Italian Chicken Skewers are an easy, delicious, and flavorful grilled chicken dinner made with juicy chicken bites smothered in a herby tomato marinade.

Italian Chicken Skewers

teaspoon salt

teaspoon ground black pepper

cloves garlic

parsley,

cup tomato paste

balsamic vinegar

vegetable oil

Cut the chicken breasts into 1-inch thick pieces and season with salt and pepper. Set aside in a large mixing bowl or Ziploc bag.

In a food processor or blender, add onion, garlic, parsley, tomato paste, balsamic vinegar, and oil and puree for 1 minute until smooth. Pour in the mixture over the chicken. Toss well until evenly coated. Cover the bowl with plastic cling wrap and refrigerate for at least 1 hour (or overnight for the best results).

Thread 6-8 marinated cubed chicken breasts onto each skewer. I used bamboo skewers.

Marinate the chicken:

Preheat grill over medium high heat until hot, about 2-3 minutes.

Place the skewers evenly apart on the grill and grill for 5-7 minutes on each side until the edges are nicely charred. The internal temperature for the chicken should reach 165 F as read on a meat thermometer. Do not overlap the skewers at any time to ensure even cooking. You can also cook them on a preheated grill pan for 8-10 minutes per side.

To grill the chicken:

Place the threaded chicken skewers spaced evenly apart on a parchment lined half sheet baking pan or on a lightly oiled wire rack in a baking pan.

Bake for 15 minutes until golden brown and the internal temperature for the chicken reaches 165 F.

Turn on the broil function on the oven on HI and broil for 2-3 minutes until nicely charred on the edges. Let it rest at room temperature for 5 minutes and serve.

Chicken Spiedini - Italian Chicken Skewers

If using wooden skewers, soak them in a tray of water for 30 minutes.

Cut the chicken into 1 inch cubed pieces and add to a bowl.

Add all the herbs, zest, olive oil and a good pinch of salt and pepper. Stir until thoroughly combined. You can use the chicken immediately or place in the fridge to marinate until you&#x27;re ready.

Heat the broiler (grill) to high. Thread the chicken onto the wooden skewers evenly and place on a baking tray.

Place the chicken on a high shelf under the broiler and cook for 5 minutes, turn the skewers and cook for another 5 minutes until browned and cooked through.

Serve the chicken skewers on plate with a squeeze of lemon juice and some grilled veggies.

Keto Italian Chicken Skewers are incredibly easy to make, require only a few ingredients, are healthy and full of flavor.

Keto Italian Chicken Skewers

extra virgin olive oil (plus extra for cooking)

buttermilk

Italian seasoning herbs mix

parsley chopped

garlic (minced)

salt

black pepper

Clean chicken by running it under cold water, pat dry with paper towels. Cut and discard any fat pieces.

Cut chicken into 3 inch cubes and add to a large ziplock bag.

In a medium bowl mix the rest of the ingredients: olive oil, buttermilk, Italian seasoning, parsley, garlic, lemon juice, lemon zest, salt and pepper. Whisk until fully combined. Pour the mixture on top of the chicken.

Close the ziplock bag, shake to coat the chicken evenly in the marinade and refrigerate for at least one hour or overnight. Preferably, shake and toss the chicken during this period a few times, so it marinates evenly.

For outdoor grilling, heat the grill until hot and spray it with cooking oil. For indoor cooking, place a cast iron grill pan oven medium-high heat and add to it about 2 tablespoons of olive oil.

If desired, arrange the chicken pieces on wooden skewers. Grill for 3-4 minutes on each side, or until the chicken is no longer pink in the middle.

Serve with a salad, lemon and your favorite dressing for dipping.

Hi all! Lots of comments about thinking of making, however made this yesterday for dinner tonight. I chose the 24hour marinade path. I was a little concerned with the lemon juice in buttermilk. That being said this was really good served with tzatziki  sauce . I do recommend!
