This homemade Kung Pao sauce recipe is easy to make and loaded with flavor, perfect for quick and easy Chinese-inspired dishes anytime.

Kung Pao Sauce Recipe

sesame oil (or use peanut oil)

hot chilies

Sichuan peppercorns (coarsely ground)

leek (or use scallions

ginger

garlic (minced)

soy sauce

chili-garlic sauce

Chinese black vinegar (or use balsamic vinegar)

honey (or use brown sugar)

chicken broth (or use vegetable broth)

cornstarch (mixed

Chilies and Peppercorns

Heat the oil in a wok or large pan to medium heat and add the dried chilies and Sichuan peppercorn. Stir fry for 1 minute, or until the chilies darken a bit.

Vegetables

Add the leek, ginger and garlic. Stir fry for 3-4 minutes to lightly brown. The mixture will become aromatic.

Soy Sauces

Stir in the light soy sauce, dark soy sauce, chili-garlic sauce, black vinegar, honey, and chicken broth. Bring to a boil, then reduce heat and simmer for 5 minutes to let the flavors develop.

Thicken

Stir in the cornstarch slurry and heat until it thickens.

Use as desired in any of your “Kung Pao” recipes. Toss with stir fried chicken, shrimp, vegetables or other combination.

Store

To use later, cool slightly, then transfer to a container, seal, and refrigerate. Will last 1 week this way.

Wonderful recipe. Love the fact that alternative ingredients are listed too. Tasted wonderful for Kung Pao Spaghetti.

Maybe very ungodly, but I used this wonderful syrupy sauce as a barbecue sauce with porkloin, don't judge me too badly because it was delicious ;)

1.	Corta el pan de molde en trozos y con la ayuda de una picadora tritura el pan. Haz pequeños movimientos para que no haga una pasta, debe quedar suelto.

2.	Haz de poco a poco todo el pan hasta conseguir pequeñas migas.

3.	Coloca las migas de pan en una bandeja de horno y sécalo a 70ºC unos 10-15 minutos removiendo constantemente. Debe quedar seco, pero sin color.

4.	Guarda en un recipiente hermético hasta que quieras usarlo.

This Massaman curry paste recipe is a mix of Indian and Thai flavors with a mild level of spice, essential for Massaman curry, though quite versatile.

Massaman Curry Paste Recipe

chilies

guajillo chili (stems and seeds removed.)

vegetable oil

shallot (chopped)

lemongrass

galangal (skin on)

garlic (chopped)

cilantro roots (chopped)

shrimp paste

bay leaf

tamarind concentrate

cumin

cinnamon

cardamom

nutmeg

Water (as needed to thin)

Heat Pan

Toast Chilies

Add the dried chilies and dry toast them for 1 minute per side, or until they darken and become slightly fragrant. Do not burn.

Soak

Remove from heat and add enough water to cover the chilies. Soak until softened, about 15 minutes.

Processor

Remove the peppers and add them to a food processor or blender along with the remaining ingredients. Process to form a paste. Alternatively, you can use a mortar and pestle.

Thin as Needed

If the paste is too thick, add a teaspoon of water at a time and process until smooth. You can use some of the reserved chili soaking water for this as well.

Use as needed, or store in the refrigerator in a sealed container until ready to use (up to 2 weeks). You can also freeze it.

This Massaman Curry Paste recipe as well as your others sound Wonderful! I just have a couple of questions before I try this one. 
1. Can you suggest a vegetarian alternative to shrimp paste? as I don't like shrimp &amp; I'm trying to switch to a mainly vegetarian diet.
2. Which type(s) of vegetable oil or oils have you tried in this &amp; also in your Chili Crisp recipes that give the optimum flavor? I tend to use extra virgin olive oil &amp; avocado oil a lot, but I am looking for your advice on this.
