A slightly Americanized version of Ramen Bowls, this one-dish dinner comes together super quick and easy for those busy weeknights.

Super Quick Ramen Bowls

sesame oil

garlic (minced)

ginger

red pepper ((double this if you

carrots

shiitake mushrooms (caps thinly sliced)

chicken broth

soy sauce

fish sauce

whole-grain ramen noodles (4 "cakes" of noodles, about 2.5 oz each)

green onion (thinly sliced (white and green parts),

kale (thinly sliced, for garnish)

soft-boiled eggs

Heat the sesame oil in a large pot over medium heat. Stir in the garlic, ginger, red pepper, carrots, and mushrooms until fragrant and the veggies begin to soften, 3 to 5 minutes.

Pour in the broth, soy sauce, and fish sauce and bring to a boil. Add the ramen noodles and stir until completely broken up. Boil for 3 minutes and then turn off the heat.

Divide soup among four bowls and garnish each one with green onion, sliced kale, and soft-boiled eggs (see below).

Place 2 eggs in the bottom of a small pot and cover with a few inches of cold water. Bring to a boil then immediately cover with a lid and remove from heat.

Let sit for 6 to 7 minutes (depending on how runny/firm you like them!). Drain most of the water, add ice to cool the eggs, then peel and slice in half.

For Soft-Boiled Eggs

Authentic Vegan Miso Soup

water (500 milliliters)

kombu dashi* (5 grams)

tbsp miso paste (40 grams)

scallion, sliced (10 grams)

tbsp dried sea weed/wakame (2 grams)

kombu dashi (5 grams)

2.5 tbsp miso paste (50 grams)

block soft tofu, cubed (80 grams)

spinach (50 grams)

Add water and dashi to a medium pot over medium heat. Add the daikon and simmer until tender. Turn off the heat. Add miso paste to a small sieve over the pot and stir using a spoon until miso is dissolved. 

Divide into two bowls and garnish with green onions. 

Rehydrate wakame in room temperature water for 5 minutes. Drain and squeeze any excess water out. Set aside. 

Over medium heat, add water and dashi to a medium pot. Once the broth starts to simmer, turn heat to low. Add miso paste into sieve over the soup and dissolve miso paste. Add the tofu and wakame and stir. Keep on the stove until the soup and tofu is heated (be sure not to let it boil). 

Bring a pot of water to a boil. Add in the spinach and cook for 20 seconds. Drain and rinse with cold water. Squeeze out any excess liquid (this should form a ball of spinach). Chop the ball of spinach into thirds. 

Over medium heat, add water and dashi to a medium pot. Once the broth starts to simmer, turn heat to low. Add miso paste into sieve over the soup and dissolve miso paste.

Add in the cooked spinach and let it heat for another minute.

Made this soup a few times and everyone agrees that this is the most delicious miso soup ! My personal favorite is with the daikon. After a long day I love to eat this soup and just a bowl of rice with some tsukemono or kimchi, it's the best.

I made the daikon miso soup tonight and it was soo good! I wasn't sure what the kombu dashi would be like as it is the first time I've cooked with it. It adds so much flavour. Made this today (the daikon one with a bit of tofu thrown in) – amazing! So much flavour and so simple! Definitely a new staple in my house!

Miso Soup

water

kombu (about 4")

c. bonito flakes

c. white miso

enoki mushrooms (optional)

tofu,

c. sliced scallions, for garnish

Make dashi: In a large pot over medium heat, bring water and kombu to a simmer. Remove kombu as soon as the water starts to simmer. Stir in bonito flakes and bring to boil, let boil 5 minutes. Turn off heat and let bonito steep for 15 minutes then strain out bonito flakes.&nbsp;

Return dashi to stove and bring to a simmer over medium heat. Whisk in miso until dissolved then add mushrooms. &nbsp;Add tofu and simmer 2 minutes. Do not boil.&nbsp;

This quick and healthy miso noodle soup recipe with peanut butter is a light delicious soup both in summer and winter. This recipe serves 1, but easily doubled or tripled!

Peanut Miso Noodle Soup

soba noodles,

cm (⅓ inch) fresh ginger, finely grated ((0.15 / £0.03))

spring onion, finely chopped ((0.40 / £0.07))

white miso paste ((0.17 / £0.24))

peanut butter ((0.20 / £0.08))

½ sheet nori, shredded ((0.17 / £0.09))

½ red chilli, finely sliced ((0.30 / £0.05))

coriander ((1.00 / £0.15))

Cook the noodles according to packet instructions.

Whilst the noodles are cooking, make the soup:

Place the grated ginger, spring onion, miso paste and peanut butter into a small saucepan. Add the water, gently whisk together and heat over a low to medium heat.
