lemon juice, and za’atar and toss to combine. Season with salt and pepper to taste. Serve immediately.

This Israeli salad is a refreshing blend of chopped cucumbers, tomatoes, onions and peppers, all tossed in a lemon dressing. A colorful side dish that pairs well with chicken and fish!

Place the cucumber, tomato, onion, bell peppers, parsley and mint (if using) in a large bowl.

In a small bowl, whisk together the olive oil, lemon juice, salt and pepper.

Pour the dressing over the vegetables and toss to coat evenly.

Serve immediately, or cover and refrigerate for up to 2 days. I recommend serving this salad right away.
