This dessert is a hit no matter which event I bring it to. Studded with walnuts, the rich coffee-flavoured condensed milk cake is like a cross between a fruit cake and a sticky date pudding. What’s not to love?


Coffee Walnut Condensed Milk Fruit Cake recipe

pitted dates, chopped

mixed dried fruit

espresso powder

tin condensed milk

eggs

375.00 ml self raising flour

walnuts

Step 1

Preheat oven to 140C conventional. Grease a 20cm round springform cake tin and line the base and sides with two layers of baking paper.

Step 2

Place dates and dried fruit in a saucepan with 2 1/2 cups water and espresso powder. Bring to the boil then reduce heat and simmer for 4 minutes. Transfer to a large mixing bowl and allow to cool slightly.

Step 3

Stir condensed milk and eggs into the boiled fruit mixture. Fold through flour and walnuts. Pour into prepared cake tin and bake for 1 3/4 hours until a skewer inserted into the centre comes out clean. Cool in the tin.

In Australia, we are certifiably obsessed with slices. We’ve come up with so many delicious square-shaped desserts. So, let me introduce you to my favourite slice option: the caramel coffee slice. You won’t be able to stop at just one piece!


Caramel Coffee Slice recipe

Choc Ripple biscuits

butter, chopped

brown sugar

golden syrup

tins condensed milk

62.50 ml strong espresso

Whipped cream, to serve

Preheat oven to 180C conventional. Grease an 18cm x 25cm slice tin and line it with a piece of baking paper.

In a food processor, blitz biscuits into a fine crumb. Melt 100g butter and add to food processor. Blitz to combine. Pour into prepared to tin and press down into a firm even layer. Refrigerate while you prepare the filling.

Melt remaining butter in a medium saucepan. Stir in brown sugar and golden syrup, and bring to the boil. Pour in condensed milk and espresso and stir to combine. Once it starts to bubble, pour over biscuit base in tin.

Step 4

Bake for 12 minutes. Allow to cool completely in tin.

Step 5

Cut into squares and serve topped with whipped cream and a sprinkling of ground cinnamon or nutmeg (optional).
