Spaghetti with Sun-Dried Tomatoes, Sausage, and Spinach

spaghetti

lb. cooked Italian sausage links, sliced

c. baby spinach

c. chopped sun-dried tomatoes

c. low-sodium chicken broth

heavy cream

kosher salt

In a large pot of salted boiling water, cook spaghetti according to package directions until al dente. Drain and return to pot.

In a large skillet over medium heat, heat oil. Cook garlic until fragrant, 1 minute. Add sausage, spinach, and sun-dried tomatoes and cook until sausage is browned and spinach is cooked, 3 to 5 minutes. Add chicken broth and heavy cream and bring to a simmer. Let thicken until sauce is creamy, then add spaghetti to skillet and toss until fully coated. Season with salt and pepper.

This was delicious! Full of flavor and easy to prepare. I used  Aidell’s Spicy Chicken Italian sausage and added mushrooms. Will definitely make again.

This Italian Sausage Spaghetti features marinara sauce, fresh tomatoes, spinach, garlic, red pepper flakes, Italian seasoning, and fresh herbs! There is so much flavor packed into this crowd-pleasing pasta dish! The whole recipe takes only 30 minutes and requires simple ingredients found in most pantries.

Italian Sausage Spaghetti - 30-Minute Meal

oz Italian sausage (mild, crumbled)

garlic (minced)

Italian seasoning (or Herbs from Provence)

red pepper flakes (to taste)

oz marinara sauce (or tomato sauce)

spinach (fresh)

tomatoes (medium size, chopped)

salt and black pepper (to taste)

Bring a pot of water to a boil.  Cook the spaghetti according to the package directions.  While the pasta cooks, proceed with the recipe below.

Cook pasta

Heat 1 tablespoon of olive oil on medium heat in a large, heavy-bottomed, high-sided skillet.

Add crumbled sausage and cook on medium heat for about 5 minutes or until the sausage is cooked.  Drain excess fat.

To the same skillet with sausage, add minced garlic, Italian seasoning, red pepper flakes, marinara sauce (or tomato sauce), and fresh spinach. Bring to a boil on medium heat and stir everything well. Cook on medium heat, stirring frequently, for 4 or 5 minutes until the spinach wilts to your liking.

Add chopped fresh tomatoes, and cook for about 2 more minutes.

How to make spaghetti sauce

Add cooked and drained pasta to the sauce.  Reheat.

Mix everything well.  Remove from heat.

Season with salt, freshly ground coarse black pepper, and red pepper flakes, if you like.  Top with fresh herbs, such as thyme.

Tip: use your best judgment about the salt. If the sausage is salty enough, you might not need to add any extra salt.

Assembly

Made this tonight for my family. Was a HUGE hit! Tasted like a dish straight from an Italian restaurant. So fresh! Didn’t add any salt, was delicious enough for our taste.  Will definitely be adding this to the rotation. Thank you for the recipe!

I made this dish and it turned out great. Since I didn't have spinach at home, I used broccoli. I divided it into florets and cooked it together with pasta. I added it when the pasta started to boil.
The success of this recipe really depends on the quality of the sausage, but the added spices elevate the dish even if the sausage is more bland.
