Healthy Italian Stuffed Zucchini Boats with cheesy Italian sausage or ground turkey, bell peppers, mushrooms, and the best crispy panko topping, ready in just 30 minutes!

Healthy Italian Stuffed Zucchini Boats

zucchini

sausage

garlic

red bell pepper, diced

mushrooms, diced

marinara sauce (I used a garlic and basil marinara)

herb Italian seasoning

mozzarella cheese

panko

olive oil

Preheat oven to 400 degrees. Cut zucchini in half lengthwise. Use a tablespoon to scoop out seedy center and discard. Arrange side by side, cut side up, on a baking sheet or in a casserole dish.

In a large skillet over medium-high heat, brown sausage (or turkey) for 4-5 minutes, using a spatula to break into small pieces as it cooks. (See note 1 if using ground turkey)

Add bell peppers and mushrooms and saute 2-4 minutes until tender.

Stir in garlic, marinara sauce, and Italian seasoning.

Spoon mixture into the zucchini boats

Bake for 15 minutes.

In a small bowl stir together panko bread crumbs and olive oil.

Top zucchini boats with mozzarella cheese, then the panko.

Bake for 5 minutes longer until cheese is melted and panko is golden. Serve immediately.

I love this Italian recipe for meatless stuffed zucchini.  It is not only easy, but also healthy, light yet filling, and loaded with so much flavor. I&#039;ve used it as a side dish and as the main recipe for dinner.  You and your family will love it!

onion

Romano cheese

breadcrumbs

basil

Cut off the end stems of the zucchini

Hollow out the zucchini and chop what you&#039;ve scooped out including any pulp and set aside in bowl

Chop 3/4  cup of onion and add to bowl

Chop 3/4 cup of fresh tomato and add to bowl

Dice up the garlic and add to bowl

Heat 2 tablespoons of olive oil in a medium saute or frying pan

Add mixture to saute pan, stir and saute for 5-6 minutes

When finished, return mixture to bowl and add the breadcrumbs, cheese and basil

Fill the zucchini with the mixture and brush a little olive oil on top

Bake uncovered at 375 40-50 minutes

Serve warm or cold, sprinkle with more fresh basil and cheese and enjoy!
