A soft and fluffy pancake baked in a cast iron skillet ready in less than 30 minutes.  Perfect for breakfast, brunch or afternoon tea. The recipe is designed being baked in a 6.5 inch cast iron skillet, double the recipe if using 8 inch skillet.

Quick and Simple Castella Pancake

eggs

g milk (2 tbsp)

g honey (1 tbsp)

g cake (or all purpose) flour

¼ tsp white vinegar or lemon juice

g fine sugar (2 tbsp)

butter (for greasing the pan and topping)

sugar

maple syrup

Grease a 6.5 inch cast iron skillet (see note for other sizes) with a thin layer of butter and set it aside.

Prepare the skillet

Preheat the oven to 350°F (180°C)

Separate egg yolk and egg white into two mixing bowls.  Make sure the bowl for the egg white is dry and clean without any oils on the surface.  If you accidentally drop some yolk in the white, fish it out with egg shell.

Mix egg yolk with milk and honey, whisk until well combined before adding the sifted flour.  Mix until smooth but don&#039;t over mix.  Set it aside.

Add vinegar/lemon juice in egg white, beat with an electric mixer on medium speed until foaming.  Add sugar in two batches while beating and continue until soft peaks form when you remove your mixer.  When the mixture starts to form ribbons in the wake of your mixer, turn the speed to low and continue to beat until egg whites can form soft peaks, that way, the larger air bubbles can be eliminated.

Scoop about half a cup of the egg white into the yolk mixture and mix with a spatula until it&#039;s well combined before pouring this mixture into the bowl with the egg white mixture.

Mix with a spatula from bottom to top in the motion of writing &quot;J&quot; while turning the mixing bowl, so the mixture can be well combined.  Don&#039;t stir in a circular motion or over mix, as it will cause the mixture to deflate,

Pour the mixture into the skillet, and smooth out the surface with a spatula.

Make Pancake Batter

Bake for 8 minutes, remove skillet and cut a big &quot;+&quot;  on the surface of the pancake and return it back to the oven for another 8 to 10 minutes until the top becomes golden brown and the middle part puffs up.   If you double the recipe and make it in an 8 inch skillet, you will need to bake for 5-10 minutes longer until an inserted toothpick can come out clean.

Top the pancake with butter (I prefer to use salted butter) and any other topping of your choice and enjoy right away!

Extra Thick and Fluffy Japanese Style Pancakes

self raising flour

tsp baking powder

Butter milk (to make up 1 cup with the egg)

tsp vanilla extract

tbsp mayonnaise

Butter (maple syrup, ice-cream, etc.

Sift all the dry ingredients together into a bowl and combine.

In another bowl (or jug) add the egg, buttermilk and vanilla extract and whisk until just combined.

Make a well in the centre of the dry ingredients and pour the liquid mixture in.

Mix together then add the mayonnaise and mix well to combine. (Don’t worry if you notice any scent coming from the mayonnaise, it will disappear completely after it's cooked).

Place a homemade pancake mould (instructions for this are listed in the blog post above) onto a frying pan over low heat and pour half the mixture into the mould. *1

Place a lid on the frying pan and leave it for 15 minutes.

Once little bubbles appear on the surface of the pancakes and the edge is slightly cooked, lift the bottom of the pancake with an egg flipper then cover the pancake with the inverted frying pan and flip the whole thing together before placing it back on the heat. *2&nbsp;&nbsp;

Place the lid over the top again and cook for another 15 minutes on the other side.

To test if it is done, stick a skewer into the pancake. If it comes out clean, then the pancake is cooked through.&nbsp;

Remove the pancake from the heat, remove the staples from the mould and take the pancakes out of the mould wearing gloves or a cooking mitten.

Serve the pancakes with your favourite toppings (e.g. whipped butter, maple syrup, fresh berries, ice-cream, chocolate flakes, etc. Let your imagination run wild!).

Okonomiyaki (Osaka-style)

all-purpose flour (120 grams)

potato

⅓ ts baking powder

salt and sugar

dashi powder

water

tbs grated Japanese yum

cabbage

g sliced pork belly

shrimp

scallop

g oyster

scallion

Grate Japanese yum.Combine dry ingredients.Dissolve dashi powder with 2 tbs of hot water and add the rest of the water.

Make a well in the center, add yum and dashi.Mix well to make sticky batter.  Set aside while preparing the other ingredients.

Okonomiyaki Batter

Chop into small dice.

Cabbage (for all Okonomiyaki)

Slice scallion into small pieces.Drain oyster, put in a small bowl.  Add in a teaspoon of salt and a tablespoon of potato starch.Gently massage the oyster to clean.  Rinse and drain.

Mix chopped 1＋1/2 cups cabbage, 1 heaping tablespoon of Tenkasu (crunchy tempura bit) and dried shirimp, 1 teaspoon Beni Shoga (red pickled ginger), 1/2 cup Onokomiyaki batter, 1 egg.

Mix in scallions and oysters.Heat your electric griddle (or frying pan) to 200℃（395℉), grease the surface.  Pour the batter and shape into 20cm in diameter, 2 cm thick.

Cover with the lid and cook 3 mins.  Flip over and cook 3 mins with the lid.Flip it over again and cook with the lid.Cook Okonomiyaki 8 to 10 mins in total.

Apply Ponzu soy sauce.  Sprinkle Katsuobushi and Aonori.

Oyster and Scallion

Heat your electric griddle (or frying pan) to 200℃（395℉), grease the surface.  Pour the batter and shape into 20cm in diameter, 2 cm thick.  Line pork belly all over the surface.

Apply Okonomiyaki sauce and mayo, sprinkle Katsuobushi and Aonori.

Mix in seafood.  Pour onto electric griddle (or frying pan) and cook 3 mins.Flip over and cook 3 mins with the lid.Flip it over again and cook with the lid.Cook Okonomiyaki 8 to 10 mins in total.
