Jamaican Saltfish Fritters, also called Stamp and Go, are a fried appetizer with a golden crispy exterior and a soft, chewy center. Made with salted cod, these flavourful fritters are a delicious bite-sized treat perfect for any occasion.

Jamaican Saltfish Fritters

Flour

tsp Baking Powder

tsp Black Pepper

tsp Caribbean Curry Powder

Tomato (small, diced)

Yellow Onion (small, chopped)

Bell Peppers (small, green and red, equal parts)

Salted Cod Fish

Scotch Bonnet Pepper (finely chopped, as desired)

Water (more or less as needed)

Cooking Oil (for frying fritters)

Fill a medium sized pot with water and bring to a boil. Rinse fish, cut into smaller pieces, and boil for about 10 to 15 mins. Drain then wash in cold water. Taste a piece of the fish to gauge the saltiness. If it&#39;s to your liking, pick it apart into smaller bite-sized pieces. If it&#39;s too salty, repeat the process.

In a medium mixing bowl, combine dry ingredients and whisk together. Add the fresh ingredients; tomatoes, onions, bell peppers, and fish to the mixing bowl then add in water gradually. Mix until well incorporated with medium consistency - see notes section.

Heat oil in a non-stick pan then drop generous spoonfuls of batter into the pan. Fry on each side until golden-brown and crisp (about 3-4 minutes per side).

Remove from oil and place on a wire rack to drain excess oil, serve warm and enjoy!

This is a great recipe and I have tried others. It gave me the best results. I am a Jamaican and have had these fritters before so I know what it is supposed to taste like.

Jamaican Saltfish fritters also known as &quot;Stamp and Go&quot; (or Flittas, as many Jamaicans would call it) are a beloved Jamaica dish. They are made from salted codfish that is flaked and mixed into a flavorful batter, then deep fried until golden and crispy.

scallions (finely chopped)

roma tomato (diced)

green bell pepper (diced)

red bell pepper (diced)

thyme

tsp black pepper

Prepare the Salted Codfish

In a large mixing bowl, combine the all-purpose flour, flaked codfish, finely chopped scotch bonnet peppers, scallions, diced bell peppers, diced tomato, thyme leaves and freshly ground black pepper.

Gradually add water, a little at a time while stirring to achieve a thick, pancake-like batter consistency. The batter should coat the back of a spoon.

Heat cooking oil in a deep skillet or frying pan over medium-high heat, with enough oil to submerge the fritters. Test the oil&#39;s readiness by dropping a small amount of batter into it. If it sizzles and rises to the surface, the oil is hot enough.

Using a spoon or 1/4 measuring cup, scoop up a portion of the batter and carefully drop it into the hot oil, forming each fritter to be about the size of a flattened golf ball.

Fry the fritters until they are golden brown on one side (approximately 2-3 minutes), then carefully flip them using a spatula and continue frying until the other side is golden brown and crispy.

Use a slotted spoon or tongs to remove the fritters from the oil, allowing them to drain on a plate lined with paper towel to remove excess oil.

Make the Saltfish Fritters

If you're looking for a delicious and authentic Jamaican dish, look no further than these saltfish fritters. These golden fried fritters are savory and full of delicious Caribbean flavor.

oz dried salted fish

green onions (chopped)

Roma tomato (chopped)

½ scotch bonnet pepper (seeds removed and chopped (optional))

black pepper

all-purpose seasoning

all-purpose flour (270 grams)

Oil for frying (about 1 cup)

Rinse the saltfish. Place the salt fish in a large pot and cover with about 2 inches of water and bring it to a boil. Allow the saltfish to boil in the water for 10-12 minutes and then drain the water to remove excess salt.

You can also soak the salt cod in water for 24 hours, changing the water several times. Once it is fully soaked and tender, boil the codfish for 4-5 minutes, drain the cod, flake it into small pieces, and use it in your fritter batter.

Prepare the saltfish

Add prepared saltfish, green onions, roma tomato, thyme, scotch bonnet pepper, black pepper, and all-purpose seasoning to a bowl and mix until combined.

Add all-purpose flour and stir until combined.

Slowly add water and stir until combined. The batter should easily slide off a spoon.

Heat oil in a large non-stick skillet over medium-heat. Add batter by the spoonful, about ¼ cup each.Once bubbles start to appear on the top and the bottom is golden brown, flip the fritter. This should take about 3-4 minutes per side. Remove and serve.
