An important first step to note when making this sauce is to bring the olive oil up to temperature very slowly with the garlic, herbs, and spices, and cook for about five minutes to brown the garlic. This is a step that Jack has seen referenced in a number of great Italian cookbooks and although not clearly stated why, we believe this slow heat-up process allows the oil to be infused with the seasonings providing a really delicious base to your sauce.

Italian Tomato Sauce

extra virgin olive oil

red pepper flakes

garlic cloves

Before you begin, pour your two cans of tomatoes into a bowl and crush with your hand. Don’t break them up too small, you want large chunks.

In a large heavy bottomed pot with a lid, on a burner with no flame, pour in olive oil and add red pepper flakes, garlic, onion, most of the oregano, basil and mint (save a little bit of each for the end), sugar salt and pepper. Turn on the burner and slowly bring up to hot. When the onions and garlic start to cook, stir and heat for five minutes.

Remove the pot from the burner and place a heat diffuser over the burner. Place the pot over the heat diffuser and add the tomatoes. Turn burner to medium high and stir until they start to boil. Then reduce to simmer, partially cover and simmer 90 minutes.

After 90 minutes, remove from heat and add the reserved herbs and Parmesan cheese. Add the butter to round out the flavors. Stir again and serve.

Instant Pot Tomato Sauce

can whole San Marzano tomatoes and their liquid

garlic (peeled & smashed)

yellow onion (peeled & quartered)

tomato paste ((choose a brand with no added sugar))

Pour the tomatoes and their liquid into the Instant Pot. Place the other ingredients on top of the tomatoes, keeping them off the bottom of the pot as much as possible (especially the tomato paste). Press the garlic and herbs down into the liquid a little to moisten, but they should still be visible. Don't stir! (You want to avoid a 'burn' error. See notes.)

Secure the lid on the Instant Pot and make sure the vent is set to sealed/closed. Set to Manual Pressure (high), 25 minutes. When the pot beeps (after 25 minuteuse the Natural Pressure Release method, allowing the pressure to release for 10 minutes. Then, carefully open the vent, and remove the lid.

Remove the onion pieces and discard. Blend or mash the sauce using an immersion or regular blender, or food processor, or by hand with a potato masher and/or large fork. Blend to your desired consistency--either chunky or smooth.

Prepare the ingredients according to the directions above. Place them in a large pot, stir them together, and simmer, covered, on medium low heat for at least 30 minutes. Howver, I recommend 45-60 for a fuller-flavored sauce.

Classic Italian Tomato Sauce

Carrot ((diced))

Garlic Cloves ((minced))

Whole Peeled Tomatoes ((such as San Marzano))

Tomato Paste

Oregano

Salt

Pepper

Sugar

Heat a large pot over medium heat. Add oil and then add onion and carrot. Saute for 8-10 minutes or until softened. Add in garlic and cook for 1-2 minutes longer. Remove from heat if not adding tomatoes right away to make sure garlic doesn&#x27;t burn.

Puree tomatoes in a blender. Add to the onion carrot mixture. Stir in tomato paste, basil, oregano, red pepper flakes, salt, pepper, and sugar.

Reduce heat to a medium-low and let simmer for at least 20-30 minutes. If time permits, let simmer on low for 1-2 hours, stirring occasionally.

Taste and add more salt if needed. Serve with fresh pasta.

A around 1 tbsp of olive oil to a medium sized saucepan, once it starts to sizzle add chopped garlic and dried oregano. Fry for 30 seconds then add 1 tsp of balsamic vinegar and freshly chopped parsley and basil.

Fry the herbs and garlic for another 30 seconds (this helps release all the delicious flavours from the herbs) then add a can of chopped tomatoes and add a pinch of salt.

Add 2 tbsp of water to the empty tomato can, swirl to get as much leftover tomato as possible and add that to the sauce.

Stir everything together, after 1 minute use a potato masher to crush the tomatoes and break them down as much as possible (it will still be a rustic style sauce and not completely smooth)&nbsp;

Simmer for 7-8 minutes stirring occasionally, turn off the heat and check for seasoning.

5-6 leaves of fresh basil, whole and washed

In a large saucepan or pot, medium heat, add olive oil and sauté onion for about 6 minutes, until translucent.  

 Add canned tomatoes. Cover and let simmer on low-medium heat (the sauce should bubble, but not boil) after 10 minutes of cooking crush the whole tomatoes with a wooden spoon to break them up. You can also use an immersion blender. 

Cook for 20-25 minutes until the liquid reduces slightly. Stir occasionally during cooking. 

Turn off the heat and add the basil to the sauce. Add salt and a bit of pepper to taste. If you notice any bitterness you may add a teaspoon of sugar. If you notice the sauce isn't as thick as you like it add a tablespoon of good quality pure tomato paste. 

Store in the fridge or freezer and use as a sauce for pasta, polenta, gnocchi, and more! 

This sugo sauce recipe is my go-to for dinner. I don't buy pre-made pasta sauce at all anymore because making this is just as easy as heating a jar of the pre-made stuff. But, it's so much more delicious and the ingredients and simple and, of course, don't have all the added sugar and preservatives. I love Elena's tip to make extra and then store it in the fridge in a quart jar—all ready for dinner through the week.

Cut the tomatoes into 4 sections, removing the green connection of the stem and any damaged parts.

Cleaning the tomatoes

As soon as a bucket is ready, pour the tomatoes into a large caldron to cook while covered, stir from time to time to make sure they don&#x27;t stick to the bottom.

Pre boiling the tomatoes

Roughly line the crates with some old clean towels

Align the crates over the drainage grid so the water of the tomatoes can drain away

Once the tomatoes have softened and lost their consistency, poured them back into the crates over the towels

Grinde the tomatoes in the grinding machine, one, two, three times, to make sure no pulp is left on the skin.
