From Katie: &quot;The crowd pleaser at the moment (and the recipe I am proudest of) is the Ginny Green Giant from our current summer seasonal class. This one is like air conditioning in a glass. It uses Italicus (bergamot) Liqueur which I get using Curiada since I can’t find it locally, gin, lime, cucumber, mint, simple, and an egg white. This one is so customizable because the recipe works with Tequila or even vodka and can even become a mocktail by replacing the spirits with 3 oz of an earl gray tea.&quot;

The Ginny Green Giant

oz gin

oz lime

.75 oz Italicus

syrup,

cucumber

mint leaves

Spin a cucumber ribbon or two in a double old fashioned glass.

Combine all the ingredients in a cocktail shaker and shake with ice.

Strain the ice out and shake again, this time with no ice. (This is a technique known as a reverse dry shake.)

Strain into the glass you’ve prepared, add a large ice cube and a sprig of mint.
