Easy Borlotti Bean Salad

dried borlotti beans ((225 grams))

celery

onion

tuna

salt

olive oil ((40 grams))

bean juice (more beans

The dried beans have to be soaked for at least 8 hours, so the night before soak beans in a large bowl of water, (then after the 8 hours drain and rinse).

In a medium pot add the drained beans and cover with an inch (2 1/2 cm) of water. Cover and cook on medium/high heat until boiling, once boiling half uncover and continue to cook until tender, approximately 50 minutes (might need to go longer so taste a bean after 40 minutes and then again after 10 minutes, until cooked to desired tenderness). With a slotted spoon remove cooked beans from the pot leaving the bean juice.

In a medium bowl, add chopped onion, celery, and flaked tuna, toss gently to combine, then add cooked beans, salt, oil and bean juice, again toss gently to combine. Serve immediately or at room temperature. Buon Appetito!

Healthy Tuscan Bean Salad

chickpeas

can, navy beans (drained and rinsed)

barley (cooked according to package directions)

pepper,

red pepper,

tomato,

sun dried tomatoes, chopped

green onions (finely diced)

garlic,

Tablespoons skinny basil pesto (or store-bought pesto)

Tablespoons canola oIl

Tablespoons white wine vinegar

Tablespoons lemon juice, fresh

salt and ground black pepper,

In a small mason jar, combine the Skinny Basil Pesto (or store made pesto), canola oil, white wine vinegar, lemon juice, salt and pepper, to taste.&nbsp;

Place cover on mason jar and shake well, to combine all ingredients.&nbsp;

&nbsp; Check the seasoning and adjust, if necessary. Set aside.

Tuscan Salad Dressing

In a large mixing bowl, combine the chickpeas, navy beans, cooked barley, green peppers, red peppers, diced tomato, sun-dried tomatoes, and green onions. Season with ground black pepper.

Toss the bean salad with the Tuscan Dressing, recipe above.&nbsp;

Taste for seasoning, adjust if necessary.&nbsp;

Chill salad for a few hours or overnight to blend the flavors. Serve as a side dish or as an appetizer with tortilla or pita chips
