Japanese curry roux homemade

150 g plain (all purpose) flour

tbsp honey (*2)

Roast all selected spices in a non-stick frying pan over low heat for about 5 minutes till fragrant. Then set aside.

Melt butter in a frying pan over low heat and add honey.

Add flour into the frying pan and stir to combine butter and flour.

Keep stirring for about 15 minutes. The mixture is lumpy at the beginning but will become smooth.

Add roasted spices into the frying pan and combine them all together.

When they are well combined, turn the heat off.

Line container(s) with cling wrap and place the roux into the containers.

Cover and wrap the curry roux with the cling wrap and make scores on them so that it easily breaks into pieces later.

Place in the fridge overnight and allow to set.

They will keep in the fridge for a couple of weeks. Or put them in a freezer ziplock bag and keep them in a freezer. It will keep a couple of months.

Curry roux

Katsu curry is just a variation of Japanese curry with a Chicken Cutlet on top. I have used a store-bought block of Japanese curry roux, which is commonly used in Japanese households. Katsu Curry (Japanese Curry with Chicken Cutlet)

Chicken Cutlets (cut into 2.5cm / 1” wide strips)

Add oil into a pot and heat over medium high heat.

Add onion and sauté for a few minutes or until the onion becomes translucent and edges start getting slightly burnt.

Add potatoes and carrots into the pot and stir for a couple of minutes or until the surface of the vegetables starts getting cooked.

Add water and turn the heat up to bring it to a boil. Then reduce the heat to medium low and simmer for about 7 minutes or until the vegetables are nearly cooked through (note 3).

Break the curry roux cake into small blocks along the lines and add them into the pot. Stir gently to blend the curry roux.

Place a lid on and cook over low heat for about 10 minutes or until the curry roux is completely dissolved. Stir occasionally.

Check the consistency of the sauce. It should be like béchamel sauce. If too thick, adjust with some water. If too thin, cook further without the lid. It will thicken when cooled down as well.

Turn the heat off.

Place a cup of hot cooked rice onto one side of a plate. Place the chicken cutlet pieces next to the rice, leaning them on the rice so that there will be a space to pour the curry.

Pour curry next to the chicken cutlet and serve immediately.

Curry Udon Noodles with Beef

Japanese curry roux

Slice the beef thinly in bite sized pieces and combine it with the soy sauce and baking soda in a bowl for 10 minutes.

Cook the udon noodles according to the package instructions while the beef marinades and set aside.

Heat a dutch oven on high and add the beef to sear it on all sides (about 3-5 minutes total). Remove and set aside.

Reduce the heat of the pot to medium and add the cooking oil. Add the onions, garlic and shiitake mushroom and saute for 2-3 minutes, until softened.

Add the beef back to the pot and pour in the dashi broth. Bring to a boil.

Add the diced potatoes and cook (simmer) until soft, about 10-15 minutes.

Add the curry paste and stir until it dissolves and the broth is thickened. Add additional salt to taste.

Place the udon noodles in a bowl and pour the curry on top. Garnish with sliced green onions and fried garlic.

Japanese Curry Cubes (Vegan)

onions, diced (350 grams)

garlic cloves, micro grated (16 grams)

tbsp apple sauce (30 grams)

tbsp Japanese curry powder (28 grams)

vegetable broth powder (10 grams)

sweet rice flour

tbsp Worcestershire sauce (15 grams)

instant coffee (3 grams)

cocoa powder (2 grams)

yeast (5 grams)

tsp sugar (4 grams)

If your spices are not already toasted, add them to a pan and toast over low heat stirring frequently until fragrant.

Add 1 tbsp of oil to a pan with the onions are golden brown (about 15 minutes). Add garlic and ginger and continue to cook until onions are caramelized and very soft (10 minutes). Use the back of a wooden spoon or spatula and mash the onions. 

Add apple sauce, ketchup and Worcestershire sauce (if using) and mix. Then add the curry powder, vegetable broth powder and any additional flavourings, and mix until combined.

Bring heat down to the lowest setting and add the sweet rice flour and mix. It will be quite dry at first and take some time to mix through. If needed, add up to 1 tablespoon of water to help mix in the rice flour. Optional step: If you prefer a smooth curry, transfer the mixture to a food processor and blend until smooth. 

Transfer the mixture to ice cube trays or a parchment lined container. Freeze to firm them up and they will keep for up to 2 months. 

One serving is about 40-50 grams (depending on the level of flavour you like and how much liquid was added to mix the ingredients). 

To use in place of commercial curry roux cubes, thaw at room temperature and use about 2 &#8211; 2 1/2 times more than recipe calls for. If recipe uses 4 curry roux cubes (about 80g), use about 180g. Be sure to add salt to the recipe as these cubes don&#8217;t have any added salt. 

How to use these curry cubes

For my first time trying Japanese curry, I decided I wanted to experience all of the flavors that go into it by making these homemade roux cubes. I’m so glad I did! It worked perfectly. Plus, I have the rest stored in my freezer ready for the next time I want to make a quick curry. Tip: definitely toast the spices! It really fills your kitchen with a cozy smell.

I grew up on Japanese curry. To me, it's a perfect comfort food. I've been making Japanese curry with slight variations and decided to try this recipe. OHMYGOODNESS it's legit the best curry I've made in years. The layers of flavor are soooo satisfying, and major plus that it doesn't have that weird palm oil mouthfeel when it cools that all the box kinds leave you with. Absolutely will make this again. And again. My 3yo asked for it for breakfast after we'd all had it for lunch and dinner. For days. It's that good.

I usually use the cubes but I wanted to make it from scratch for a change to make it a bit healthier. Loved it- the flavours were wonderful!

I love this recipe and it is very flavourful with the additional add-in like Worcestershire sauce and nutritional yeast. I cooked vegan katsu curry last night and it was a hit! I seasoned it with soy sauce, salt and a bit of agave syrup and it was delicious! This curry roux is definitely a fantastic base for any Japanese curry dishes!

I'm so glad I found this, cause now I can make my own Jap curry at home! I have always had issues with the store bought cubes as it had too much oil. I love that this feels so much better for me. I can also adjust the salt level according to my liking. Gives me so much more freedom.

Quicker than I thought and tasty, perfect!

This was amazing. It was my first time making curry from scratch and I was super nervous, but it all worked out perfectly. I used a cooked pear and used 1tsp cinnamon and 1 tsp carob to sub for any sweeteners and omitted everything else except for the sweet rice flour and curry powder. I also added in some vegan cream cheese I happened to have and water until it was mixable and then poured it into a glass container with parchment paper in the freezer until it was hard. I then cut it into cubes and used about half of all the cubes and 1 can coconut milk to mix with some zucchini, Japanese okara left over from making tofu, tofu katsu, and some kinako mochi for a satisfying curry. So far, all the recipes I've used were awesome and adaptable.
