These BBQ jackfruit sandwiches are the ultimate party dish. Prep the components ahead of time, and heat the jackfruit and assemble the sandwiches right before serving!

BBQ Jackfruit Sandwich

chipotle peppers + 2 tablespoons of sauce from a can of chipotles in adobo sauce

ketchup

apple cider vinegar

garlic

Dijon mustard

½ teaspoon smoked paprika

cumin

black pepper

olive oil

onion

un-ripe jackfruit, drained

water

cabbage

cilantro

lime juice

Sea salt and black pepper

Desired fixings: pickles (mustard, serrano peppers, etc.)

Make the BBQ sauce: In a food processor, blend the chipotle peppers, adobo sauce, ketchup, vinegar, garlic, mustard, paprika, cumin, and a few grinds of pepper until smooth. Set aside.

Prepare the jackfruit by pulling shredding the pieces with your hands (see photo), discarding any harder pieces of the core. In a large skillet, heat 1 tablespoon of olive oil to medium heat. Add the sliced onion and salt and cook, stirring occasionally, until soft, 8 to 10 minutes, turning down the heat as necessary. Next, add the shredded jackfruit and cook 5 minutes, stirring occasionally. If necessary, add a splash of water to keep it from sticking to the pan. Stir in the 1/2 cup water and half of the BBQ sauce. Turn the heat to low, cover, and let simmer for 20 minutes. Remove the cover and stir in half of the remaining BBQ sauce, reserving the rest for serving.

Make the slaw: In a medium-large bowl, combine the cabbage, cilantro, lime juice, olive oil, and pinches of salt and pepper.

Serve the sliders with the jackfruit, the remaining BBQ sauce, the slaw, and desired fixings.

Drain and rinse the jackfruit and then lightly pat it dry. Cut off the core so that you&#8217;re only left with the outer parts that are the ones easy to shred. The core is the part that comes to a point (see photo above).

Place the jackfruit in a large bowl and lightly shred with 2 forks (we&#8217;ll shred it a bit more while it cooks). Mix in the garlic powder, chili powder, salt, liquid smoke, paprika, and brown sugar. Toss to fully coat the jackfruit.

Heat the oil in a large skillet over medium heat and once hot, add in the jackfruit. Cook for about 5 minutes to heat through, stirring often. As it cooks, break up the jackfruit more with the back of a wooden spoon or using the same forks.

Remove from the heat and stir in the bbq sauce.

This had great flavor! Jackfruit in brine was the only option at my local store. I rinsed it a couple if times and dried it well. I used all the entire jackfruit since I don't like to waste food. I cut the core into smaller strips. It cooked on low in the crockpot with some bbq sauce for about 4.5 hours. Everything was tender, including the core. Extra sauce and cole slaw make it taste like a pulled pork sandwich.

This quick and easy 20-minute BBQ Jackfruit Pulled Pork Recipe is a tasty vegan meat substitute for burger, sandwiches, tacos, and vegan gyros tortilla wraps with Tzatziki! It’s loaded with flavor, tossed in barbecue sauce and the best meatless option that looks and tastes just like the real deal!

BBQ Jackfruit Pulled Pork

garlic (minced)

Jalapeño (seeded and finely chopped (optional))

tsp ground cumin (optional)

oregano (optional)

tsp ground coriander (optional)

non-dairy yogurt (250 grams,

tbsp extra virgin olive oil

lemon juice

sea salt (to taste)

black pepper (to taste)

tortillas (or burger buns, sandwiches)

salad, veggies, herbs (of your choice)

Drain, rinse and thoroughly dry the jackfruit. Place in a bowl. Using your fingers or forks, break apart the chunks of jackfruit into shredded pieces. Add the seasonings and the oil. Toss to combine and set aside to marinate while you cook the onion.

Heat the oil in a large skillet. Add the onion and cook until translucent, about 5 minutes. Add the garlic and jalapeño if using and cook for an additional 1 minute, until the garlic is fragrant.

Add the seasoned jackfruit and cook for about 3 minutes until it begins to color and crisp, stirring occasionally.

Add the barbecue sauce, stir and cook covered for another 10 minutes on low or until desired texture. (Add a little water as needed during cooking to make it &quot;saucier&quot;. The jackfruit will become more tender the longer it cooks).

Pulled Jackfruit

Grate cucumber with the skin on. Add a generously amount of salt, and set aside for about 5-10 minutes, allowing to soak. Then squeeze out as much excess liquid as you can.

Add the non-dairy yogurt, salty squeezed cucumber, garlic, lemon juice, olive oil and pepper to a bowl. Stir to combine.

Taste and adjust seasonings as needed, adding more salt, garlic, lemon juice or some herbs if desired.

Vegan Tzatziki

Place the BBQ jackfruit pulled pork on burger buns or tortillas (*as shown in the animated picture video in my blogpost). Top with salad, fries, vegan tzatziki or other veggies and toppings you like. Serve with extra BBQ sauce!

Recipe Vegan Coleslaw

Drain and rinse the jackfruit from the can. Rinse very well if your jackfruit was packed in brine. Chop off the hard center core portions, if desired(see photos in post above). I like the texture better with the tougher parts removed. Set aside.

Heat the olive oil in a large skillet over medium heat, then add the onion and cook for 3-4 minutes until translucent.

Add the jackfruit, BBQ sauce and 1/2 cup of water. Stir well to combine, then cover and simmer for 20 minutes on low-medium heat, stirring occasionally.

After 20 minutes, remove the lid and mash the jackfruit with a potato masher or two forks, to create a shredded texture so it resembled pulled pork. Add Sriracha hot sauce and salt to taste.

To finish, turn the heat up to high and cook for another 10 minutes, stirring frequently. This helps it dry up a bit and get blackened in some spots, which makes it extra tasty!

Remove from heat and serve on buns with Vegan Coleslaw. Enjoy!

Prep the jackfruit

Mix together jackfruit with sugar, paprika, garlic powder, oregano, cumin, chili, and a pinch of salt and pepper.


Prep the skillet

Heat up oil in a skillet, then add onions, and cook for 5 minutes, stirring occasionally. Add garlic and jackfruit, and cook for another 3-5 minutes, until jackfruit starts to soften and brown.

Pour sauce on jackfruit

Pour BBQ sauce over jackfruit, and cook for 10 more minutes over low heat, stirring occasionally, until jackfruit is tender, and the sauce thickens. Add a little water, while cooking, if you prefer saucier and juicier pulled jackfruit. Add vinegar, taste, and adjust seasoning if needed.

Make into sandwiches and serve

Serve Pulled Jackfruit over buns with lettuce, coleslaw, and condiments of your choice.

This Slow Cooker Jackfruit Stew + Celery Root Mash is the perfect hearty, cozy, comforting crock pot recipe to curl up with on a chilly day.

Slow Cooker Jackfruit Stew + Celery Root Mash

avocado oil

sesame oil

ginger

onion powder

carrots (about 4 medium carrots)

celery (about 4 stalks)

(13 oz) unsweetened coconut cream

coconut sugar

tamari (or soy sauce)

arrowroot flour (aka arrowroot starch)

fish sauce (omit to make vegan)

sriracha

celery roots

Once rinsed, look at the triangle fan-shaped pieces of the jackfruit. The fan part is the part of the jackfruit that will easily shred. Cut the point of the fan off and discard.

Place the trimmed jackfruit in a large bowl along with the avocado oil, sesame oil, ginger powder, garlic powder, sea salt, onion powder, and pepper.

Spray the bottom and sides of the slow cooker with avocado oil.

Add the jackfruit to the crock pot along with the chopped onion, chopped carrot, chopped celery, coconut cream, coconut sugar, tamari (or soy sauce), arrowroot flour (arrowroot starch), fish sauce, and hot sauce.

Cover and cook on low for 6 &#8211; 8 hours.

When there are about two hours left, use a fork to press the jackfruit pieces against the side of the crockpot to shred it.

With about 30 minutes left of cooking, cut the top off the celery root and use a vegetable peeler to peel off the outer skin.

Cut the celery root into about 1 inch pieces and place in a large pan over medium-high heat.

Add the garlic and continue to cook for another three minutes.

Add the broth to the pan and allow to simmer for five minutes.

Pour the contents of the pan into a food processor along with the sea salt.

Process for about three minutes until smooth. Take breaks to scrape down the sides of the food processor and start again.

Once smooth, place a couple dollops of mash into a bowl.

Top with a couple scoops of the jackfruit stew and garnish with some fresh thyme sprigs.

Add jackfruit pulled pork ingredients (first 17 ingredients) to large pot. Cover and bring to a boil then turn to heat down to simmer for 45 minutes. With a fork twist and pull the jackfruit apart to shred it. Optional to add the olive oil in.

Stove Top

Add jackfruit pulled pork ingredients (first 17 ingredients) to a slow cooker. Cook on high 4-6 hours.

With a fork, twist to pull jackfruit into shreds. Optional to add fresh olive oil and mix in.

In a small bowl stir together green and purple cabbage, carrots and mayonnaise until combined.

Cabbage Slaw

Toast 8 gluten-free hamburger rolls. Lay them open faced. Using tongs or a slotted spoon, scoop the jackfruit pulled pork, draining extra juices, and add it on top of 8 slices of the buns. Top with coleslaw. Put roll top on and serve!

Assemble Sandwiches

Turned out fantastic!  I used three cans as I am party of 1, two cans was too little for even a small crock pot.  I kept all ingredient measurements the same, and it was spot on, not too watery.  Also, I used a Vitamix to shred '1' can at a time, of the jackfruit on lowest setting for 1 - 2 seconds before adding to the slow cooker.  Will be making this again.

Preheat oven to 425 degrees Fahrenheit.

If making dough from scratch, follow the recipe and set aside to rise.

Drain can of jackfruit and place in pan on medium heat. Let cook for 5 minutes.

Once the jackfruit is tender, use a backside of a fork or a potato masher to break apart the jackfruit until pulled pork consistency is reached. Remove seeds and casings from seeds.

Add 1/2 cup of barbecue sauce and mix well. Remove from heat.

Layout the dough and spread a thin layer of the remaining barbecue sauce.

Sprinkle cheese on top.

Evenly space out onions, pineapple, and jalapeno slices. Top with jackfruit.

Bake in oven for 13-15 minutes or until crust is golden brown and cheese is melted

Let cool and serve immediately. Leftover keep in the fridge for about a week.
