This is one of my family&#x27;s favorite vinaigrettes. It&#x27;s fresh and flavorful with an extra dose of garlic, plus red wine vinegar and lemon juice acidity. It reminds me a bit of the dressing at Olive Garden...although I&#x27;d say this Italian vinaigrette recipe is even better!

Italian Vinaigrette

garlic, minced

c. extra-virgin olive oil

c. red wine vinegar

T. lemon juice

T. oregano

Dijon mustard

kosher salt

sugar

tsp. black pepper

Place all ingredients in a small bowl or...

Place all ingredients in a small bowl or tall jar. Use an immersion blender to combine and emulsify. If you don't have an immersion blender, cover jar tightly and shake ingredients vigorously (just know that there will be more noticeable pieces in the vinaigrette).

Serve with this Italian Chopped Salad.

Italian Dressing 

olive oil

wine vinegar

lemon juice

Italian seasoning (try our homemade Italian seasoning!)

garlic powder OR 1 finely minced garlic clove (see notes)

EACH: sea salt and pepper

cheese (see notes)

Combine all the ingredients in a jar with a tight-fitting lid and shake well. 

Store the dressing in your fridge for up to 2 weeks. (See notes) Shake well to mix the ingredients each time before you use it.

Easy Italian Antipasto Pasta Salad

dry rotini pasta (or your favorite medium length pasta)

hard salami, chopped (or ¾ cup presliced)

pepperoni, chopped (or ½ cup presliced)

artichoke hearts, drained & quartered

cherry tomatoes, halved

olives, pitted & halved (kalamata, green or a mixture of the two)

½ cup pepperoncini, sliced

mozzarella pearls

red onion,

basil,

Italian seasoning

¼ tsp red pepper flakes

Salt & black pepper,

Whisk your vinaigrette ingredients together then set it aside while you prepare the rest of your salad.

To make the vinaigrette:

Cook your pasta according to the package&#39;s directions then set it aside to cool completely.

Once the pasta is cool, add it to a large bowl along with your salami, pepperoni, tomatoes, artichokes, pepperoncini, olives, mozzarella, onion and fresh basil. Pour your desired amount of dressing over the top and toss the salad until it&#39;s fully coated.

Serve immediately or let it chill in the fridge for 1-2 hours before serving.
